SPICED CITRUS MULLED WINE RECIPE
A delicious, easy mulled wine recipe that serves a crowd. It's festively spiced and loved by all, with brown sugar and citrus.

Steps:
- Combine all ingredients in a large pot over medium heat. Stir to dissolve sugar as mixture warms. When the wine starts to steam and is very hot to touch (about 10-15 minutes), turn off the heat. Don't let it simmer or boil. Taste and add more sugar if desired (it will depend on the sweetness of the wine - you may like to add a few more tablespoons). Strain any leftovers and refrigerate, covered.

- Combine the cider, wine, honey, cinnamon sticks, zest, juice, cloves and star anise in a large saucepan, bring to a boil and simmer over low heat for 10 minutes. Pour into mugs, add an orange peel to each and serve.

This recipe of my grandmother's is always a hit at a get-together, especially on those cold, blustery days. I usually keep it warm in a slow cooker. You can use claret or Burgundy.

- Stir water and sugar together in a saucepan until sugar dissolves. Add lemon, cloves, and cinnamon stick; bring mixture to a boil and cook until flavors combine, about 10 minutes. Strain and return water mixture to the saucepan; discard lemon, cloves, and cinnamon stick.
- Stir claret wine into water mixture; heat until hot but not boiling, 5 to 10 minutes. Serve flecked with nutmeg.

- In a large saucepan, combine the first 6 ingredients. Place remaining spices on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. - Pour water into a large pot over medium heat. Add honey, cinnamon sticks, allspice, nutmeg, and coriander. Stir until honey is dissolved.
- Push 2 cloves into the skin of each orange wedge. Add to the pot. Pour in red wine. Increase heat and simmer gently, about 45 minutes. Make sure mixture does not boil.
- Discard orange wedges and cinnamon sticks. Divide mulled wine among coffee mugs and serve hot.

- Add the wine, cider, brandy and maple syrup to a stock pot over medium-low heat and whisk well.
- Add the cinnamon, cloves, star anise, cardamom, one sliced orange and one sliced pear. Bring to a very gentle simmer but do not let the mixture boil, otherwise the alcohol will cook out.
- Stir every 10 minutes or so and simmer at low heat for one hour (or up to 3 hours). Remove spices and mulled fruit (it's easiest to do so by straining the liquid through a fine mesh sieve into another pot).
- Add in cranberries, pomegranate and another sliced orange and pear. Let infuse for 10-15 minutes at low heat, then serve warm. Cheers!
