APPLE BLUEBERRY CRISP

Apple blueberry crisp is a quick and easy dessert that's perfect for fall or any time of year!

3/4 cup rolled oats
2/3 cup packed light brown sugar
1/2 cup pecans or walnuts (coarsely chopped)
1 teaspoon ground cinnamon
1/4 teaspoon salt
5 tablespoons very cold unsalted butter
4 1/2 cups sliced peeled apples*
1 1/2 cups frozen blueberries
1 tablespoon packed light brown sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • Combine all the topping ingredients EXCEPT BUTTER in the bowl of a food processor. Pulse a few times to chop.
  • Cut the butter into 12 small chunks and scatter over the other ingredients in the bowl. Pulse the mixture 10 to 15 times, until combined but still chunky.
  • Refrigerate while you make the filling.
  • (If you don't have a food processor you can use quick cooking oats and chop your nuts finely by hand. Stir all the ingredients EXCEPT butter in a bowl, then use your fingers to cut in the cold butter until crumbly.)
  • Preheat the oven 400 degrees. Spray a 9-inch square baking pan with cooking spray and set aside.
  • Combine all the filling ingredients in a large bowl and stir until the fruit is evenly coated with the sugar.
  • Spread the filling into an even layer in the prepared baking dish. Sprinkle with the refrigerated topping.
  • Bake 30 to 40 minutes, until the topping is browned and the juices are bubbling a bit around the edge of the dish. Cool at least 20 minutes, then serve.
  • Store uneaten crisp loosely covered in the fridge for 2 days.

3 large Granny Smith apples, peeled and sliced
¾ cup white sugar
2 tablespoons ground cinnamon
1 teaspoon ground nutmeg
2 tablespoons lemon juice
¼ cup butter, softened
¾ cup white sugar
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
½ cup milk
2 cups fresh blueberries
⅔ cup white sugar
½ cup all-purpose flour
1 teaspoon ground cinnamon
⅓ cup cold butter

Steps:

  • Place apples in a large bowl and toss with 3/4 cup sugar, 2 tablespoons cinnamon, nutmeg, and lemon juice. Cover the bowl and place in refrigerator.
  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Beat softened butter and 3/4 cup white sugar together in a large bowl until creamy; beat in egg.
  • Mix 2 cups flour, baking powder, and salt together in a small bowl. Stir flour mixture into butter mixture, alternating with milk, until fully incorporated. Fold in blueberries.
  • Arrange apples in a single layer in the bottom of the prepared baking dish. Pour blueberry batter over apples.
  • Mix 2/3 cup sugar, 1/2 cup flour, and 1 teaspoon cinnamon together in a bowl; cut in cold butter until mixture is crumbly. Sprinkle crumb topping over batter.
  • Bake in the preheated oven until a toothpick inserted in the center of the buckle comes out clean, 40 to 45 minutes. Cool on a wire rack.

2 1/4 cups all-purpose flour
3/4 cup packed dark-brown sugar
1/3 cup plus 1/2 cup granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon mace
1/2 teaspoon salt
1/2 cup old-fashioned rolled oats
2 cups blueberries
3 pounds apples (about 8), peeled, cored, and cut into thin wedges
Juice of 1/2 lemon (about 1 tablespoon)
2 tablespoons flour
Vanilla ice cream or whipped cream, for serving (optional)

Steps:

  • Preheat oven to 375 degrees, with a rack in the lower third. Butter a 3-quart baking dish, and place on a parchment-lined baking sheet; set aside.
  • In a large bowl, whisk together flour, brown sugar, 1/3 cup granulated sugar, cinnamon, mace, and 1/4 teaspoon salt. Using a pastry blender, cut in butter until large clumps form. Using a rubber spatula, mix in oats. Set aside.

One day i felt like cooking things. So i started looking through the fridge and i decided to work with apples. I turned on the burner and puttm' on the pan and did some stuff. Then voala. It's hardly a recipe though. It's so simple. It's a goood filling for tons of things like french toast. Personally I like to eat it on white rice, but do whatever you want.

2 -99 apples
maple syrup
50 -99 blueberries
white rice (optional)

Steps:

  • Cut apples into thin sheets. Not too thin.
  • Put on non-stick pan at medium heat. Be sure to move them around once and awhile so they don't get burned.
  • Halfway through, pour some maple syrup over the apples, then put in the blueberries.
  • Then stir around and let it cook till the syrup is almost all gone--or not--it's up to you.
  • Then put it in whatever you want, pancakes, french toast, bread dough, crepes, etc.

1/2 cup fine yellow cornmeal
1/4 cup packed light-brown sugar
1 tablespoon baking soda
1 1/2 teaspoons coarse salt
1 cup buttermilk, room temperature
1 large egg, room temperature
1 teaspoon pure vanilla extract
Vegetable oil, for frying
2 Gala apples, peeled, cored, and cut into 1/4-inch-thick rings
Confectioners' sugar, for dusting

Steps:

  • Whisk together flour, cornmeal, brown sugar, baking soda, and salt in a large bowl. Whisk together buttermilk, egg, vanilla, and 3/4 cup water in another bowl. Add buttermilk mixture to flour mixture; stir to combine (batter will be lumpy).
  • Heat about 4 inches oil in a medium cast-iron or heavy stockpot until it registers 360 degrees on a deep-fry thermometer. Dredge apple rings into flour, shaking off excess; then dip into batter.
