The secret is in the seasonings! I whipped these up on my own using stuff I had on hand. Shredding the chicken is the most time-consuming step, but it's worth it in the end. Give these babies a try! Serve with sour cream and a side of Spanish rice.

2 pounds skinless, boneless chicken breast meat - cut into chunks
1 (10.75 ounce) can condensed cream of chicken soup
1 ¼ cups sour cream
¼ teaspoon chili powder
1 tablespoon butter
1 small onion, chopped
1 (4 ounce) can chopped green chilies, drained
1 (1.25 ounce) package mild taco seasoning mix
1 bunch green onions, chopped, divided
1 cup water
1 teaspoon lime juice
½ teaspoon onion powder
½ teaspoon garlic powder
5 (12 inch) flour tortillas
3 cups Cheddar cheese, shredded, divided
1 (10 ounce) can enchilada sauce
1 (6 ounce) can sliced black olives

Steps:

  • Place the chicken in a large pot and add water to cover. Bring to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the chicken pieces are no longer pink, about 10 minutes. Shred chicken by placing two forks back to back and pulling meat apart. Set the shredded chicken aside. Meanwhile, combine the cream of chicken soup, sour cream, and chili powder in a saucepan. Bring to a simmer over low heat, stirring occasionally, then turn off the heat and cover to keep warm.
  • Heat the butter in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the shredded chicken, chopped green chilies, taco seasoning, half of the bunch of chopped green onion, and water. Allow to simmer for 10 minutes. Stir in the lime juice, onion powder, and garlic powder; simmer for an additional 10 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C). Stir 1 cup of the soup mixture into the skillet with the chicken mixture. Spread the remaining soup mixture on the bottom of a 9x13 inch baking dish.
  • Fill each tortilla with chicken mixture. Sprinkle Cheddar cheese over the chicken filling before folding the tortillas, reserving half of the shredded cheese for topping the enchiladas. Fold tortillas over the filling and place seam-side down in the prepared pan.
  • Pour enchilada sauce evenly over the enchiladas. Cover with the remaining 1 1/2 cups of Cheddar cheese. Sprinkle the reserved chopped green onions and the sliced olives on top of the cheese. Bake in the preheated oven until filling is heated through and the cheese is melted and bubbling, about 25 minutes.

My mom used to make a very simplified version of this recipe. I've just changed it over the years to what it is now...It's always a work in progress.

Number Of Ingredients 12

1 lb lean ground beef
1 medium green bell pepper, diced
1 medium red bell pepper, diced
1/2 medium onion, diced
2 garlic cloves, minced
1 (16 ounce) can refried beans
2 (9 ounce) cans red enchilada sauce
2 cups sharp cheddar cheese, shredded
1 (6 7/8 ounce) package Spanish rice, cooked
100 inches flour tortillas
salt and pepper
1/2 tablespoon crushed red pepper flakes

Steps:

  • Heat Oven to 400 degrees f.
  • While oven is warming up, brown beef with the minced garlic and then drain. Add refried beans to beef and mix well. Add the red and green peppers, onions and 1 can of enchilada sauce and mix well. Season to taste with Salt, pepper and crushed red peppers.
  • Take tortilla and place whatever amount of rice you want in center. Place a heaping spoonful of beef mixture ontop of rice. Sprinkle with cheese, wrap and place in either a baking dish or a deep tray. Continue until all ingrediants are used up or you run out of tortillas. If you run out of tortillas before mixture is gone, poor remaining mixture over the top of the enchiladas.
  • Pour remaining can of enchilada sauce over the enchiladas and bake in oven for 10 minutes. Add cheese ontop of the enchiladas and bake another 5 minutes until edges are brown and cheese is melted. Let cool before serving.
  • I usually serve these with shredded lettuce and sour cream.

1 pound extra-lean ground turkey
1 large onion, chopped
1-1/2 cups 2% cottage cheese
1-1/2 cups reduced-fat sour cream
2 cans (4 ounces each) chopped green chiles
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
SAUCE:
1 medium onion, chopped
2 cans (8 ounces each) tomato sauce
1 cup salsa
1 tablespoon chili powder
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
12 whole wheat tortillas (8 inches), warmed
3/4 cup shredded cheddar cheese, divided

Steps:

  • In a large skillet, cook the beef, turkey and onion over medium heat until meat is no longer pink; drain. Stir in the cottage cheese, sour cream, chiles, cumin and coriander; set aside., For sauce, in a large nonstick skillet coated with cooking spray, saute onion until tender. Stir in the tomato sauce, salsa, chili powder, oregano, garlic powder and thyme. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes or until slightly thickened., Place a heaping 1/2 cup meat mixture down the center of each tortilla. Roll up and place seam side down in two 13-in. x 9-in. baking dishes coated with cooking spray. Pour sauce over top., Sprinkle one dish with 6 tablespoons cheese; cover and freeze for up to 3 months. Bake the remaining dish, uncovered, at 350° for 30-35 minutes or until heated through. Sprinkle with remaining cheese; bake 5 minutes longer or until cheese is melted., To use frozen enchiladas: Thaw in refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Bake, covered, at 350° for 35-40 minutes or until heated through.

1 cans refried beans
1 cans ranch style beans

Steps:

  • Cook beef with enchilada seasoning and drain. Meanwhile, chop onion, grate cheese. When beef is almost done, start the refried beans.
  • Grease a large casserole dish. Heat chili and ranch style beans together. Put refried beans, beef, onions, and cheese on tortillas and roll until pan is full. Top with chili mix, and cheese.
  • Cook at 375°F for 15 minutes.

This is the real thing! Corn tortillas are dipped in a home made sauce, fried, filled with Mexican queso fresco, then topped with sour cream, lettuce and tomato. My mother in law is from Mexico and taught me to make this delicious dish! Serve with authentic refried beans, it has a taste different from the norm--so good!

6 dried chile de arbol peppers
1 clove garlic
1 teaspoon salt
¾ cup water
1 cup vegetable oil for frying
18 (6 inch) corn tortillas
3 cups crumbled queso fresco
1 cup sour cream
1 cup shredded lettuce
2 medium tomatoes, thinly sliced
½ cup chopped green onions

Steps:

  • Snap the tops off of the dried chilies, and place in a saucepan with enough water to cover. Bring to a boil, and simmer for 15 minutes. Drain the water, and place chilies into a food processor or blender with the garlic and salt. Puree until smooth. Press sauce through a strainer, and set aside.
  • Heat the oil in a large skillet over medium heat. Soak each tortilla in the sauce, then place in the hot oil. Turn over almost immediately, and fry for about 5 seconds on the other side. Remove to a plate that is lined with paper towels. The easiest way to do this is to fry the tortillas and stack them directly on top of each other until you have fried them all. This will keep the tortillas pliable until you are ready to fill them.
  • Take one fried tortilla at a time, and fill with about 2 tablespoons of the queso fresco. Roll up, and place seam side down on a plate. Place three of these on each plate. Top in the following order: Start with a layer of sour cream, then a small handful of lettuce, three tomato slices, 2 more tablespoons of queso fresco, and finally, 1 tablespoon of green onions.

I have been making these enchiladas for 15 years. Family and friends have begged for the recipe and I am finally ready to share. They are simple to make, rich, creamy and delicious.

Number Of Ingredients 7

2 cups cooked chicken breasts, shredded
1 white onion, chopped fine
1 (8 ounce) brick cream cheese (softened)
1 (4 ounce) can green chilies
1 (28 ounce) can green enchilada sauce
1 (8 ounce) package shredded monterey jack cheese
15 soft taco-size flour tortillas

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, combine chicken, cream cheese, onion, 1/2 the cheese, and green chilies.
  • Mix all ingredients well. Make sure the cream cheese is not clumpy.
  • In a 9x13 rectangular baking dish pour enough enchilada sauce to coat the bottom.
  • In each tortilla put approximately 3-4 large tablespoons of the mixture.
  • Roll each tortilla and place into the pan.
  • Once pan is full, pour enough enchilada sauce on top to make sure each tortilla is covered.
  • Sprinkle remaining cheese on top.
  • Bake for between 25 and 30 minutes.
  • Allow to cool 10 minutes before serving.
  • Garnish with sour cream, avocado, tomatoes, etc.
