SHRIMP NACHOS
This is my most requested recipe to bring to get-togethers and there's always someone who hasn't had them who asks for the recipe. You can make it days ahead of time and have it out of the oven in just a few minutes when you need it. Add more chipotle peppers if you like it spicier. This recipe makes a lot, but it actually freezes well. I usually freeze half of it and have it another time. If you're making it for a party, though, bring it all because it will be gone!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Spread tortilla chips onto the prepared baking sheet.
- Mix Monterey Jack cheese, shrimp, mayonnaise, chipotle peppers in adobo sauce, cilantro, minced onion, cumin, and black pepper together in a bowl. Spoon mixture onto the tortilla chips.
- Bake in the preheated oven for 3 minutes. Turn on the broiler and broil nachos until lightly browned, 3 to 4 minutes. Allow nachos to sit at room temperature for about 2 minutes before serving.

NANA'S BEEF STROGANOFF
This is a delicious Stroganoff that my Nana made all the time. My husband's favorite meal is Stroganoff, and before we met he never had homemade Stroganoff sauce. Once my mom made this for him, he has never eaten any other! Serve over rice or egg noodles.

Steps:
- Shake 1 tablespoon flour with salt in a large, resealable plastic bag until combined; add beef and shake to coat.
- Melt 2 tablespoons butter in a skillet over medium-high heat. Brown beef in the hot butter, about 3 minutes per side. Stir mushrooms, onion, and garlic into beef; cook and stir until garlic is fragrant, 3 to 4 minutes. Transfer beef and vegetables to a bowl, leaving drippings in skillet.
- Melt 2 more tablespoons butter in skillet over medium heat. Cook and stir 3 tablespoons flour in the hot butter until smooth; stir tomato paste into flour mixture. Whisk beef stock into mixture and cook, stirring constantly, until sauce is thickened and bubbling, about 5 minutes.
- Return beef and vegetables to skillet and stir to coat with sauce. Reduce heat to very low and simmer until beef is tender, 2 to 3 hours. The longer it cooks, the more tender the meat will be. Just before serving, stir sour cream and white wine into beef mixture and heat through. Do not boil.

Steps:
- Melt butter over low heat in the oven in a baking dish.
- Add butter, Worcestershire, sherry, garlic, lemon juice, dill and mix together in dish.
- Arrange shrimp in a single layer in the sauce.
- Broil for 5 minutes.
- Remove and let stand 15 minutes.
- Broil on high 3 minutes more.

- In a large skillet, melt butter over medium-high heat until frothy. Whisk in the flour until it becomes a smooth, paste-like consistency. Turn the heat down, and constantly whisking, add in the half and half and whisk until bubbly.
- Stir in the ketchup, Worcestershire, lemon juice, black pepper, red pepper flakes, and bay leaves, whisking until smooth. Remove bay leaves.
- Turn the heat up slightly. Add in the shrimp and 1/4 cup water, making sure to completely coat the shrimp in the sauce. Cook for 5 minutes. If needed, season more with salt and pepper. Feel free to add more red pepper flakes if desired. Serve immediately over rice.

- Heat oil in a large skillet on medium heat.
- Add shrimp and saute until pink.
- Remove shrimp and add green pepper, onion, garlic, and chili powder; saute 5 minutes.
- Add undrained tomatoes and stir in mushrooms. vermouth, and hot pepper sauce.
- Bring to a boil and reduce heat; simmer, stirring occasionally, 15 minutes.
- Stir in shrimp, cilantro and lime juice and serve over rice.

- Melt butter in large saucepan.
- Add flour and mix.
- Add milk and stir until thick cream sauce is made.
- Add Worcestershire sauce, ketchup, bay leaf, red pepper and lemon juice.
- Add salt and pepper.
- Add shrimp and allow to get very hot (I assume this means to cook until the shrimp are pink and the sauce is hot).
- Serve over white rice.

NANA'S SHRIMP DIP
Steps:
- 1. Bring shrimp to a boil and cut into chunks.
- 2. Melt cream cheese and tomato soup in saucepan over low heat, stirring occasionally.
- 3. Remove soup mixture from heat; add mayonnaise, celery, onion, and shrimp.
- 4. Dissolve gelatin in 2 Tbsp. cold water then add to dip and mix well.
- 5. Refrigerate 6 hours or until firm. Serve with crackers.

GIADA'S - NONNA LUNA'S RICE AND SHRIMP DISH RECIPE - (3/5)

- Place the garlic clove in the pot. Add 1/2 stick butter and melt over low heat. Stir garlic clove with wooden spoon, to infuse butter with garlic. Add salt. When butter is all melted, scoop garlic out and place it in the other pan (for shrimp). Place the 2 cups rice into the butter and mix well. Turn heat up to medium high. Stir rice to point of browning, do not let it pop. Add chicken stock to pot, place on medium heat and cover. DO NOT REMOVE LID UNTIL COOKED - Use a See-Through lid. Melt the other 1/2 stick butter with the garlic clove, the same way as before. When melted, remove garlic, and add shrimp. When close to fully pink, squeeze juice of 2 lemons into pot. Add tbsp of hot sauce. Add 3-4 pinches of salt. Let shrimp fully cook with lemon and hot sauce, 3-5 minutes. Add 8 oz cream or a little more to ensure mix with juice. Serve the shrimp over the rice.
NANA'S SAUSAGE DINNER
My great grandmother frequently served this super quick and simple dish. I often omit the onions for my family and use vegetarian sausage links for my portion.

- Set a deep skillet over medium heat and coat with cooking spray. Add sausages and cook until browned. Remove from the pan and set aside. Add the onion to the skillet; cook and stir until tender.
