- In a bowl, combine the potatoes, 4 teaspoons oil and 1/2 teaspoon salt. Press onto the bottom and up the sides of a 9-in. pie plate coated with cooking spray. Bake at 425° for 20-25 minutes or until crust is lightly browned. Cool on a wire rack. Reduce temperature to 350°., In a nonstick skillet, saute onion in remaining oil until tender. In a bowl, combine the spinach, Swiss cheese, milk, eggs, egg whites, oregano, nutmeg, onion and remaining salt. Steps:
- Heat oven to 200C/180C fan/gas 6. Wilt spinach in a colander by pouring a kettleful of hot water over it.
- Heat half the oil in a large non-stick pan and fry mushrooms on a high heat until golden. Add garlic and cook for 1 min, then tip in stock, mustard, nutmeg and potatoes. Bubble for a few mins until reduced. Season, then remove from the heat; add crème fraîche and spinach. Pour into a pie dish and allow to cool for a few mins.
- Brush filo with remaining oil, quarter sheets then loosely scrunch up and lay on top of pie filling. Bake for 20-25 mins until golden. Serve with vegetables.

SPINACH AND POTATO PIE
This filling dish uses spinach, potato, and ricotta cheese, layered with matzo, to create a delicious vegetarian casserole for Passover, or any time of year! Perfect as the main meatless dish at a Seder.

- Preheat the oven to 400 degrees F (200 degrees C). Place the potatoes in the preheated oven, and bake for 45 minutes, or until tender. Turn once or twice. Cool, peel and cut into 1/4 inch slices.
- Reduce the oven temperature to 350 degrees F (175 degrees C).
- In a medium bowl, stir together the spinach, green onion, ricotta cheese, lemon juice, salt and pepper. Wet the matzo sheets under warm running water briefly on each side, just until pliable. Place one in the bottom of a 9 inch square baking dish. Spread 1/4 of the ricotta mixture over it, followed by a layer of potato slices. Sprinkle 1/4 of the mozzarella cheese over the potatoes. Repeat the layers, and finish with mozzarella cheese on top.
- Bake for 35 minutes in the preheated oven, until the cheese on top is bubbly and golden brown. Keep warm until you are ready to serve. Cut into squares.

POTATO, SPINACH, & MUSHROOM CASSEROLE
This recipe is from the "Cooking with Friends" recipe book. "Friends" is my favorite TV show, and this is definitely one of my favorite recipes. I tend to make this when entertaining & am always proud of how it turns out. I always get wonderful reviews & many requests for this recipe. It is listed in the recipe book under Vegetarian Delights. I have found that it also makes an excellent side dish to accompany beef, chicken or fish. This dish has an incredible flavor & goes nicely with a glass of wine.

Steps:
- Preheat oven to 400.
- Grease 2 large baking sheets& set them aside.
- Scrub potatoes under cold water.
- Do not peel.
- Cut potatoes lengthwise into 1/4 inch thick slices.
- Place slices in a large bowl.
- Add 4 T olive oil, garlic, salt and pepper to bowl.
- Toss the potatoes gently coating them as best you can.
- It is easiest to do by hand, but a little messy.
- Once tossed, lay potatoes out on prepared baking sheets.
- Try not to overlap.
- Cover pans tightly with aluminum foil& bake for 30 minutes (see below what to do while potatoes are baking).
- When done, remove pans from oven.
- Uncover to cool.
- Do not turn oven off.
- While potatoes are baking, heat remaining 2 T oil in a large pot.
- Add onions and cook over medium heat until soft (about 5 minutes).
- Add mushrooms until they throw off their juices (about another 5 minutes).
- Stir in spinach.
- then add salt& pepper to taste.
- Cover and cook til spinach wilts (about 4 minutes).
- Uncover and cook off any liquid in the pot.
- Remove the pot from heat and stir in ricotta.
- Grease a 13 X 9 inch baking pan.
- Line the bottom of pan with 1/3 of potatoes.
- Spoon 1/2 spinach mixture over layer of potatoes& sprinkle with 1/3 of cheese.
- Make another layer of potatoes, cover with remaining spinach mixture& another 1/3 of the cheese.
- Lastly, cover with remaining potatoes& sprinkle the rest of the cheese.
- Bake until the casserole turns golden brown on top.
- Approximately 25 minutes.
- Remove pan from oven& let settle for 5 minutes before cutting up slices.
POTATO-MUSHROOM PIE
This gratin combines two comforting ingredients to their mutual advantage --and ours. Sliced potatoes encircle a casserole dish, with assorted wild mushrooms, such as chanterelle and oyster, taking spots alongside more potatoes. Fresh thyme gives the pie herbal undertones; Gruyere and Parmesan, melting in and around the layers during baking, make it soul-satisfying.

- Preheat oven to 350 degrees. Butter a 13-by-9-inch baking dish; set aside. Melt butter in a large skillet over medium heat. Add onion; cook, stirring occasionally, until softened, about 5 minutes. Add half of the mushrooms; cook until they are slightly softened. Add remaining mushrooms; cook, stirring occasionally, until mushrooms have released their juices and most of the liquid has evaporated, 8 to 10 minutes. Add wine; cook, stirring occasionally, until liquid has evaporated, 3 to 5 minutes. Remove from heat. Season with salt and pepper.
- Combine cheeses in a small bowl; set aside. Cover bottom of prepared dish with potato slices, slightly overlapping them. Sprinkle with half of the thyme and a pinch each of salt and pepper. Sprinkle with 1/3 of the cheese and half of the mushroom mixture. Repeat layering process, using all but 2 tablespoons cheese. Arrange remaining potato slices, slightly overlapping, around the edge of the dish. Stir together milk and cream in a bowl, and pour over top. At this point, dish can be refrigerated, covered, up to 1 day; let stand at room temperature 30 minutes before baking.
- Cover loosely with foil, and bake until bubbling, about 1 hour. Remove foil, and sprinkle with reserved cheese. Bake until top is golden, 20 to 30 minutes more. Transfer dish to a wire rack; let cool 10 minutes before serving.
CRUSTLESS MUSHROOM AND SPINACH PIE
Steps:
- Preheat the oven to 350°F. Lightly spray a deep 9-inch pie pan with cooking spray.
- In a large nonstick skillet, heat the oil over medium-high heat, swirling to coat the bottom. Cook the mushrooms and onion for 3 minutes, or until tender, stirring frequently.
- Stir in the garlic. Cook for 30 seconds, stirring frequently.
- Pour in the milk. Heat for 1 1/2 to 2 minutes, or until hot but not boiling. Remove from the heat.
- Stir in the spinach, rice, egg substitute, Jarlsberg, Parmesan, nutmeg, and 1/4 teaspoon hot-pepper sauce, breaking up any large clumps of spinach. Carefully pour into the pie pan.
- Bake for 30 to 35 minutes, or until a knife inserted into the center of the pie comes out clean. Sprinkle with additional hot sauce.

- Cook's Tip on Jarlsberg Cheese
- A mild Swiss-style cheese with large irregular holes, Jarlsberg is smooth and melts readily. Check the gourmet cheese section of the supermarket for the low-fat variety of this delicious cheese. If you can't find it, you can substitute low-fat Swiss, but the total fat, saturated fat, and sodium of the Swiss will be higher.

- Boil the potatoes in their skins until soft. Drain, cool, peel and mash the potatoes with a fork. Add the butter, milk, salt, pepper, eggs and 6 tablespoons of the grated cheese. Beat until well blended.
- Preheat the oven to 400 degrees. Wash and drain the spinach and press dry. Cook over low heat in a covered, nonstick skillet for 1 to 3 minutes. Season with salt and pepper to taste. Add the nutmeg and mix well.
- Use 1 tablespoon of the olive oil to grease a 9-by-12-inch baking dish. Use a spatula to press half the mashed potatoes into the bottom of the dish, layer in the spinach, top with the remaining potatoes, sprinkle with the remaining cheese and oil and bake for 50 minutes.

- Preheat oven to 400 degrees.
- Lightly grease a 9-inch glass or ceramic pie dish with 1/4 teaspoon oil. Toss potatoes with 1 teaspoon oil and 1/8 teaspoon each salt and pepper. Press into an even layer in pie dish, up the sides like a crust. Bake until golden brown at the edges and dry, about 20 minutes. Let cool.
- Lower the oven to 325 degrees. Heat 1 teaspoon oil in a large skillet, preferably nonstick, over medium heat. Add onion and cook until softened and golden, about 5 minutes. Add remaining teaspoon oil and mushrooms and cook, stirring, until mushrooms release their liquid and most of the liquid evaporates, about 8 minutes. Add spinach and 1/4 teaspoon each salt and pepper, and cook, stirring, just until spinach wilts, about 30 seconds. Let cool slightly.
- Whisk together eggs, milk and remaining 1/8 teaspoon salt and pepper. Spread the mushroom mixture in an even layer in the pie dish, and top with an even layer of the cheese. Carefully pour in egg mixture. Bake until firm around the edges but still wobbly in the center, about 20 minutes. Let cool, and serve warm or at room temperature.

- For the filling, pour one litre of cold water into a medium pan and bring to the boil. Peel the potatoes and cut into roughly 5mm slices. Carefully drop the potatoes into the hot water and return to the boil.
- Melt 25g/1oz of the cubed butter in a large non-stick frying pan and put the rest back in the fridge. Fry the onion over a medium heat for five minutes, or until fairly soft and lightly browned, stirring regularly.
- To make the pastry, put the flour, butter and cheese in a food processor and blend on the pulse setting until the mixture resembles fine breadcrumbs. With the motor running, add the beaten egg and water and blend until the mixture comes together.
- Remove the blade and take the pastry out of the food processor. Knead lightly until the dough forms a ball. Weigh the pastry and take off 250g/9oz for the pie lid.
- Roll the flattened pastry out on a lightly floured surface, turning every couple of rolls until around 4mm thick and 4cm/1½in larger than a 23cm/9in round pie dish.
- Arrange a third of the drained potato slices in the pie crust, dot with a third of the reserved butter and season with salt and pepper. Scatter half of the fried onions over the top.
- Roll the reserved ball of pastry in the same way as the first. Cover the pie with the pastry lid and press the edges together firmly to seal. Trim the pastry with a knife and crimp the edges if you like.
- Bake on the tray in the centre of the oven for about 45 minutes, or until the pie is golden-brown all over and the potatoes are soft and piping hot. (You can check that the potatoes are ready by poking a skewer through the hole in the top of the pastry – it should slide in easily.)
- For the mushroom gravy, pour the just-boiled water into a large jug and stir in the stock powder and dried mushrooms. Leave to stand for 20 minutes. Drain the mushrooms in a sieve over a bowl, reserving all the soaking liquor.
- Heat the oil and butter in a large non-stick frying pan and fry the chestnut mushrooms over a medium high heat for 5-6 minutes, or until they are lightly browned, stirring regularly.
