1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup milk
1 egg, lightly beaten
1/2 teaspoon pure vanilla extract
3 tablespoons unsalted butter, melted

WALNUT FOOTBALL COOKIES

Walnut Football Cookies image

Provided by Giada De Laurentiis

Categories     dessert

Time 3h45m

Yield about 16 cookies, depending on the size of your cutter

Number Of Ingredients 12

2 1/4 cups all-purpose flour, plus more for dusting
1 cup ground walnuts
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon kosher salt
1 cup (2 sticks) unsalted butter, at room temperature
1/2 cup light brown sugar
1 teaspoon pure vanilla extract
1 large egg
1 cup confectioners' sugar
1 tablespoon plus 2 teaspoons orange liqueur, such as Grand Marnier
1/2 teaspoon orange zest (from 1/2 orange)

Steps:

  • In a medium bowl, whisk together the flour, walnuts, cinnamon, allspice and salt. Set aside.
  • Using a hand mixer, beat the butter and brown sugar together in a large bowl on medium- high speed, scrapping down the sides with a rubber spatula as needed, until light and fluffy, about 3 minutes. Add the vanilla extract and egg and beat an additional minute.
  • Reduce the speed to low and add the flour in 3 batches, beating until the flour is just combined. Place the dough on a large piece of plastic wrap and pat it into a round disk. Refrigerate the dough for at least 2 hours and up to overnight.
  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Dust the counter and dough with flour and roll the chilled dough to 1/4 inch thick. Using a football-shaped cookie cutter, cut the dough into footballs and place on the prepared baking sheet, leaving about 1 inch between each cookie. Bake until firm to the touch and starting to get a whisper of golden brown around the edges, about 20 minutes. Allow the cookies to cool for 5 minutes on the baking sheet and then remove to a wire rack to cool completely.
  • Meanwhile, in a medium bowl, whisk together the confectioners' sugar, orange liqueur and orange zest. Spoon the mixture into a piping bag fitted with a narrow, round tip. When the cookies are completely cool, pipe lacing on the footballs. Allow them to set up completely before serving. Store in an airtight container to prevent drying out.

Peanut Butter Cookies image

Provided by Nancy Fuller

Categories     dessert

Time 1h5m

Yield 24 cookies

Number Of Ingredients 11

1 cup creamy peanut butter
3/4 cup unsalted butter, at room temperature
1/4 cup vegetable shortening
1 3/4 cups packed light brown sugar
2 large eggs, at room temperature
1 tablespoon pure vanilla extract
2 3/4 cups all-purpose flour
1 1/4 teaspoons baking soda
Kosher salt
1 cup peanut butter chips
Granulated sugar, for sprinkling

Steps:

  • Line 3 rimmed sheet trays with parchment paper.
  • Add the peanut butter, butter and shortening to the bowl of a standing mixer fitted with a paddle attachment, and beat together. Add the brown sugar, and cream until light and fluffy, about 6 minutes. Add the eggs, one at a time, beating well in between each addition. Beat in the vanilla and combine until mixed.
  • Whisk the flour, baking soda and 3/4 teaspoon salt together in a medium bowl. Add the flour in 3 additions to the peanut butter mixture, beating until just combined. Stir in the peanut butter chips.
  • Use a 1/2-cup ice cream scoop and scoop the cookie batter onto one of the prepared sheet trays. Gently press down the tops of the cookies with a fork making a criss-cross. Sprinkle each cookie with a small pinch of salt and sugar. Place in the refrigerator to firm up, at least 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Place 6 firmed cookies on each prepared sheet tray, leaving at least 4 inches of space between the cookies. Bake in batches until golden, 18 minutes, rotating the pans halfway through baking.

Categories     Desserts     Nut Dessert Recipes     Walnut Dessert Recipes

Yield 18

Number Of Ingredients 4

2 egg whites
1 cup white sugar
1 ½ cups ground walnuts
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F ( 175 degrees C ). Line baking sheets with parchment paper.
  • In a small bowl mix together the egg whites, sugar, and nuts until well blended. Drop dough by teaspoonfuls, three inches apart, onto the lined cookie sheets. Using the back of a spoon, dipped in water, flatten into rounds about 1.5 inches in diameter. Bake for 8 to 10 minutes in the preheated oven. Cookies should be lightly browned. Let cool slightly before removing from sheets. If the cookies are stuck, they need to be baked a little longer.
  • In a plastic bowl, melt the chocolate in the microwave oven, stirring every 15 or 30 seconds until smooth and creamy. This can also be done over a double boiler. Spread the chocolate onto the flat side of a cookie and stick it together with the flat side of another cookie to make a sandwich until all the cookies are used up.

Yield Makes 36 cookies

Number Of Ingredients 8

1 stick (1/2 cup), unsalted butter, softened, plus 1 tablespoon, melted and cooled
3 ounces cream cheese, softened
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 large egg
3/4 cup firmly packed brown sugar
1/4 teaspoon vanilla
1/2 cup walnuts, chopped fine

Form the dough into a disk and chill it, wrapped in plastic wrap, for 30 minutes. Press rounded teaspoons of the dough into thirty-six 1/8-cup muffin tins and work the dough evenly onto the bottoms and up the sides of the tins to form 1/8-inch-shells.
  • Preheat the oven to 375°F. In a bowl whisk together the egg, the brown sugar, the melted butter, and the vanilla until the mixture is combined well. Divide the filling among the shells, sprinkle it with the walnuts, and bake the walnut cups in the middle of the oven for 15 to 20 minutes, or until the crusts are golden. Let the cookies cool in the tins on racks for 10 minutes, remove them from the tins carefully, and let them cool completely on the racks.
