These are great to serve with drinks and are so simple to make. If your guests are hungry you can always serve whole bagels topped with the curd cheese and salmon.

10 fresh bagels (not presliced)
14 ounces (400 grams) fresh curd cheese or cream cheese
A large handful fresh chives
1 lemon, juiced
Freshly ground black pepper
14 ounces (400 grams) wild smoked salmon
Extra-virgin olive oil

Steps:

  • Put the bagels on a cutting board and vertically slice into little rounds, across the diameter. Mix the curd cheese with some finely chopped chives, the lemon juice and black pepper. Taste and adjust the seasoning and lemon. To assemble, spread each piece of bagel with the curd cheese, place a twist of salmon on top, sprinkle with some freshly cut chives, and finally add a drizzle of the best extra virgin olive oil you can afford.

Number Of Ingredients 12

Nonstick cooking spray, for the baking dish
5 everything bagels, cut into 1-inch hunks (stale bagels work great here!)
8 ounces whipped cream cheese
3 cups whole milk
10 large eggs, lightly beaten
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon freshly cracked black pepper
1/2 red onion, finely diced
1/4 cup chopped fresh chives
8 ounces sliced smoked salmon
2 tablespoons capers

Steps:

  • Spray a 9-by-13-inch baking dish with nonstick cooking spray. Spread the bagel chunks in the dish in an even layer, then dollop the cream cheese around the baking dish, on top of and in between the bagel chunks.
  • In a large bowl, whisk together the milk, eggs, garlic powder, salt, pepper, half the red onion and half the chives until combined. Pour the mixture over the bagels in the baking dish. Cover the baking dish with foil and refrigerate overnight.
  • Preheat the oven to 350 degrees F. Set the baking dish out at room temperature while the oven heats.
  • Bake, still covered in foil, until mostly set, about 1 hour. Remove the foil and bake until the top is lightly browned, 10 to 15 minutes more. Let cool slightly for 10 to 15 minutes. Garnish the top with ribbons of smoked salmon, capers and the remaining red onion and chives. Serve immediately.

My Daily Bagel Breakfast image

A healthy recipe I came up with on a whim. I'm a tad underweight(and because I'm on the school meal-plan where I can have only 2 meals a day) and bagels have more calories than pancakes, so I decided to create this as a healthy way to get more calories without consuming fat. As weird as it sounds, it's VERY TASTY! Try it! Due to the fact that toasters toast at different rates (as well as people mashing food at different rates ;), I didn't submit prep or cook times, but it shouldn't take long at all! :)

3 tablespoons raisins (or other dried fruit)
1 medium banana (of any ripeness)
1/4 cup cereal (your choice)
1 bagel (any size; any flavor)
1 cup skim milk

Steps:

  • Mash the banana and mix with raisins and cereal.
  • Cut the bagel into quarters and toast to desired (would you call it...?)"toast-y-ness" Spread the banana mixture evenly over bagel pieces.
  • Dunk in glass of milk and enjoy.
  • NOTES: I usually use a blueberry bagel to give added flavor and use Fiber One or All-Bran as the cereal (I LOVE Bran cereals, believe it or not).
  • You can use this recipe as a template for any variation.
  • Feel free to increase, decrease, substitute, or eliminate ingredients.
  • However, the banana acts as a"glue" to hold the mixture to the bagel.
  • NOTE 2: Just as a friendly warning, the breakfast can get a little messy when consuming because sometimes the spread falls off the bagel (usually into the milk with a slight"plop") and your fingers get sticky.
  • Yet I feel it's worth it because this is so tasty.
  • I have it every morning.
