BAKED GREEN BEAN FRIES
Steps:
- Preheat the oven to 425 degrees F.
- Spray a large baking pan with cooking spray.
- Mix the panko, Parmesan, onion powder, cayenne and 1/2 teaspoon salt together in a wide, shallow bowl. Whisk the eggs and milk together in another shallow bowl.
- Toss the green beans in the flour. Working a few green beans at a time, shake off the excess flour and dip in the egg. Let the excess egg drip off and then toss in the panko, patting firmly so the crumbs adhere. Arrange the breaded green beans in a single layer in the prepared baking pan and spray thoroughly with cooking spray.
- Bake until golden brown and crisp-tender, about 10 minutes.

- Preheat oven to 400 degrees F (200 degrees C).
- Pat green beans dry with paper towels if necessary; spread onto a jellyroll pan. Drizzle with olive oil and sprinkle with salt and pepper. Use your fingers to coat beans evenly with olive oil and spread them out so they don't overlap.
- Roast in the preheated oven until beans are slightly shriveled and have brown spots, 20 to 25 minutes.

- Drain green beans and put into baking dish. Melt butter and stir in minced garlic and brown sugar until mixed well. Pour over beans. Stir in raw diced bacon. Bake @ 400 degrees for about 20 minutes. Stir and bake another 10-15 minutes until bacon is cooked.

- Place the bacon in a large cast-iron skillet over medium heat and cook until crisp, 8 to 10 minutes. Remove the bacon and all but 2 to 3 tablespoons of the bacon grease.
- Add the onion and jalapeño and cook for a minute or two, then add the green beans. Cook until the green beans are bright green, an additional minute. Add the chicken stock, garlic powder and a good pinch of both salt and pepper. Bring to a simmer and lightly cover, allowing the some of the steam to escape. Cook until the liquid is evaporated and the beans are starting to soften, but still have a bite, 10 to 12 minutes.
- Transfer the beans to a serving vessel. Crumble the bacon and sprinkle it over the top of the beans, along with the fried onions.

- Preheat the oven to 375 degrees F (190 degrees C).
- Toss beans with olive oil in a medium mixing bowl until well coated. Spread beans out on a rimmed baking sheet, or in a roasting pan. Sprinkle lightly with salt and pepper.
- Roast in the preheated oven until beans look shriveled and browned, about 20 minutes.
- Remove beans from the oven, gather into a pile, and squeeze lemon juice over the top. Toss and serve.

- Add the green beans and toss well.
- Add the bacon, onion, garlic and toss well.

NATALIA'S BAKED GREEN BEANS
This is my "go-to" green beans that I've been serving my family for many years. It's one of my daughters favorites. It's always present when I make a roasted chicken or ham and I serve it at almost every Christmas dinner party I throw.

Steps:
- Preheat oven to 350 degrees F.
- Wash green beans throughout and drain. Snip stem edge of each green bean and place in a 7 x 14" casserole dish (such as pyrex).
- In a small saucepan, add water, beef bouillons, adobo seasoning, garlic powder and black pepper.
- Let come to a rapid boil until bouillons are fully dissolved. Mix to distribute all seasonings.
- Pour seasoned water evenly over beans. Dot with bacon fat.
- Cover tightly with aluminum foil being careful not to leave any gaps so that steam can't escape.
- Place in oven and bake for 45 minutes or until tender.
- To serve, remove hot beans from pyrex with tongs. (The seasoned water isn't meant to serve with the beans).
- NOTE # 1: The seasoned water is meant to be on the salty side, therefore taste the water. It should be salty like water from the sea. I've made this recipe so many times and don't measure the salt, therefore I don't have an exact amount so please use your best judgement. Once they are cooked with the beans the beans won't absorb the full amount of salt and they won't be as salty as you think.
- NOTE # 2: The Knorr brand bouillons are larger (double the size) than most other bouillon brands. Therefore, you may need to increase the amount of bouillons if using the smaller version. On a personal level, I find that the Knorr brand boosts the flavor of dishes better than most other brands.
