MOM'S SWISS STEAK
Mom's Swiss Steak is the perfect family dinner! With tender braised beef in a hearty pepper, onion, mushroom and tomato sauce.

- Preheat oven to 350 degrees and place the rack in the middle position of the oven.
- Cut the beef into serving-sized pieces. If some pieces are thicker than others, pound them with a meat tenderizer so they all are 1 inch thick.
- Season both sides of the meat with garlic powder, onion powder, salt and pepper, and place in a 9x13 baking dish.
- Add the tomatoes, onion, bell pepper, mushrooms, garlic, 1 teaspoon salt and pepper, 2 teaspoons onion powder and garlic powder, and three tablespoons Worcestershire sauce to a large mixing bowl. Fold it all together and pour over the steak in the 9x13 baking dish.
- Cover the dish and cook on 350 degrees for 1½ - 2½ hours covered. (The total cook time depends on the thickness of your meat and the cut of meat you use. It could require more time in the oven if it's not as tender as desired.)
- When the meat is tender, remove from the oven and allow to sit for 5 -10 minutes uncovered.
- If you'd prefer a thicker sauce, pour the liquid from the pan into a sauce pan over medium high heat. In a small bowl, combine 1 tablespoon cornstarch with 2 tablespoon water. Bring the sauce to a boil and stir in the cornstarch slurry for 1-3 minutes until it's thickened.

MOMS SIMPLE SWISS STEAK
This is different then most Swiss steak recipes (she's made it for more than 20 years and I still don't get tired of it.)

Steps:
- Mix flour and pepper.
- Dredge the steaks in the flour.
- Fry in a nonstick pan using no oil or butter.
- Lightly brown both sides.
- Mix soup and water together.
- Pour in a large medium depth casserole pan.
- Add steaks in the pan (don't stack them).
- Bake at 375°F in oven for 45 minutes. Flip once or twice.
- Enjoy.
MOM'S SWISS STEAK
My mom used to make this for my dad when he was workin in the lumber business. The smell of it used to drive me crazy enough to take a taste when no one was lookin. It tasted so good. Especially on mashed potatoes. fills you up nicely also.

- 1. fry bacon and onion together in electric skillet. Cook until onion is done. Remove bacon and onion and set aside.
- 2. Cut round steak into 4 sections. Set aside
- 3. Put flour and garlic salt, pepper into bag and shake until well blended.
- 4. Add steak sections to flour mixture. Shake until well coated. Place into the bacon dripping and lightly brown. Remove from skillet.
- 5. Add the bacon and onions back to skillet and turn to simmer. Add the meat. Pour can of whole tomatoes over the meat. Simmer for about 1 1/2 hour.
MOM'S SWISS STEAK
This is an old recipe from my mom. She called it stroganoff. It's a pretty healthy recipe considering it uses tomato juice and doesn't use sour cream (instead, it uses evaporated milk and lemon juice). Round steak is relatively low in fat also (compared to some cuts).

- Cut round steak into 3 x 1 inch strips.
- Heat oil. Brown strips in it. Add onion, salt and pepper. (Note you can probably omit the salt if your tomato juice has salt in it.) Cook long enough to soften onion.
- Blend in flour, then tomato juice and mushrooms.
- Cover and cook over low heat one hour or until meat is tender.
- Mix together evaporated milk and lemon juice and then stir it into the meat. Warm, but do not boil.
- Serve over cooked noodles.
- Do not freeze leftovers.
MOM'S SWISS STEAK
I have also done this in the slow cooker at low for 8 hours with great success. Add potatoes and carrots for a one pot meal.

- Place in roast pan.
- Sauté garlic apple and onions.
- Add to meat.

- Chop onion and green pepper and saute in greased pan. Then spoon out in a bowl and set aside. Cut round steak into 4 pieces. Pound flour into both sides and pound really well, it makes it tender too, you'll be able to cut it with a fork! Brown meat on both sides. Put chopped onion and green pepper mixture on top on each piece of meat and cover well, if you have to chop a little more do it, it will add to flavor. Then take tomato sauce and add the water, stir and pour over meat. Simmer on low heat for a couple hours or until meat is tender enough to cut with fork. If done in an electric frying pan, cook on about 250-300 degrees. Check frequently, mixture will start to thicken, try to keep it from sticking too much; add more water when necessary. Make this a gravy consistency, not too watery. Make mashed potatoes, add a vegetable and there's your dinner!

- Cut round steak into serving pieces (approx 10- remember each piece will become slightly "larger" after being flattened out by pounding). One at a time, lay each piece of meat between plastic wrap. Pound with flat side of meat mallet until flattened and thinned down and tenderized. Repeat process for each piece of meat. Salt and Pepper each piece of meat, then dredge/fully cover each piece (all sides) in flour (put flour on a dinner plate to do this).
- Heat oil on medium high heat. Once hot, brown meat (turning once) until browned on both sides. (You may need to cook the meat in batches, depending on quantity and size of skillet). When done, reserve 1/4 cup of the oil and drippings in skillet ; discard the rest of oil.
- Place browned meat pieces in a single layer in casserole dish. Top each piece of meat with a slice of onion. Add another layer of meat, then onion, until all pieces are in dish.
