MOM'S COUNTRY GRAVY
This is my mother's recipe I grew up with. It is very tasty and is great with biscuits and sausage.

Steps:
- Heat the oil in a large skillet over medium heat. Whisk in the flour, salt and pepper until smooth. Cook and stir over medium heat until browned, about 10 minutes. Gradually stir in milk so that no lumps form, and continue cooking and stirring until thickened. If the gravy becomes too thick, you may thin it with a little more milk.

THE BEST TURKEY GRAVY RECIPE
Silky smooth and perfectly rich, this really is the BEST Turkey Gravy recipe around! There's nothing better than topping creamy mashed potatoes with the most amazing turkey gravy and this recipe delivers - every single time.

Steps:
- Transfer the fat to a large saucepan over medium heat. Let the fat melt and then sprinkle on the flour. Using a wooden spoon, stir continuously until the fat and flour have formed a homogeneous mixture. Continue stirring until the flour browns slightly, this takes 4 to 5 minutes.
- If your drippings have cooled down, heat them up in the microwave for thirty seconds or more until they are nice and hot. (If you have less drippings than the recipe calls for, supplement with turkey broth or chicken broth.)
- Whisk in the hot drippings slowly into the roux. Keep whisking until the liquids are fully incorporated.
- Bring the gravy to a simmer and continue simmering until it reaches your desired consistency.
- Season with salt and pepper and for the final step...stir in one tablespoon of butter or heavy cream.
- Serve hot in a gravy boat.

MOM'S PAN TURKEY GRAVY
Super easy gravy to make and VERY tasty! I use this recipe to make chicken gravy as well. Can also be used to make a delicious gravy for roasts, just use beef broth instead of chicken. Came from my mom, as most everything does!

Steps:
- After roasting the turkey, transfer it to a platter. Either place roasting pan on burner of stove or place dripping in a pan on stove. Turn burner to medium heat.
- Mix flour with cold milk in a jar with a lid and shake to remove lumps. Add a little bit of the pan drippings to jar and mix.
- Pour milk/flour mixture into the roasting pan with drippings. Add broth. Cook and stir over medium heat until thickened and bubbly. Turkey gravy is usually not very thick. If you want the gravy thicker, add more flour/milk.
- Season with salt & pepper.
- OPTIONAL: I always take the giblets, put them in a pan and cover with water and cook on slow simmer until done, about 2 hours. Then chop the meat and add it to the gravy. Yum!

- Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
- Add the carrots, celery, corn cobs, onions, thyme, bay leaf and turkey neck to a medium pot. Add enough water to cover, place over direct heat, bring to a boil and simmer for 3 hours. Strain the stock through a fine mesh strainer.
- Melt the butter or turkey drippings to a medium saucepot over medium-high heat. Whisk in the flour and cook, whisking for a few minutes, until lightly browned. Whisk in the turkey stock. Bring to a boil and simmer, whisking occasionally, about 30 minutes. Season with salt and pepper and serve.
GRANDMA'S TURKEY GRAVY

- Pour drippings into a 2-cup measuring cup. Skim fat, reserving 1/4 cup. Add enough broth to the drippings to measure 2 cups., Saute shallot in reserved fat in a small saucepan. Stir in the flour, salt, onion powder, poultry seasoning and pepper until blended; cook and stir for 2 minutes or until browned (do not burn). Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened.

BASIC TURKEY GRAVY

- Place roasting pan on stove across two burners. Bring pan liquids to a boil over high heat; cook, stirring occasionally, until vegetables are very brown, 5 to 15 minutes.
- Pour off (and discard) all but 1/4 cup fat from pan. Add wine; cook, stirring constantly, until syrupy, 1 to 2 minutes. Add flour, and cook, stirring, until browned, 1 to 2 minutes.
- Add water, and bring to a boil. Cook, stirring occasionally, until gravy reaches desired consistency, 5 to 10 minutes.
- Discard large solids, and strain gravy through a fine-mesh sieve. Season with salt and pepper. Keep warm or reheat just before serving.
DELICIOUS TURKEY GRAVY
One of the best memories I have is waking up early Thanksgiving morning to the smells of Thanksgiving as my mom woke up extra early to start the gravy and start the turkey. I always thought the great smells were coming from the turkey but I later learned the true way to get your house smelling like Thanksgiving is to have an amazing gravy simmering on the stove all day. This is my favorite!!! I'm not sure where I found this recipe as it's all tattered and worn in my cookbook, but it's sure been a crowd please since I started cooking my own Thanksgiving dinners. I have had a few instances where it didn't thicken as I needed it to and in these cases, I added a bit of Wondra. Real butter is VERY important in this recipe so NO SUBS! You will love the taste and smell of this! Make early in the morning before anything else needs to be done and it's one less thing to do later when the kitchen gets busy.

- In a large saucepan combine 3 cups water, turkey neck (and giblets, if using), celery, carrots, onion, garlic, bay leaves, parsley, thyme and peppercorns. Bring to a boil.
- Reduce the heat and simmer for an hour (I simmer all day and sporadically add pan drippings).
- Strain and de-fat the broth.
- Return broth to pan and heat gently.
- Defat the dripping and add to the stock. Simmer uncovered for 10 minutes.
- In a small saucepan, melt the butter and add the flour. Stir well and cook until the roux turns a light brown.
- Whisk the roux into the stock and cook until the gravy thickens.
- Season with salt and pepper.
- Serve hot.

- After roasting a turkey or turkey breast, remove the turkey and leave the drippings in the roasting pan. Place the pan on the largest stove top burner on medium heat. If there is less than one cup of liquid in the pan, add enough water to make about one cup. Whisk up any little browned bits that may have cooked to the roasting pan. This adds delicious flavor to the gravy. The heat from the stove helps loosen the browned bits on the sides of the pan.
- If you've used an aluminum pan to cook the turkey, don't place it on the stove after removing the turkey. Add water to the drippings to make one cup. Use a whisk or spoon to loosen the browned bits from the bottom of the pan.
- Pour the liquid from the pan into a 2 cup or larger tempered glass measuring cup or glass bowl. The fat from the drippings will rise to the surface. Skim off the fat with a spoon.
- Pour the remaining liquid through a wire strainer into a medium-sized saucepan. This will remove any turkey bits or fat and make a smooth, creamy gravy.
