SHRIMP STIR FRY RECIPE WITH GARLIC & GINGER
Other vegetables that you can easily add to this recipe: snow peas, canned straw mushrooms (halved), canned baby corn (cut small pieces), fresh bean sprouts, red bell pepper (julienned), julienned carrots. If you add more ingredients, increase the amount of seasoning and garlic/ginger/green onion.

Steps:
- In a small bowl, combine oyster sauce, soy sauce and cilantro and set aside.
- Pat the shrimp very dry with paper towels. In a medium bowl, add shrimp and cornstarch and toss to coat.
- In a wok or large saute pan over high heat, add half the cooking oil and swirl to coat the bottom of the pan. When the wok is very hot, add the shrimp in a single layer and cook partially until one side is nicely seared, about 1 minute. Flip and sear the other side of each shrimp, about one more minute. They don't need to be cooked all the way through yet. Remove them to a plate and set aside.
- Turn the heat down to medium and let wok cool off a bit to prevent the aromatics from burning. Add the remaining cooking oil and add green onion, garlic and ginger and stir fry for a minute until fragrant. [If you are using other vegetables, like snow peas, add them to the wok now and stir fry for a minute or until the vegetables are bright in color and crisp-crunchy]
- Pour in the sauce mixture and add the shrimp back into the pan. Stir fry for another minute or so until shrimp is cooked through. Serve immediately.

VEGETABLE STIR FRY NOODLES
These easy vegetable stir fry noodles are delicious, simple, and super flexible! Feel free to use up whatever you have on hand.

- Slice vegetables into matchsticks.
- Start cooking noodles according to package directions.
- In a large skillet, over high heat, add 2 tbl sesame oil.
- Add in the vegetables, and using tongs, stir fry until vegetables have released all their liquid and start to caramelize. This will take at least 6-8 minutes. Stir occasionally.
- While the vegetables are cooking, mix together the ingredients for the stir fry sauce. I like to use a small mason jar to shake well, but you can also just mix in a small bowl until the sugar has dissolved. Set aside.
- After the vegetables are done, add in mirin if using, along with a splash of water to deglaze the pan, scraping up any browned bits.
- Add in the cooked noodles, along with the sauce. Using tongs, stir to coat until heated through. Enjoy!
MY FAVORITE STIR FRY
I don't like bottled sauces, so I made my own for stir fry. The meat marinade for this recipe and the accompanying sauce use the same ingredients for convenience.

- Combine all ingredients for the marinade, and prepare chicken in bite sized pieces, either thin strps or chunks. Place chicken and marinade in a ziploc bag and marinate in refrigerator at least one hour.
- Meanwhile, prep all of your vegetables for stir-frying.
- Make the sauce by combining the chicken broth, soy sauce, ginger, garlic, and pepper flakes and 5-spice in a small saucepan. Bring to a boil. While this is heating, combine the sherry and cornstarch until smooth. When sauce mixture boils, add the cornstarch mixture and stir until sauce is thick. Keep sauce warm.
- Heat 1-2 Tbsp oil in wok until nearly smoking hot(I like to add a few red pepper flakes to the oil) and add the peanuts. Fry for 2 minutes, then remove to a small bowl.
- Add all of the vegetables to the very hot wok and stir-fry until the vegetables are tender crisp. Drain the chicken and discard the marinade.
- Remove the vegetables to a bowl. Add oil to the wok if necessary and again get it smoking hot. Add the chicken and stir-fry until juices are clear and cooked off.
- Add peanuts, cooked vegetables, and sauce back in to the wok and stir to coat.
- Serve immediately over hot cooked rice.

- Preheat large pan to medium high heat. Chop vegetables and chicken. Season chicken with salt, pepper, turmeric and curry powder. Once the pan is hot, heat up 1 tbsp olive oil and saute onions, garlic and ginger for 3 minutes. Add chicken and saute chicken until it's mostly cooked.
- Add vegetables and saute. You may want to add another tablespoon of oil at this point and saute until the vegetables are lightly coated. Cover and cook for about 5 minutes, stirring occasionally, until the chicken is cooked through and the vegetables are steamed and brightly colored (you don't want to cook for too long or else they start to get mushy and your broccoli will turn a murky green).
- While the chicken and veggies are cooking, make your stir fry sauce: add the ingredients together and whisk or shake until the sauce starts to thicken. Sometimes, I heat my sauce a bit to help the flavors meld.
- Once the chicken is cooked and the veggies are steamed and brightly colored, serve over jasmine rice with the stir fry sauce and some chopped cashews sprinkled on top!
