A hearty stew! Invented in the mountains of Pennsylvania. Serve with bread and butter.

Number Of Ingredients 12

¾ cup butter
1 large green bell pepper, sliced
½ large onion, sliced
1 pound baby carrots
1 pound fresh mushrooms, sliced
1 teaspoon garlic powder
1 teaspoon Italian seasoning
salt and pepper to taste
1 pound cubed beef
3 pounds white potatoes, thickly sliced
1 ½ quarts water
5 cubes beef bouillon, crumbled

Steps:

  • In a large, deep skillet over medium heat, cook bell pepper, onion, carrots and mushrooms in butter, until onion is translucent. Stir in garlic powder, Italian seasoning, salt, pepper and beef. Cover and cook over low heat until vegetables are softened and meat is browned, stirring frequently.
  • Meanwhile, place potatoes in a 2-quart saucepan and cover with water. Bring to a boil and cook until tender, 15 minutes. Drain and stir potatoes into vegetable mixture.
  • Pour 1 1/2 quarts water into the 2-quart saucepan and dissolve the bouillon in the water. Bring to a boil, then remove from heat.
  • In a large mixing bowl or stock pot, carefully combine broth and vegetable mixture until well combined. Serve hot.

After returning to the States, I re-created my favorite restaurant dish and named it after the University of Manchester. 2 tablespoons olive oil
2 medium onions, chopped
2 garlic cloves, minced
1 teaspoon dried oregano
1 cup dry red wine
1 pound small red potatoes, quartered
1 can (16 ounces) kidney beans, rinsed and drained
1/2 pound sliced fresh mushrooms
2 medium leeks (white portions only), sliced
1 cup fresh baby carrots
2-1/2 cups water
1 can (14-1/2 ounces) no-salt-added diced tomatoes
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
Fresh basil leaves

Steps:

  • In a large skillet, heat oil over medium-high heat. Add onions; cook and stir until tender, 2-3 minutes. Add garlic and oregano; cook and stir 1 minute longer. Stir in wine. Bring to a boil; cook until liquid is reduced by half, 3-4 minutes. , Transfer to a 5- or 6-qt. slow cooker. Add potatoes, beans, mushrooms, leeks and carrots. Stir in water, tomatoes, thyme, salt and pepper. Cook, covered, on low 8-10 hours or until potatoes are tender. Top with basil.

2 tablespoons vegetable oil
2 pounds sirloin tips, cubed
4 ⅓ cups water, divided
1 tablespoon salt
1 teaspoon lemon juice
¼ teaspoon paprika
1 clove garlic, crushed
1 teaspoon white sugar
1 teaspoon Worcestershire sauce
1 bay leaf
4 potatoes, quartered
6 carrots, cut into 2 inch pieces
1 (14.5 ounce) can tiny whole onions
¼ cup all-purpose flour
½ (10 ounce) package frozen green peas, thawed

Steps:

  • In a large pot over medium heat, cook sirloin in oil until quite brown. Pour 1 cup of water over the meat and drippings and cook, stirring, 2 minutes, until a dark gravy forms. Stir in 3 cups water with the salt, lemon juice, paprika, garlic, sugar, Worcestershire and bay leaf. Cover, reduce heat and simmer 2 1/2 hours.
  • Stir potatoes and carrots into simmering stew and cook until tender, 20 minutes.
  • Stir in onions. In a small bowl, combine flour with remaining 1/3 cup water. Stir flour mixture into stew and cook until stew thickens. Top with peas just before serving.

2 tablespoons canola oil
2 cups chopped celery
2/3 cup chopped onion
1/4 cup chopped green pepper
2 cans (14-1/2 ounces each) beef broth
1 can (28 ounces) diced tomatoes, undrained
1 large potato, peeled and cubed
1 large carrot, sliced
2 teaspoons garlic salt
1 whole clove
1 bay leaf
1/4 cup minced fresh parsley

Steps:

2 cups chopped celery
2/3 cup chopped onion
1/4 cup chopped green pepper
2 cans (14 oz. each) beef broth
1 can (28 oz.) diced tomatoes, undrained
1 large potato, peeled cubed
1 large carrot, sliced
2 tsp garlic salt
1 whole clove
1 bay leaf
1/4 cup fresh minced parsley

Steps:

  • In a Dutch oven, brown meat in oil; Add celery, onion, and green pepper; saute for 5 minutes or until tender.
  • Stir in the broth, tomatoes, potato, carrot, garlic salt, clove and bay leaf. Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour or until meat is tender.

3 cups cooked kidney beans, rinsed and drained
2 tablespoons olive oil
1 large onion, thinly sliced
4 large garlic cloves, minced
1 (16 ounce) can tomatoes with juice
1 green bell pepper, coarsely chopped
1 cup coarsely chopped green cabbage
1/2 cup diced russet potato
1 tablespoon chili powder (to taste)
1/2 teaspoon ground cumin
4 cups vegetable broth
1/3 cup uncooked brown rice
salt
fresh ground black pepper
1/4 cup grated monterey jack pepper cheese

Steps:

  • Heat the oil in a large soup pot over med-high heat; add in the onion and garlic; cook, stirring often, for 3-5 minutes or until the onion is soft.
  • Add in the tomatoes with juices, bell pepper, cabbage, potatoes, chili powder, and cumin.
  • Continue cooking, stirring often, for 3 minutes.
  • Add in the vegetable broth, rice, and beans; cover and cook over low heat about 1-2 hours or until the soup is thick and rice is tender; season to taste with salt and pepper.
  • Top with cheese and serve hot.
