This is a nutritious and delicious breakfast cereal. Use any type of dried fruit you desire! You can also use almonds in place of walnuts if you like. Wonderful when served in bowls with milk and fresh berries or sliced fresh fruit.

4 ½ cups rolled oats
½ cup toasted wheat germ
½ cup wheat bran
½ cup oat bran
1 cup raisins
½ cup chopped walnuts
¼ cup packed brown sugar
¼ cup raw sunflower seeds

Steps:

  • In a large mixing bowl combine oats, wheat germ, wheat bran, oat bran, dried fruit, nuts, sugar, and seeds. Mix well. Store muesli in an airtight container. It keeps for 2 months at room temperature.

2 large eggs
1 cup applesauce
½ cup greek yogurt
½ cup milk, of choice
½ cup maple syrup
2 teaspoons vanilla extract
3 cups muesli, + 2 tablespoons or rolled oats, divided
2 teaspoons baking powder
1 pinch salt

Steps:

  • Preheat the oven to 350˚F (180˚C). Grease a 12-cup muffin tin with cooking spray.
  • In a large bowl, thoroughly beat the eggs, then mix in the applesauce, Greek yogurt, milk, maple syrup, and vanilla until evenly combined.
  • Add 3 cups (240 g) of muesli, the baking powder, and salt. Mix well.
  • Divide the batter between the muffin cups.
  • Sprinkle the remaining 2 tablespoons of muesli over the tops of the muffins.
  • Bake for 20-25 minutes, or until golden brown.
  • Let cool, then serve or store in the fridge for up to a week.
  • Enjoy!

Yield Serves 4 with plenty of leftover muesli

Number Of Ingredients 11

50g butter , plus extra for greasing
125ml clear honey (acacia is good)
300g jumbo rolled oats
85g mixed nuts (e.g. macadamia and flaked almonds)
50g desiccated or flaked coconut
1 tsp vanilla extract
85g mixed dried fruits (e.g. cranberries and raisins)
1 tbsp finely chopped crystallised ginger (optional)
500g pot natural yogurt
1 mango
100g blueberry

Steps:

  • Place the butter, honey and a pinch of salt in a small saucepan, then melt over a medium heat. Tip the rolled oats, mixed nuts, coconut and vanilla into a large bowl, then pour over the melted butter mixture and stir until everything is well coated.
  • Heat oven to 180C/fan 160C/gas 4. Lightly grease a large baking tray with butter. Tip the muesli mixture onto the tray and spread out until evenly covered. Bake in the oven for 10 mins, then use a spoon to carefully toss the mixture around. Take special care to get into the corners as these may be starting to brown. Cook for 5-10 mins more until the mixture turns a light golden brown. Now mix through the dried fruits and ginger, if using. Leave to cool. Store in an airtight container for up to 1 month.
  • To serve, spoon the yogurt into 4 serving bowls. Peel the mango and, cutting around the stone, thinly slice. Put into bowls along with the blueberries, then scatter over the crunchy muesli.

6 oz red bean paste
1 ½ cups shiratamako flour, (glutinous rice flour)
1 tablespoon sugar
⅔ cup water
toasted sesame seed, as needed
canola oil, as needed

Steps:

  • Divide red bean paste into 20 and make it into small balls.
  • Add shiratamako, sugar, and water in a medium bowl. Knead until firm and smooth. If it is too dry, add more water.
  • Pull off a portion of dough and flatten. Wrap the each sweet bean ball and roll into a ball. The size of the ball should be slightly smaller than your takoyaki pan. Evenly coat with toasted sesame seeds.
  • Cook the sesame balls in a greased takoyaki pan. Continue rolling the balls to cook evenly.
  • Cook until the dough turn into translucent, approximately 5 -7 minutes. Serve immediately.
  • Enjoy!

This is a very simple recipe for muesli balls. In 1989 my home town Freiburg used to be the inofficial capital of organic food in Germany, and there were four organic food stores within a diameter of 2 miles around the place where I lived. In one of them I found a small booklet, handwritten and photocopied on brown packaging paper, entitled "Our little cake heaven. Baking recipes". The publisher was something called "packaging paper mail orders", and they turned out to be a group of very radical environmental activists. This is their website: http://www.packpapier-verlag.de/ The recipes they publish in their packaging paper booklets are organic, whole food, and mostly very yummy - which was quite rare in the beginnings of the organic food movement when whole grain recipes used to be healthy but unedible ;-)

2 cups rolled oats
1 cup flaked coconut
1/2 cup hazelnuts, ground
1 cup raisins
3 tablespoons honey
1 1/2 cups milk, lukewarm

Steps:

  • Combine all dry ingredients with the honey.
  • Mix in the milk - but slowly. The required amount may be a little more or less than 1 1/2 cups to get a sticky dough.
  • Let the dough rest 30 minutes, then preheat oven to 390 degrees and form walnut size balls. If the dough is too sticky to form balls, add some more ground hazelnuts.
  • Bake for about 20-25 minutes until balls are golden brown.

  • Take a tablespoon of mixture in your hands, give it a squeeze and then roll it into a ball. Repeat with the remaining mixture. You should end up with 12 muesli balls in total.
  • You can leave them in the fridge for 30 minutes to firm up. But, I never do…they taste totally delicious straight from the bowl.
