Spiced Tomato Dipping Sauce - Moroccan Style image

This Moroccan style dipping sauce is delicious on anything from traditional Moroccan food to grilled chicken, shrimp, or steak. Perfect with Moroccan Chicken Bundles. It would also be a good accompaniment to many of the purhcased (frozen) appetizers such as chicken fingers, cheese sticks etc. Found on another site, but was originally from Gourmet magazine.

1/3 cup onion, finely chopped
1 clove garlic, finely chopped
1 1/2 teaspoons fresh ginger, peeled and finely chopped
3/4 teaspoon cumin
1/2 teaspoon hot paprika
1/4 teaspoon cinnamon
1 pinch cayenne
1 pinch ground cloves
1 tablespoon olive oil
1 1/2 tablespoons cider vinegar
1 (15 ounce) can tomatoes, coarsely chopped (reserve juice)
2 tablespoons brown sugar

Steps:

  • Saute onion, garlic, ginger and spices in olive oil in large saucepan over moderately low heat.
  • Stir frequently until onion is softened, about 4 minutes.
  • Stir in vinegar and simmer over moderately low heat about 1 minute.
  • Add tomatoes with juice and brown sugar.
  • Increase heat slighly and simmer, stirring occasionally until slightly thickened, about 30 minutes.
  • Cool slightly.
  • Puree sauce in blender or food processor until smooth.
  • Be careful when blending hot liquids.
  • Serve at room temp or slightly warmer.

2/3 cup extra virgin olive oil
4 tablespoons minced fresh cilantro

Steps:

  • Whisk the lemon juice, garlic, cumin, paprika, cayenne and salt together in a small bowl.
  • Gradually whisk in the oil; stir in the cilantro.
  • Serve with grilled chicken thighs, grilled baked tofu, sliced chicken breast or portobella mushrooms.

1 (8 ounce) can tomato sauce
¼ cup red wine vinegar
1 tablespoon ground cumin
1 teaspoon salt
1 teaspoon white sugar
¼ teaspoon ground cayenne
2 tablespoons olive oil
2 cloves garlic, minced
1 ½ pounds eggplant, unpeeled, cut into chunks
1 red bell pepper, seeded and cut into chunks
½ cup chopped fresh cilantro

Steps:

  • Mix tomato sauce, red wine vinegar, cumin, salt, sugar, and cayenne together in a small bowl.
  • Heat olive oil in a large skillet over medium-low heat. Add garlic; cook and stir until golden, about 2 minutes. Add eggplant and red bell pepper; pour in tomato sauce mixture. Simmer, covered, until eggplant and red bell pepper soften, about 20 minutes. Remove from heat and let cool, about 10 minutes.
  • Transfer eggplant mixture to a food processor; pulse until it reaches the desired consistency. Sprinkle cilantro over dip.

1 teaspoon paprika
1 teaspoon ground cumin

½ teaspoon salt

Reynolds Wrap® Non Stick Aluminum Foil
1 cup plain Greek yogurt
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh cilantro
1 ½ tablespoons honey

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with Reynolds Wrap® Non-Stick Foil. Add the chicken wings to a large bowl, drizzle them with the vegetable oil then toss until the wings are thoroughly coated.
  • In a small bowl, stir together the paprika, cumin, cinnamon, ginger, cayenne, turmeric, salt and pepper. Sprinkle the wings with the spice mixture, tossing until they are coated. Arrange the wings in a single layer on the baking sheet, spacing them apart so that they aren't touching.
