My great-grandma's recipe. Always a favorite at Thanksgiving dinner. Worth using fresh onions instead of frozen.

¾ cup water
salt to taste
2 cups peeled pearl onions
¼ cup butter
1 ½ cups cold whole milk
¼ cup quick-mixing flour (such as Wondra®), or more as needed

Steps:

  • Bring water and salt to a boil in a small saucepan; cook onions in the boiling water until just tender, 5 to 10 minutes. Drain, reserving 1/2 cup water in saucepan, and return onions to pan. Add butter to onions.
  • Mix milk and quick-mixing flour together in a bowl; add to onion mixture. Cook and stir over medium-low heat until thickened, 10 to 15 minutes. Stir in more quick-mixing flour if mixture is too thin.

NANA POBLANO CHILAQUILES

1 pound tomatillos
1 quart chicken or vegetable stock
1 cup whole milk
1/2 cup heavy whipping cream
1/2 cup sour cream
Two 16-ounce cans pinto beans
2 tablespoons lard
1 Spanish onion, diced fine
12 ounces tortilla chips
2 ounces queso fresco
1/4 cup sour cream
1/4 bunch fresh cilantro, chopped
1/2 Spanish onion, diced very small

Steps:

  • For the poblano cream: Place tomatillos in a large saucepan with stock and simmer over low heat until tomatillos are soft and liquid is reduced by half, about 15 minutes. Add milk and heavy cream and simmer for about 5 more minutes on low heat. Add sour cream and puree with a stick blender until smooth.
  • For the refried beans: Open, rinse, and drain the pinto beans. In a large saute pan or cast-iron skillet add lard and onions and cook over medium-low heat until onions are soft and translucent. Add drained beans and 1/2 cup water and cook slowly. Mash beans with a potato masher and simmer until slightly thickened.
  • For the chilaquiles: Place a large saute pan over medium heat and add poblano cream. Heat until hot. Add tortilla chips, making sure to coat chips with poblano cream, and cook until they break and get very soft, 5 to 8 minutes. Divide into four bowls. Serve with refried beans and garnish with queso fresco, sour cream, cilantro and onion.

NANA'S POT ROAST

My Nana cooked this on Sunday's in the winter, it has the best flavor. If the gravy isn't thick enough when it's done add a flour slurry to thicken to desired consistency.

1 package French onion soup mix
1 can cream of mushroom soup
1 1/2 cups water
3 lbs bottom beef round rump roast
assorted root vegetables

Steps:

  • Flour and brown Roast on all sides.
  • Mix Water, Soup Mix and Mushroom soup together.
  • Add mixture and roast to dutch oven, cover tightly.
  • Cook at 300deg for 2-2-1/2 hrs or until internal temp reaches 140deg.
  • I add carrots and celery to cook with roast for added flavor, but I cook vegetables for serving separately so they don't get too mushy.

14 ounces frozen petite whole onions, thawed (Birds Eye)
2 tablespoons flour
1/3 cup dry white wine
1/4 teaspoon minced fresh leaf thyme
1/3 cup cream or 1/3 cup half-and-half
1/4 teaspoon dry mustard (or prepared horseradish)
1 pinch freshly grated nutmeg
1 pinch white pepper
kosher salt, to taste
1/2 cup grated sharp cheddar cheese
1/2 teaspoon thinly snipped fresh chives, to garnish

Steps:

  • THAW 1 (14 ounce) bag Bird's Eye Frozen petite Whole Onions; LET drain; MINCE 1/4 teaspoon fresh thyme leaves; GRATE 1/2 cup Sharp Cheddar Cheese; SET aside.
  • MELT 2 tablespoons butter in a 1-2 quart saucepan over medium heat; ADD drained onions; RAISE heat to medium-high; STIR onions constantly as they cook, until they begin to caramelize.
  • SPRINKLE 2 tablespoons flour over onions; STIR for for 1 minute.
  • DEGLAZE onions with 1/3 cup dry white wine; ADD the minced thyme; STIR, scraping the bottom, until wine evaporates.
  • REDUCE heat to medium-low.
  • ADD 1/3 cup cream or half and half; STIR until sauce is warmed and thickened.
  • SEASON sauce with 1/4 teaspoon dry mustard (or prepared horseradish), 1 pinch freshly grated nutmeg, 1 pinch ground white pepper, and kosher salt, to taste.
  • REMOVE from heat; ADD the grated cheese; STIR until cheese is completely melted.
  • GARNISH with thinly snipped chives and SERVE.
  • GET READY to melt into your seat after just one taste!

4 cups water
6 tablespoons butter
6 tablespoons all-purpose flour
3 cups milk
1 pinch salt to taste
1 pinch ground black pepper to taste

Steps:

  • Peel onions, and drop into boiling water. Cook until tender. Drain, reserving liquid. Set onions aside while you make the sauce.
  • Melt butter or margarine in a saucepan over medium heat. Whisk in flour to make a paste. Mix together cooking water and milk. Add milk mixture slowly to the saucepan, stirring constantly, and cook until thickened. Add salt and pepper to taste. Add onions, and transfer to a serving dish.

I often fix this comforting dish for my grown children when they visit. They love it when I double the recipe so they can take leftovers home! This recipe can be prepared a day ahead and refrigerated before baking.

5 medium onions, sliced and separated into rings
3 tablespoons butter
3/4 cup water
1/8 teaspoon ground allspice
2 tablespoons all-purpose flour
1 can (5 ounces) evaporated milk
1 teaspoon sugar
1/2 teaspoon salt
2 tablespoons grated Parmesan cheese
2 tablespoons dry bread crumbs

Steps:

  • In a large skillet, saute onions in butter for 5 minutes. Add water and allspice; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender., Combine flour and evaporated milk until smooth; gradually stir into the onion mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in sugar and salt., Transfer to a greased 1-qt. baking dish; sprinkle with cheese and bread crumbs. Bake, uncovered, at 350° for 30-35 minutes or until bubbly.
