The BEST Fried Rice image

The BEST Fried Rice. This fried rice is loaded with veggies and only takes 20 minutes to make!

Number Of Ingredients 11

2 tablespoons butter (divided)
3 eggs (whisked)
2 medium carrots (small dice)
1 small onion (small dice)
3 cloves garlic (minced)
1 cup frozen peas (thawed)
4 cups cooked and chilled rice ((I either use white or brown rice))
3 tablespoons low sodium soy sauce
2 tablespoons oyster sauce
1 teaspoon sesame oil
sliced green onions for garnish (if desired)

Steps:

  • Heat 1 tablespoon of butter into a large skillet.Add the eggs and scramble until fully cooked. Remove them from the pan and set aside.
  • Add the remaining tablespoon of butter into the pan. Add carrots and onion to the pan and cook until tender, 3-4 minutes. Stir in garlic and cook for an additional minute.
  • Add in the cold rice and peas and sauté for 3-4 minutes. The rice should brown up a bit.
  • Add the eggs back to the pan and stir in soy sauce, oyster sauce and sesame oil. Cook for 1-2 minutes to heat through.Serve immediately with green onions for garnish, if desired.

A friend and I taught a cooking class years ago, and this is a recipe we adapted for our class! It's such a great recipe...my absolute favorite for fried rice!! You can easily add chicken, pork, shrimp or whatever and make it a main course!

Number Of Ingredients 8

2 cups uncooked calrose rice
6 slices bacon, chopped
2 large eggs, beaten
5 green onions, sliced
2 carrots, grated
1/4-1/2 head cabbage, thinly sliced
soy sauce, to taste
salt and pepper, to taste

Steps:

  • Steam or cook rice according to package directions. Cool.
  • Fry bacon in large fry pan or wok until crisp.
  • Move bacon to side of pan (or remove) and add eggs to pan and scramble.
  • Add all vegetables to pan, and stir fry with bacon and eggs until crisp-tender.
  • Add rice to pan and mix well.
  • Add soy sauce, salt and pepper to taste.

Number Of Ingredients 12

1 cup long-grain white rice
2 boneless, skinless chicken breasts (12 ounces total)
Salt and freshly ground pepper
2 tablespoons vegetable oil
2 large eggs
2 scallions, trimmed and thinly sliced on the diagonal
1 teaspoon grated and peeled fresh ginger
1/2 cup diced red bell pepper (about 1 small pepper)
2 tablespoons soy sauce
1/2 teaspoon sugar
1/2 cup homemade or low-sodium store-bought chicken stock
1 cup snow peas, trimmed, sliced on the diagonal into thirds

Steps:

  • Cook rice according to package instructions; set aside. Pound breasts with a mallet until 1/4 inch thick. Cut into strips (each 3 inches long and 1/2 inch wide). Season with salt and pepper.
  • Heat 1 tablespoon oil in a medium nonstick skillet over medium-high heat until hot but not smoking. Cook chicken until just cooked through, 3 to 4 minutes. Transfer to a plate.
  • Reduce heat to medium; add remaining tablespoon oil. Add eggs; just as whites begin to set, stir to scramble. Add scallions and ginger; cook 1 minute. Add reserved rice and bell pepper; cook 2 minutes. Stir together soy sauce, sugar, and stock; add to skillet. Add snow peas and reserved chicken; cook until heated through, about 3 minutes.

A quick fried rice like you get at your favorite Chinese restaurant. A couple of eggs, baby carrots, peas and soy sauce is all you need.

2 cups enriched white rice
4 cups water
⅔ cup chopped baby carrots
½ cup frozen green peas
2 tablespoons vegetable oil
2 eggs
soy sauce to taste
2 tablespoons sesame oil, to taste

Steps:

  • In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  • In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.
  • Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.
