3-INGREDIENT BROWN SUGAR AND MUSTARD CHICKEN BREASTS
Sweet and tangy brown sugar and mustard chicken has big flavor and a short grocery list. A delicious dinner in 30 minutes.

Steps:
- In a bowl, mix together the brown sugar and mustard.
- Place chicken breasts in a medium baking dish lined with foil. Pour the sugar-mustard paste over the chicken.
- Place chicken in a preheated 400°F oven. Bake for 25 to 30 minutes until done. Chicken is done when a meat thermometer inserted in the center reaches 170°F. Remove chicken from the oven and transfer to a plate to keep warm. Pour the pan juices into a small saucepan and bring to a boil. Boil for 2 to 3 minutes until sauce has slightly thickened. Sauce will thicken more as it cools.
- Slice chicken breasts into serving pieces. Spoon the Brown Sugar Mustard sauce over the chicken. Serve 3-Ingredient Brown Sugar Mustard Baked Chicken Breasts with Green Beans and Sliced Garlic or an Escarole Salad with Apples.

- 1. MIX Marinade Mix, oil, water and mustard in small bowl. Reserve 2 tbsp. marinade. Place chicken in large resealable plastic bag or glass dish. Add remaining marinade; turn to coat well.
- 2. REFRIGERATE 30 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade.
- 3. GRILL over medium heat with lid closed 30 to 40 minutes or until cooked through, turning occasionally and brushing with reserved marinade.

BEER-BRAISED CHICKEN

- Heat a large pot over medium-high heat. Add the bacon and cook until browned, about 5 minutes. Remove with a slotted spoon and transfer to a paper-towel-lined plate. Season the chicken with salt and pepper and dredge in flour, shaking off the excess. Add the olive oil to the drippings in the pot. Add the chicken in batches and cook over medium-high heat until golden on the bottom, 6 to 7 minutes, then flip and sear the other side, about 1 minute.
- Add the beer, onions, potatoes, mustard, sugar, thyme and 1 cup water to the pot and stir, making sure the chicken is fully submerged. Simmer until the chicken is cooked through, about 15 minutes. Discard the thyme and stir in the bacon and parsley.

- Preheat an outdoor grill for medium-high heat, about 375 degrees F (190 degrees C). Mix the brown sugar, chili powder, paprika, dry mustard, salt, and ground black pepper in a small bowl. Place the half-full can of beer in the center of a plate.
- Rinse chicken under cold running water. Discard giblets and neck from chicken; drain and pat dry. Fit whole chicken over the can of beer with the legs on the bottom; keep upright. Sprinkle 1 teaspoon of the seasoning mix into the top cavity of the chicken. The beer may foam up when the seasonings fall inside the can. Rub the remaining seasoning mix over the entire surface of the chicken.
- Place the chicken, standing on the can, directly on the preheated grill. Close the lid and barbeque the chicken until no longer pink at the bone and the juices run clear, about 1 hour 15 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken from the grill and discard the beer can. Cover the chicken with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

- In a medium bowl, add the brown sugar, onion powder, garlic powder, mustard powder, smoked paprika, pepper, tarragon, and salt and stir to combine. Use half of the spice rub to season the entire chicken. Cover with plastic wrap and refrigerate for at least 2 hours or up to overnight.
- Preheat the grill to 350°F (190°C).
- Remove the chicken from the fridge and season with the remaining spice rub. our out half the can of beer. Place the half-filled can in the chicken cavity and stand it upright.
- Grill the chicken over indirect heat for 30-40 minutes. Baste the chicken with barbecue sauce and cook for another 10-15 minutes, until the internal temperature reaches 165°F (75°C).
- Remove chicken from the grill and let rest for 15 minutes before carving.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
- Brush the chicken breast halves on all sides with the mustard. Place the bread crumbs in a shallow dish. Press the chicken into the bread crumbs to evenly coat. Arrange the chicken breasts in the prepared baking dish.

This sauce is so sweet and good. I have to admit that I was a bit skeptical when I found out the strange ingredients, but it turned out to be excellent. Serve extra sauce over rice or potatoes. This could also be made in a crockpot if you cook it on low for about 4 hours. Cooking time may vary, so check to make sure chicken is done.

- In a heavy saucepan, combine mustard, brown sugar, vinegar and beer.
- Season with chili powder, black pepper and cayenne.
- Bring to a simmer over medium-high heat (do not boil-- the sugar will scorch).
- Reduce heat and simmer 20 minutes.
- Stir in Worcestershire Sauce, butter and Liquid Smoke.
- Simmer another 15 minutes.
- Add the Tabasco Sauce and stir to blend.
- This can be used as an overnight marinade for chicken breasts (or any other pieces you wish) then baked or grilled.
- If grilling, reserve some of the sauce for a basting sauce (or make a little extra).
