MONTE CRISTO SANDWICH
Leftovers don't have to be drab. Use extra ham in this classic sandwich.

- Spread mustard on bread. Layer 4 bread slices with Swiss cheese, ham, and cheese again. Place remaining bread slices on top.
- In a shallow dish, whisk together eggs, milk, salt, pepper, and nutmeg. Dip each sandwich in the egg mixture, turning to coat well.
- In a large skillet, melt butter over medium-low heat. When butter is foamy, add the sandwiches, and cook, turning once, until golden brown on both sides, 6 to 8 minutes total. Serve immediately, dusted with confectioners' sugar.

- Spread bread with mayonnaise and mustard. Alternate ham, Swiss and turkey slices on bread.
- Beat egg and milk in a small bowl. Coat the sandwich with the egg and milk mixture. Heat a greased skillet over medium heat, brown the sandwich on both sides. Serve hot.

Imagine the best French toast you've ever had, combined with the best ham and cheese sandwich you've ever had, topped with perfectly poached eggs. You don't need any Hollandaise because the poached egg yolks are the sauce.

- Preheat oven to 375 degrees F (190 degrees C).
- Whisk 2 eggs, cream, white sugar, salt, 1 pinch cayenne pepper, cinnamon, and allspice together in a bowl until batter is thoroughly combined.
- Lay bread slices into batter, one at a time, and let bread absorb the mixture. Turn bread slices in batter until almost all batter has been absorbed, about 10 minutes.
- Heat a large skillet over medium heat, and melt butter in the hot skillet. Cook bread slices in the hot butter until browned, 2 to 3 minutes per side. Transfer French toast slices to a baking sheet.
- Lay ham slices into the hot skillet and cook until meat begins to brown, about 1 minute per side.
- To assemble, place a Cheddar cheese slice on a slice of French toast, top with 2 slices of ham, and lay a Havarti cheese slice over ham.
- Bake in the preheated oven until French toast pieces are no longer wet, the batter is set, and cheese has melted and begun to brown, about 20 minutes.
- Place sandwiches on serving plates and top each with 2 poached eggs. Season with kosher salt and a pinch of cayenne pepper.

MONTE CRISTO ROSE BITES RECIPE BY TASTY
Puff pastry is stuffed with raspberry jam, then rolled up with tangy Gruyère cheese and ham slices to create a beautiful rose shape that will surely impress your guests. Think of it like a bite-size Monte Cristo!

- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry, then cut into 1½-inch-wide strips.
- Brush the raspberry jam over each strip.
- Arrange a layer of half-slices of ham on a pastry strip with the straight edges at the center of the strip and the curved edges hanging over the edge of the pastry. Fold the exposed pastry over the ham. Sprinkle some Gruyère cheese over the ham. Starting from one short end, roll the pastry into a tight spiral. Secure the end with a toothpick, if desired. Transfer to the prepared baking sheet and repeat with the remaining ingredients.
- Brush the pastry roses with the beaten egg.
- Bake for 12-15 minutes, until golden brown.
- Transfer the pastry roses to a serving platter and dust with powdered sugar.
- Enjoy.

MONTE CRISTO BITES
Steps:
- Trim crust off of bread and flatten each slice of bread with a rolling pin. Spread mustard on bread. Top each slice of bread with 1 slice of cheese, 1 slice of ham, and 1 slice of turkey. (We found it was easiest to roll if the cheese was closest to the bread.)Roll up bread tightly. Wrap very tightly in plastic wrap to assure even log shape. Chill for 30 minutes. Mix together baking mix, eggs, milk, and cinnamon.Heat 1 1/2-inches oil in deep-fryer or deep saucepan to 375°F. Unwrap each roll from the plastic wrap and secure with 4 wooden picks. With serrated knife, slice each roll into 4 pieces, securing each with a wooden pick. Dip each piece in batter, allowing some batter to be absorbed. Fry a few pieces at a time in hot oil for 1 to 2 minutes or until deep golden brown, turning frequently. Serve with spicy brown mustard or jam for dipping.
LIGHT AND EASY MONTE CRISTO SANDWICHES
Some recipes make you go HHMMM!?? Luckily I tried this and it made us go YUM! This isn't the normal combo you'd see on a sandwich, but very tasty! They are quick, easy, and lo cal. Another delight from Cooking Light.

- Assemble sandwiches: Spread 1 tsp mustard over each bread slice.
- Place 1 slice of cheese over 4 slices of bread.
- Divide ham among sandwiches.
- Cover with remaining bread slices.
- Mix egg whites and milk together in a shallow bowl.
- Spray a cooking skillet with cooking spray and heat over medium heat or you may use an electric skillet.
- Dip both sides of sandwiches into milk & egg mixture.
- Cook sandwiches in skillet until lightly browned on each side, about 3 minutes on each side.
- Transfer to a serving platter and sprinkle top of sandwiches with powdered sugar and top each one with jam.

- Place one slice each of turkey, Swiss cheese, and ham on 6 bread slices.
- Top with remaining bread slices and cut into quarters; hold sandwiches together with wooden toothpicks if needed.
- -=Batter=- Sift flour, baking powder and salt together. Add water to egg and beat slightly. Add egg to flour mixture and beat until smooth.
- Dip mini monte cristo sandwich quarters into batter and fry in hot oil until golden brown, turning once.
- Remove toothpicks and sprinkle lightly with powdered sugar.
- Serve with a side of raspberry jam to dip them inches.

- On a lightly floured surface, roll out the puff pastry to about a 16 by 12 inch rectangle. Top with a layer of ham slices, slightly overlapping, followed by a layer of turkey slices. Spread the shredded cheese evenly overly the meats.
- Starting on the long end of the rectangle, roll the puff pastry up into a log. Use a fork to whisk together the egg and the water in a small bowl. Brush the log with the egg wash, then slice it into 14-16 rounds. Place the rounds on a parchment paper lined baking sheet, leaving at least an inch between each one. Bake for 14-16 minutes or until cheese is melted and puff pastry is golden.
