MOM'S SWEET POTATO PIE
Here in the South, sweet potato pie is a staple among many despite 100's of variations. This is the recipe that both my mom and grandma have used for years. Even my picky husband marks this as his favorite pie!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Press the pie pastries into two 9-inch pie dishes.
- Place sweet potatoes into a large pot and cover with water; bring to a boil, reduce heat to medium-low, and simmer until tender, 15 to 20 minutes. Drain potatoes and let cool.
- Beat potatoes, sugar, eggs, milk, margarine, vanilla extract, lemon extract, cloves, and allspice together in a bowl until smooth; pour into the prepared crusts.
- Bake in the preheated oven until pies are set in the middle, 40 to 60 minutes.

GRANDMA'S SWEET POTATO PIE
Steps:
- Boil potatoes until fork tender. Drain, cool slightly, and remove skin. Beat potatoes in large mixing bowl until smooth -- should make about 3.5 cups of mashed sweet potatoes. Mix in butter & sugar. Beat in 1 egg at a time. Add remaining ingredients.
- Place pie shells onto large cookie sheet. Pour mixture into unbaked pie shells. Cover edges of pie shells with foil or tin shell covers.
- Bake 425°F for 20 min. Lower heat to 325°F and bake for 30-45 minutes. Pies should be firm and pass clean knife check.

Steps:
- Place sweet potatoes and orange peel into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until soft, about 10 minutes. Drain well and let cool. Discard orange peel.
- Preheat oven to 400 degrees F (200 degrees C). Line a 9-inch pie plate with pie crust.
- Mash cooled sweet potatoes with a potato masher or fork. Mix in eggs until well blended. Add pineapple juice, butter, and vanilla extract; mix until combined. Mix in flour, cinnamon, nutmeg, ginger, cloves, and salt. Mix in sugar until dissolved. Blend in heavy cream using a whisk.
- Pour sweet potato mixture into the pie crust.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 50 minutes. Place on a cloth on a table or window sill to cool down.

Steps:
- Bake the sweet potatoes in the oven until done; let them cool.
- Mash the potatoes with the butter; add the sugars and the eggs, stir.
- Add the pudding mix, stir up real good.
- Add the pinch of salt, nutmeg, and cinnamon.
- Add the milk and stir up real good.
- Pour the mixture in the pie crust.
- Put the pie in the oven at 350°F Bake 45 minutes or 1 hour.
MY SWEET GRANDMOTHER'S SWEET POTATO PIE
As my grandmother became ill and it was clear she wasn't going to live much longer, I used to lay in the bed talking to her and jotted down the recipes she would tell me from memory. This was always one of my favorites, and I still recall the day she told me how to make the pie. I simply couldn't believe that she could recall so many recipes. To this day, I only wish I had began asking when I was a child so I could have the collection of recipes to go with all of the food memories she gave me.

Steps:
- Preheat over to 325 degrees.
- Peel and boil the potatoes in water until tender.
- Drain and mash the potatoes well with the stick of butter and 1/2 cup sugar.
- Taste; add the rest of the sugar if not sweet enough.
- Mix in the eggs and cinnamon (or allspice).
- Add the evaporated milk into the mixture until it appears loose. It may or may not require all of the canned milk.
- Pour into the unbaked pie shell.
- Bake until middle is set.
