SPICED PARSNIPS (MZOURA)

This is a Tunisian side dish that originally appeared in the cookbook North African Cooking by Hilaire Walden

Number Of Ingredients 11

2 lbs small parsnips (Sliced)
3 tablespoons olive oil
1 small onion (Finely Chopped)
1 garlic clove (Finely Chopped)
1 tablespoon harissa
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon honey
2/3 cup vegetable broth
salt and pepper (To Taste)
cilantro (For Garnish)

Steps:

  • Cook the parsnips in boiling water for 7 minutes. Drain.
  • Heat oil in frying pan and saute onion and garlic until well browned. Stir in Harissa and spices, then add honey, broth, parsnips and seasoning. Cook for 10 minutes.
  • Serve, sprinkled with cilantro.

This is a simple seasonal dish that takes 5 minutes to throw together and tastes delicious. It's from the cooking show, "Fresh with Anna Olson". Dish can be baked in advance and re-heated in the oven to serve.

2 tablespoons ground cumin
1 tablespoon ground coriander
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1 teaspoon black pepper
1/4 teaspoon ground cloves
1 1/2 lbs parsnips
1 tablespoon olive oil
2 tablespoons nut oil, such as walnut or almond
1 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Toss all spices together and store in an airtight container.
  • Peel parsnips, cut into 3-inch pieces and place in a baking dish. Heat olive oil and nut oil in a small pan. Add 2 tbsp of the spice mix and stir into oil, heating for a minute. Scrape mixture over parsnips, add salt and toss to coat. Cover dish and bake for 25 to 30 minutes, until parsnips are tender.

1 lb parsnip, peeled sliced longways
1 cup water
3 tablespoons olive oil
1 garlic clove, crushed
1/4 teaspoon red pepper flakes
1/4 teaspoon caraway seed, ground
1/4 teaspoon cumin
1/4 teaspoon coriander seed, ground
1 teaspoon honey
1/4 cup vegetable stock

Steps:

  • boil parsnips in water 8 minutes.
  • drain.
  • in skillet add oil onions.
  • add garlic.
  • add spices dont burn add stock.
  • add honey.
  • add parsnips.
  • cook for 10 minutes more until glazed.
