Amazingly Easy Irish Soda Bread image

A good old fashioned soda bread with just the basic ingredients. Buttermilk gives this crusty loaf a good flavor. The best Irish soda bread around!

4 cups all-purpose flour
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
½ teaspoon salt
½ cup margarine, softened
1 cup buttermilk
1 egg
¼ cup butter, melted
¼ cup buttermilk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
  • In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an 'X' into the top of the loaf.
  • Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Check for doneness after 30 minutes. You may continue to brush the loaf with the butter mixture while it bakes.

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 tablespoons brown sugar
1/4 teaspoon salt
3 tablespoons butter
1 beaten egg
3/4 cup buttermilk
1 beaten egg (, with another in a separate cup)
1/2 cup raisins

Steps:

  • In a mixing bowl, combine flour, baking powder, baking soda, brown sugar and ¼ teaspoon of salt.
  • Cut in the butter until the mixture resembles coarse crumbs.
  • Combine 1 beaten egg, raisins and buttermilk.
  • Add to mixture above and stir until just moistened.
  • On a lightly floured surface, knead gently for 12 strokes.
  • On a greased baking sheet, shape the mixture into a 6 inch round loaf and cut a cross (4 inches wide and ¼ inch deep) in the top.
  • Brush with the other beaten egg.
  • Bake at 375°F for 35 minutes or until golden.

  • NOTE:.
  • The thicker the buttermilk, the drier or tougher the dough.
  • The thinner the buttermilk, the softer or stickier the dough.
  • The drier dough, tough dough works better because it holds its shape better, cuts easier and seems to cook faster.
  • The softer dough tends to want to flatten out, it's hard to cut, takes longer to knead, you have to add a little more flour to make it tougher. It also takes longer to bake.

2 ½ cups all-purpose flour
1 ½ teaspoons baking soda
1 tablespoon baking powder
½ teaspoon salt
3 tablespoons white sugar
½ cup butter, cut into pieces
1 cup raisins
½ cup currants
2 teaspoons caraway seed
¾ cup milk
3 tablespoons apple cider vinegar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 2 baking sheets.
  • Stir together the flour, baking soda, baking powder, salt, and sugar in a large bowl until evenly blended. Cut in the butter using a pastry blender or your hands until the mixture resembles coarse cornmeal. Stir in the raisins, currants, and caraway seeds, then make a well in the center and pour in the milk and vinegar. Stir with a spoon until the dry ingredients are moistened.
  • Turn the dough out onto a well floured work surface, and knead gently 8 to 10 times. Divide the dough into two balls, and place onto the prepared baking sheets.
  • Bake in preheated oven for 15 minutes, then reduce heat to 375 degrees F (190 degrees C), and bake until the top of the bread is golden brown, about 15 minutes more.

2 1/2 teaspoons coarse salt
1 teaspoon baking soda
1 teaspoon baking powder
4 tablespoons cold unsalted butter, cut into small pieces
1 2/3 cups buttermilk

Steps:

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper; set aside. Whisk together the flours, salt, baking soda, and baking powder in a large bowl. With a pastry blender or your fingertips, blend in the butter until it resembles small peas. Add the buttermilk all at once; stir with a fork until the mixture holds together.
  • In the bowl, pat the dough into a dome-shaped loaf about 7 inches in diameter. Lift out the dough; transfer to the lined sheet.
  • Lightly dust the top of the loaf with flour. Cut a 3/4-inch-deep cross in the top, reaching almost all the way to the edges. While soda bread with add-ins like currants and caraway can be delicious, it's not at all authentic. In Ireland, soda bread tends to be plainer and more restrained. Here is a classic recipe adapted from Darina Allen, an Irish television personality and the owner of the Ballymaloe Cookery School in Shanagarry. This soda bread is is best eaten still steaming from the oven, slathered with good salted Irish butter that melts on contact with your slice. It's a fine accompaniment to corned beef and cabbage, should you be making that dish this St. Paddy's Day. Or make this recipe all year long. That's how they do it in Ireland.

450 grams all-purpose flour (about 3 1/2 cups)
3 grams fine sea salt (about 1/2 teaspoon)
4 grams baking soda (about 3/4 teaspoon)
1 1/2 cups buttermilk, more as needed

Steps:

  • Heat oven to 450 degrees. In a large bowl, sift together the flour, salt and baking soda. Make a well in the center and pour in the milk. Using your hand, mix in the flour from the sides of the bowl. The dough should be soft but not wet and sticky.
  • Turn the dough out onto a well-floured work surface. Wash and dry your hands. Knead the dough lightly for a few seconds, then pat the dough into a round about 1 1/2 inches thick. Place it on a buttered baking sheet and using a sharp knife, cut a deep cross in the center of the dough reaching out all the way to the sides.
  • Bake for 15 minutes, then reduce the oven temperature to 400 degrees, and continue to bake until the top is golden brown and the bottom of the bread sounds hollow when tapped, about 30 minutes longer. Serve warm.
