Mulled Wine is a comforting winter drink made from a blend of red wine, spices, and citrus, served warm. This holiday classic recipe is easy to make and is a great cocktail for winter parties.

1 (750-ml.) bottle dry red wine (Merlot, Zinfandel, Cabernet Sauvignon, Malbec)
3 cinnamon sticks
4 whole cloves
2 star anise
1/4 cup honey
2 oranges (1 sliced into rounds for the mix, 1 for garnish)

Steps:

  • Combine the wine, cinnamon sticks, cloves, star anise, honey, and one orange (sliced into rounds) in a saucepan. Stir and bring to a simmer.
  • Continue to simmer 10 minutes.
  • Pour into mugs, and garnish with an orange slice. Serve warm. Feel free to use a strainer to serve without any orange peel or spices that may work their way in.

Number Of Ingredients 10

100g/4oz light muscovado sugar
1 star anise
1 cinnamon stick
4 cloves
150ml water
1 lemon
2 clementines
150ml Cointreau
750ml/ 1¼pint bottle light red wine , such as Beaujolais
Twist of orange zest and a star anise, to serve

Steps:

  • Put 100g light muscovado sugar in a pan with 1 star anise, 1 cinnamon stick, 4 cloves and 150ml water. Bring slowly to the boil, stirring to dissolve the sugar.
  • Simmer for 2 mins, then pour into a large jug and leave to cool. Add 1 lemon and 2 clementines, both thinly sliced, to the jug along with 150ml Cointreau and a 750ml bottle light red wine, such as a Beaujolais. Stir well, then cover and chill for at least 2 hrs or overnight if you can.
  • Serve chilled or over ice, with a twist of orange zest and a star anise. If you'd like to serve a traditional warm mulled wine, there's no need to chill - simply warm through without boiling and serve in heatproof glasses.

5 whole cloves
3 whole star anise pods
1 piece (1 inch) peeled fresh ginger, thinly sliced
1 cup water
1/4 cup sugar
1 bottle (750 mL) medium-bodied white wine

Steps:

  • Peel orange in strips using a vegetable peeler, being careful not to remove any pith (the white part). Push cloves into peel.
  • Combine clove-studded orange peel, the star anise, ginger, water, and sugar in a saucepan over medium heat. Bring to a simmer, stirring to dissolve sugar, and cook for 10 minutes. Remove from heat, and add wine. Let stand for 20 minutes to mull.
  • Just before serving, gently reheat mulled wine over medium heat until just beginning to simmer. Serve warm.

  • Combine red wine, cinnamon sticks, cloves, allspice, lemon peel, and orange peel in a heavy saucepan over medium heat. Heat gently, but don't boil. Stir in 2 tablespoons of sugar, and once dissolved, taste to see if you'd like to add more.

8 whole peppercorns
8 whole allspice
4 whole cloves
3 cinnamon sticks (3 inches)
1 bottle (750 milliliters)malbec or other dry red wine
2 cups apple cider or juice
1/2 cup packed dark brown sugar
1/4 cup agave nectar
1/4 cup tequila (preferably Exotico Reposado)
1/4 cup orange liqueur
1/4 cup orange juice
1 large navel orange, sliced
Optional: Orange slices, sea salt, sugar and orange zest

Steps:

  • In a Dutch oven, combine peppercorns, allspice, cloves and cinnamon sticks over medium heat until fragrant, about 2 minutes. Add wine, cider, brown sugar, agave, tequila, orange liqueur, orange juice and orange slices. Bring just to a simmer (do not boil). Reduce heat; simmer gently, covered, until flavors are blended, about 1 hour, stirring to dissolve sugar. Strain; discarding solids. Return mixture to pan; keep warm on low until serving., If desired, using orange slices, moisten rims of glasses. Set aside orange slices for garnish. Combine salt, sugar and zest on a plate; hold each glass upside down and dip rim into salt. Pour warmed margaritas into prepared glasses. Garnish with orange slices. Serve immediately.

Warming in all but touch, this drink is ideal for cusp season, when the days can feel like autumn in morning and summer by afternoon. Cognac anchors the drink, fresh lime brightens it, and a simple syrup steeped with ginger, cinnamon, clove and cardamom evokes a classic mulled wine. The simple syrup here makes extra and keeps for a month in the refrigerator. Add it to lemonade, drizzle it over oatmeal or substitute it for standard simple syrup in another cocktail to make it automatically cozy.

1 (5- to 6-inch) piece ginger
2 cinnamon sticks, lightly crushed
4 whole cloves
4 whole black peppercorns
3/4 cup granulated sugar
5 whole green cardamom pods, lightly crushed
Ice
1 1/2 ounces dry red wine, such as Pinot Noir, Gamay, or Grenache
1 ounce Cognac
1/2 ounce sweet vermouth
1/2 ounce fresh lime juice

Steps:

  • Place a coupe glass in the freezer to chill for at least 15 minutes and up to an hour. (Alternatively, fill the coupe with ice and water, stir for 30 seconds, pour out the ice and water, dry quickly, and pour in the drink into the now-chilled glass.)
  • Prepare the syrup: Gently run the ginger under water to remove any traces of dirt. If the ginger is thin-skinned, leave the skin on. Otherwise, peel. Use the larger holes on a box grater to grate the ginger, and add to a small saucepan. Place over medium-high heat.
  • Add 1 1/2 cups water, cinnamon sticks, cloves and peppercorns. Bring to a boil, then lower the heat and simmer on medium until the liquid reduces by about half and is very fragrant, about 20 minutes.
  • Add the sugar and cardamom, and stir until the sugar dissolves. Remove pan from the heat, and set aside to cool completely. Strain through a fine mesh sieve. This makes about 1 cup. Store in the refrigerator for up to 2 weeks. (You can use this in place of a standard syrup in another cocktail.)
  • Prepare the cocktail: In a cocktail shaker filled with ice, combine the wine, Cognac, vermouth, 1/2 ounce mulled simple syrup and lime juice. Shake and strain into the chilled glass.
