Muscat and Lemon Thyme Syrup image

This recipe is designed to accompany Lemon Thyme Pound Cake. Slowly drizzle syrup over the cakes while they're still warm, then pour any leftover syrup onto plates so that your guests can soak individual bites. For this syrup, we like the delicate floral aroma of Muscat de Beaumes-de-Venise.

Yield Makes 1/2 cup (Enough for 6 pound cakes)

Number Of Ingredients 3

3/4 cup Muscat wine, such as Muscat de Beaumes-de-Venise
1/2 cup plus 2 tablespoons sugar
12 sprigs fresh lemon thyme

Steps:

  • Stir wine, sugar, lemon thyme, and 1/4 cup water in a saucepan. Bring to a simmer over medium-high heat. Reduce heat to medium-low; simmer 20 minutes.
  • Pour syrup through a fine sieve into a bowl; discard lemon thyme. Let cool slightly, about 5 minutes, before serving. Syrup can be refrigerated in an airtight container up to 1 week; reheat over medium-low heat before serving.

LEMON THYME MADELEINES WITH LEMON VODKA SYRUP



Lemon Thyme Madeleines with Lemon Vodka Syrup image

Yield Makes about 42 madeleines

Number Of Ingredients 14

2 cups cake flour (not self-rising)
1 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons plus 1 teaspoon freshly grated lemon zest (from about 7 large lemons)
1 1/2 tablespoons finely chopped fresh thyme leaves
2 sticks (1 cup) unsalted butter, softened
2 teaspoons fresh lemon juice
2 cups sugar
6 large eggs
1/4 cup water
1/4 cup sugar
1/4 cup lemon vodka
1/4 cup fresh lemon juice
2 teaspoons finely chopped fresh thyme leaves

Steps:

  • Preheat oven to 325°F. and generously butter and flour a madeleine pan (preferably non-stick), knocking out excess flour.
  • In a bowl whisk together flour, baking powder, salt, zest, and thyme.
  • In another bowl with an electric mixer beat together butter, lemon juice, and sugar until mixture is light and fluffy. Beat in eggs, 1 at a time, beating well after each addition, and add flour mixture, beating until just combined.
  • Spoon some of batter into prepared madeleine molds and with a spatula smooth surfaces, scraping back and forth over molds and returning excess batter to bowl. (This will eliminate any air pockets and ensure that molds are not overfilled.) Wipe excess batter from edges of pan.
  • Bake madeleines in middle of oven 20 to 25 minutes, or until edges are browned and tops are golden. Loosen edges and transfer madeleines to a rack set over a baking dish. Make more madeleines in pan, cleaned, buttered, and floured, with remaining batter in same manner.
  • While first batch of madeleines is baking, in a small saucepan bring syrup ingredients to a boil, stirring, and remove from heat.
  • Brush warm madeleines with some of hot syrup and repeat with remaining madeleines as they are baked, keeping syrup warm.

1 cup sugar
1 cup water
6 sprigs fresh thyme
2 tablespoons grated lemon peel (from 2 lemons)
1 sprig fresh thyme
2 1/2 oz vodka
3 oz cranberry juice
1 oz lemon-thyme simple syrup (above)
1/2 oz orange-flavored liqueur
Ice
1 thin (1/8 inch) lemon slice
1 sprig fresh thyme

Steps:

  • In 1-quart saucepan, heat lemon-thyme simple syrup ingredients over low heat until sugar is dissolved. Let stand 15 minutes. Strain to remove thyme and lemon peel. Use within 2 days.
  • Place 1 sprig fresh thyme in cocktail shaker. Add vodka, cranberry juice, 1 oz of the lemon-thyme simple syrup and liqueur; muddle thyme with back of spoon. Add ice; place lid on shaker, and shake until cold and blended. Strain into 2 martini glasses.
  • Garnish with lemon slice and sprig of thyme.
