MONJI KALIA (KOHLRABI STEW, INDIAN STYLE)



Monji Kalia (Kohlrabi Stew, Indian Style) image

I was looking for ideas to use up some kohlrabi that I picked up. I found this recipe and thought it looked different. I have not tried it yet. Serving size is a guess.

2 1/4 lbs kohlrabi (ganth gobhi)
8 fluid ounces vegetable oil
4 cloves
2 black cardamom pods, crushed
1 pinch asafoetida powder
1 cup water
1 teaspoon turmeric powder
1 teaspoon ginger powder
1 tablespoon ground aniseed
1/2 teaspoon garam masala
salt
2 tablespoons yoghurt
2 tablespoons milk
3 green cardamom pods

Steps:

  • Wash, peel and cut the kohlrabi into 1 inch cubes.
  • Heat the oil and fry the kohlrabi until golden. Drain and keep aside.
  • Heat 3 tbsp oil in a deep pot; add cloves, black cardamom, and asafoetida. Fry a little and then add water. Cover to prevent the oil from spattering.
  • Add the kohlrabi, turmeric powder, ginger powder, aniseed powder, garam masala, and salt. Cook on high heat for 10 minutes.
  • Add the milk and yoghurt (whisked together), stirring constantly till it comes to the boil. Cook for S minutes and then remove from heat.
  • Heat 1 tbsp oil in a small pan, saute the cardamom and add to the pot. Serve hot.

North Croatian Kohlrabi Stew (Koloraba Cuspajz) image

This is very old recipe I usually eat in spring. This is a side dish, we usually eat some meat and potato with it (beef cutlet or pork chops or...) It is important to use fresh and baby kohlrabi. If the kohlrabi is old and big you will have wooden parts inside. It is also important to use fresh: more time you store it, better chance to have woody kohlrabi. Actually, as I write this recipe I'm also cooking it.

500 g kohlrabi (peeled, without leaves)
1 tablespoon lard (or butter)
1 tablespoon flour (all purpose)
1 teaspoon salt
1/2 teaspoon pepper (white, grounded)
1 cup water
100 g sour cream

Steps:

  • Peel kohlrabi like you peel apples. Remove leaves (don't throw away baby leaves, you can slice them and put into stew later) and cut kohlrabi like you cut potato for French fry potato, but just little bit thicker.
  • Melt lard (or butter) in a pot, add flour and sauté it 1 minute. Add water and make creamy liquid. Add sliced kohlrabi and add water to cover the vegetable. Add salt and pepper and baby leaves if you want.
  • Cook about 30 minutes or until kohlrabi softens.
  • At the end add sour cream, stir well and serve.
