GRANDMA'S CLASSIC NO-BAKE COOKIES

Grandma's Classic No-Bake Cookies image

This is the first cookie I ever learned to make as a child. They're very delicious with the peanut butter and oatmeal. You can eat them fresh out of the pan in a bowl with a spoon, which is delicious with a glass of milk besides. This no-bake cookie recipe was my grandmother's, and my mother taught it to her children, and I will to mine. I hope you have as much fun making this either by yourself or with your children, as I did with my mom. Separate cookies with waxed paper if putting in a tin or baggie to prevent sticking.

MRS. MCKENZIE'S CHOCOLATE NO BAKE COOKIES

Mrs. Mckenzie's Chocolate No Bake Cookies image

I thought for sure this recipe would be here on Zaar but I couldn't find it. My mom got this recipe from an old family friend way back in the early 1960s. It's a family favorite that I've made so many times that I don't even need to use a recipe any more... it's memorized!

Categories     Drop Cookies

Time 20m

Yield 36 cookies

Number Of Ingredients 7

2 cups granulated sugar
1/2 cup butter (1 stick) or 1/2 cup margarine (1 stick)
1/4 cup baking cocoa, gently packed into measuring cup (not the drink mix variety)
1/2 cup evaporated milk
1 pinch salt
1 1/2 teaspoons vanilla
3 cups quick oats

Steps:

  • In a large saucepan, mix together sugar, butter, cocoa, milk, and salt.
  • Bring to a boil over medium high heat and AFTER the mixture comes to a boil, cook for 2 minutes (time it).
  • Remove from heat and stir in vanilla (be careful b/c the vanilla will make the chocolate mixture splutter a bit).
  • Quickly stir in oats and then drop by teaspoons-full onto waxed paper covered newspaper (if you don't have newspaper, waxed paper covered baking sheet is fine).
  • Let cool before eating, if you can.
  • Be careful NOT to lick the spoon before the chocolate mixture cools -- you can burn your tongue. :).

MY MOM'S NO-BAKE COOKIES

My Mom's No-Bake Cookies image

This is the recipe that my mom made for us while we were growing up. Now I make them and they are my go-to recipe when I want a quick sweet treat. *1/16/12: The current picture is of the batch that fellow JAP member, Bonnie Dare, made today. She added chopped pecans to the mixture. Thank you so much Bonnie for letting me use your photo until I can post one of my own!

Number Of Ingredients 8

1 1/2 cup(s) granulated sugar
1/3 cup(s) dutch-processed cocoa
- pinch of salt
- ~~whisk the above ingredients together.

6 ounce(s) evaporated milk
1 1/2 cup(s) shredded or flaked coconut
2 cup(s) (to 2 1/2 c.) quick oats

  • VARIATIONS ~ Peanut butter (add approx. 1/3 c. to mixture while cooking) ~ Raisins, cranberries or Craisins* ~ Nuts* ~ Other dried fruits, chopped* *You might need to decrease the amount of coconut when adding these variations.
