MY NANA'S LACE COOKIES

My Nana's Lace Cookies image

These are delicate lace cookies with an amazing taste! A tradition in our family for Christmas since I was a little girl. These cookies spread to make a very thin wafer, almost transparent. Super easy to make, but be careful, as they can be quick to burn or cool too much on your cookie sheet - and then you'll be chipping the cookies off of your cookie sheet! I hope you enjoy these as much as my family does. Store in an airtight container until serving.

Time 25m

Yield 96

Number Of Ingredients 7

2 ¼ cups old-fashioned oats
2 ¼ cups packed light brown sugar
3 tablespoons all-purpose flour
1 teaspoon salt
1 cup unsalted butter, melted

1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.

NANA'S SOFT GINGERSNAP COOKIES

Nana's Soft Gingersnap Cookies image

Not remotely like the grocery store boxed version! I made the mistake of assuming this and missed out, until now! This is my Nana's recipe. A few tips to get the best results: coarsely chop the crystallized ginger, don't cut tiny pieces. I don't know why, that just what she said to do. Also, make sure you make only 1" balls, don't make them bigger unless you give them more space to spread. Otherwise they'll overlap edges and not be perfectly round ('course they will still taste great!). Final tip - don't overcook - yank them out as soon as the 8 minutes are up. With my oven, I have to keep the cooking time to 8 minutes even though the recipe says 8-10min. You may have to play with the time, but even < minute will make a difference. If you do it right, they will harden but still have a soft center.

MY NANA'S ANISEED COOKIES

My Nana's Aniseed Cookies image

My Grandmother used to make these cookies every Christmas. They were hard, seedy, strange looking, and tasted like Heaven. They need to be made when the weather is cool and the humidity is low.

NANA'S BUTTER COOKIES WITH MILK-JAM FILLING

Nana's Butter Cookies with Milk-Jam Filling image

The caramelized milk jam makes for a decadent little sandwich, but these cookies are amazingly good simply eaten on their own.

Provided by Kristen Murray

Number Of Ingredients 12

1 1/2 cups (3 sticks) unsalted butter, room temperature
2/3 cup powdered sugar
2 teaspoons vanilla extract
2 tablespoons whole milk
2 teaspoons kosher salt
2 1/2 cups all-purpose flour
1 large egg
1 quart goat's milk or cow's milk
1 1/4 cups granulated sugar
3/4 teaspoon baking soda
1/2 vanilla bean, halved lengthwise
Powdered sugar (optional; for serving)

Steps:

  • Using an electric mixer on high speed, beat butter, powdered sugar, and vanilla in a medium bowl until light and fluffy, about 4 minutes. Reduce speed to low; add milk, salt, and 2 1/2 cups flour and mix just to combine. Form dough into a 1/2"-thick disk and wrap in plastic. Chill until firm, at least 1 hour.
  • Let dough sit at room temperature to soften slightly, about 5 minutes. Roll dough out between 2 sheets of parchment paper until about 1/8" thick. Cut out rounds with a floured 2 1/2"-diameter cookie cutter. Cut out a circle in half of the rounds with a 3/4"-diameter cookie cutter and transfer to 2 parchment-lined baking sheets, spacing 1" apart.
  • Whisk egg and 1 teaspoon water in a small bowl and brush tops of cookies with egg wash. Bake cookies, rotating halfway through, until golden brown, 12&endash;15 minutes. Transfer baking sheets to wire racks and let cookies cool.
  • Combine milk, sugar, and baking soda in a large saucepan; scrape in vanilla seeds and add pod. Bring just to a boil over medium heat, stirring to dissolve sugar. Reduce heat and simmer, whisking occasionally, until mixture is reduced to about 1 1/4 cups (it will darken and separate, with little bits visible), 80&endash;90 minutes. Strain milk jam through a fine mesh sieve into a medium bowl and let cool.
  • Spoon a small amount of milk jam onto flat side of a cookie without a hole and sandwich with a cookie with a hole. Repeat with remaining cookies and filling. Dust with powdered sugar, if desired.
