MUSHROOM, SPINACH, AND SCALLION TART
Vibrant spinach leaves intermingle with roasted mushrooms in a light-as-air (and easy-to-assemble) phyllo shell. The custardlike filling comes together quickly in a blender.

Steps:
- Preheat oven to 425 degrees. On a rimmed baking sheet, toss mushrooms with 2 tablespoons oil, and season with salt. Spread in a single layer, and roast 10 minutes. Toss in the scallions, and roast 15 minutes more. Push mushrooms and scallions to one side, and place spinach on empty side; roast until wilted, about 3 minutes. Let cool briefly; squeeze spinach dry.
- Lightly brush an 11-by-7-inch rectangular tart pan with a removable bottom (or a 10-inch round pan) with oil. Working with one piece of phyllo at a time and keeping the rest covered with plastic wrap, brush a sheet of the pastry very lightly with oil. Fit into tart pan, leaving a 1-inch overhang. Brush a second sheet with oil, and fit into pan. Repeat with remaining sheets. Fold edges at top to make a border.
- Crumple a double layer of foil into a rectangle the size of the bottom of the tart, and fit into crust to weigh down center. Place on a baking sheet, and bake until edges are golden and begin to set, about 7 minutes. Remove foil, and bake until golden all over, about 3 minutes more. (Tent edges with foil if browning too quickly.) Remove tart pan from oven.
- Reduce oven to 375 degrees. In a blender, puree goat cheese, eggs, and milk until smooth; season with salt. Add herbs, and pulse to combine. Spread vegetables over crust, and pour custard over top.
- Return tart pan to oven, and bake until custard is set, 20 to 23 minutes. Remove tart pan from oven, and let cool 10 minutes on a wire rack. Remove sides of pan, and let tart cool at least 10 minutes more. If not serving right away, slide tart off bottom of pan and directly onto rack. Serve warm or at room temperature.

- In a small dry skillet, toast walnuts over low heat 5-7 minutes or until lightly browned, stirring occasionally. Remove and set aside., In a large skillet, heat 2 tablespoons oil over medium heat. Add onions; cook and stir 6-8 minutes or until softened. Reduce heat to medium-low; cook 20-22 minutes or until onions are deep golden brown, stirring occasionally. Add garlic, brown sugar, salt and pepper; cook 1 minute longer. Transfer to a small bowl., Add wine to pan, stirring to loosen browned bits. Bring to a boil. Cook and stir 1 minute; pour over onions. In same skillet, heat remaining oil over medium-high heat. Add mushrooms and 1 teaspoon thyme; cook and stir 8-10 minutes or until liquid is almost absorbed. Stir in onions. Remove from heat; cover and set aside., Preheat oven to 400°. Unfold puff pastry. On a lightly floured surface, roll pastry into a 12-in. square. Cut into two 12x6-in. rectangles. Transfer to baking sheet. Using a sharp knife, score 1/2 in. from edges of each pastry (do not cut through). Using a fork, poke holes in pastry. Bake 10-12 minutes or until puffed and lightly browned. Remove from oven. Press down center with a spoon if necessary. Reduce oven setting to 350°., Spoon mushroom mixture over tarts. Sprinkle with walnuts; top with cheese. Sprinkle with remaining thyme. Bake 5 minutes longer or until cheese is melted. Cut each tart into six pieces.

ASPARAGUS AND MUSHROOM TARTS

- Roll out each pastry sheet on work surface to 10-inch square. Cut each into 4 squares. Using small knife, score 1/2-inch border (do not cut through pastry) around inside edges of each square. Arrange squares on 2 rimmed baking sheets. DO AHEAD: Can be made 1 day ahead. Cover and chill.
- Melt butter in heavy large skillet over medium-high heat. Add mushrooms; sprinkle with 1/4 teaspoon coarse salt and 1/4 teaspoon pepper. Sauté until tender and lightly browned, about 4 minutes. Transfer mushrooms to large bowl; cool 15 minutes. Add asparagus, chopped thyme, lemon peel, 3/4 teaspoon coarse salt, and 1/4 teaspoon pepper to mushrooms. Mix in crème fraîche and cheese. DO AHEAD: Filling can be made 1 day ahead. Cover; chill.
- Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 400°F. Mound filling atop pastry squares, leaving 1/2-inch plain border.
- Bake tarts 12 minutes. Reverse sheets. Continue to bake tarts until crusts are puffed and golden and filling is cooked through, about 10 minutes longer. Transfer to plates; garnish with thyme sprigs.
- Sold at most supermarkets and at specialty foods stores.
MUSHROOM PHYLLO TARTLETS
These are really easy, can be made ahead, frozen etc... and are quite tasty warm or cold. If you are intimidated by phyllo dough (don't be, phyllo is your friend, and very forgiving) you could use Crescent dinner rolls, rolled and cut into squares, for the pastry.

Steps:
- Heat oven to 350°F.
- Melt 2 tbsp butter in a large skillet over medium heat.
- Add mushrooms, shallots and garlic & flour; mix well.
- Cook 5 minutes or until tender, stirring frequently.
- Add cream and cheese; mix well.
- Cook 2 to 3 more minutes or until most of the liquid has evaporated, stirring frequently; set aside.
- Melt remaining butter in a small dish in microwave.
- Brush one sheet of phyllo with butter, place another sheet on top, and brush with butter, repeat, do not butter top of last sheet.
- Cut phyllo into 24 equal squares, and place each square into ungreased mini muffin cups.
- Spoon one heaping teaspoon mushroom mixture into each cup.
- Bake at 350°F for 8-10 minutes or until golden brown.
- Sprinkle with parsley.
MUSHROOM PHYLLO TARTLETS

- Preheat oven to 350 degrees F
- In a large skillet, melt butter over medium heat and add shallots, cooking until softened about 2 minutes
- Add mushrooms and cook until tender and almost all liquid is cooked away, stirring occasionally
- Add wine and cook until wine is almost evaporated, stirring occasionally
- Sprinkle flour over mushroom mixture and cook and stir until well blended, about 2 minutes
- Increase heat to high and add cream, stirring well until mixture comes to a boil
- Remove from heat and stir in parsley, lemon juice, salt and cayenne, and let cool slightly
- Place prepared phyllo shells on a baking sheet and fill almost to the top with mushroom mixture
- Bake for 5-8 minutes until heated through
- Serve warm
WILD MUSHROOM TARTLETS

- In a large saute pan over medium heat, melt butter. Add the shallot and garlic, stirring constantly for 1 minute. Add the chopped mushrooms. Cook until the mushrooms begin to soften, about 5 minutes. Transfer the mushroom mixture to a food processor and add the goat cheese. Add the oil and parsley. Pulse until the mixture comes together. Season with salt and pepper and pulse again.
- Spoon mushroom filling into tartlet shells and place on a baking sheet. Bake in a preheated 350 degree oven for 10 minutes. Garnish with sliced mushroom and chopped chive before serving.
MUSHROOM WALNUT TARTS
Steps:
- Preheat the oven to 350 degrees F. Spray a 12-count muffin tin with nonstick cooking spray.
- Prepare the pie crust mix according to package instructions. Evenly divide the dough into 10 pieces. Divide the dough among the cups of the muffin tin, and press into the bottom and up the sides in an even layer to form a mini crust. Refrigerate while preparing the filling.
- Heat the canola oil in a large skillet over medium heat. Add the mushrooms, garlic, thyme and onions. Season with salt and pepper. Saute until the mushrooms are golden. Set aside 10 mushroom slices to garnish the top of the tarts. Set aside 1/3 cup mushrooms and onions for Round 2 Recipe Braised Beef and Mushroom Soup.
- Add the remaining sauteed mushrooms and onions with the walnuts into the bowl of a food processor fitted with a blade attachment. Pulse to coarsely chop. Add the breadcrumbs and beef broth, and a pulse a few times to mix in.
- Spoon the mushroom and walnut mixture into the pie crusts in the muffin tin. Top each with a reserved mushroom slice. Bake until the crust is golden, 20 to 25 minutes. Remove from the oven and cool in the tin about 30 minutes before carefully removing the tarts.
MUSHROOM PHYLLO/PUFF PASTRY APPETIZERS
Steps:
- -Chop onions and fry in pan with butter and garlic oil (or just 4 garlic cloves). Cook onions until caramelized. -When softened add chopped mushrooms. -Wait until a lot of the water from the mushrooms is released before adding cream, cream cheese, salt, pepper, and thyme. Make sure you taste your mixture to ensure proper seasoning. -Set mixture aside. -Open thawed but cold phyllo pastry or puff pastry. -For puff pastry, cut into 16 squares. Fill square with small amount of filling and seal edges. Brush top with egg wash (egg and water mixture). -For Phyllo use two sheets, cut them in four strips. Fill with a small amount of filling and then fold them on an angle to form a triangle, over and over (flag fold). Brush with melted butter. -Bake phyllo or puff pastry as directed on package ( for best baking results, bake on parchment paper)

- Heat oven to 350°F. In small bowl, combine sour cream, cream cheese, bread crumbs, dill weed, salt and lemon juice blend well. Stir in sliced mushrooms. Set aside.To make garlic butter, in small skillet over low heat, cook garlic in butter until tender, stirring constantly. Coat 16 muffin cups with garlic butter. Set aside.Brush large cookie sheet with garlic butter. Unroll phyllo sheets cover with plastic wrap or towel. Brush 1 phyllo sheet lightly with garlic butter place on buttered cookie sheet. Brush second phyllo sheet lightly with garlic butter place on top of first buttered sheet. Repeat with remaining phyllo sheets. Drizzle with remaining garlic butter.
