NAVNEET'S PUNJABI ONION RICE
My husband loves this rice. This is an "emergency rice" that is pretty quick to fold together if you have leftover cooked rice on hand. I made this for dinner tonight for my dad and hubby. Both loved it. Please have this with dahi (home-made curd/yoghurt) for enjoying it best. Serve pappadams (papads) with this for a nice snack. Enjoy!

Steps:
- Heat oil in a wok.
- Once it is hot, add black mustard seeds (rai).
- Allow to splutter.
- Then fold in the finely chopped green chillies, garlic and sliced onions.
- Mix well and stir fry until the garlic is golden brown and the onions turn translucent.
- Add half a cup of water and stir well.
- Cover and allow to cook ensuring the onions are browned. Uncover after 5 minutes, add half a cup more of water (you may add little more water depending on how much brown you would like the onions).
- Fold in salt and black pepper powder.
- Add the cooked rice and mix well.
- Stir in the squeezed juice of one lemon and mix well.
- Garnish with finely chopped corriander leaves and serve hot with yoghurt and papads.
- Enjoy!

SHER-A-PUNJAB ONION CHUTNEY
I begged for this recipe at my favorite Indian restaurant. It is quite unlike any other onion chutney recipe that I've tried. It is surprisingly simple and full of taste. The ketchup and vinegar produce an orange hue and preserve the crunch of the onion. Serve as a garnish with toast. Try it!

EASY BUTTERED ONION RICE
Easy Buttered Onion Rice is my version of a recipe that I first saw in a local cookbook while living in the Pascagoula-Gautier area of the Missiissippi Gulf Coast in the '70s! Using butter was considered bad then, but today we consider it better than the old substitutions. Easy dish and enjoyed by all.

CARAMELIZED ONION RICE
I made some very simple chicken kabobs and had some onion bits and pieces left over, so I decided to make some rice to go along side it. This is all stuff I had on hand (I just got back from World Market which is why I had the garlic and basil oil on hand) and this is definitely a one off from plain white rice. And I promise it's not too oily! Enjoy!

Steps:
- Heat extra virgin olive oil in a pot on medium/high heat. Add diced onions and stir. Cover and let them cook for 1-2 minutes, stir, and cover and let them cook for another 1-2 minutes, just until they turn brown.
- Add rice, garlic oil, basil oil, and salt and pepper and stir until well combined.
- Add chicken broth, stir, bring to a boil (should be fairly quick), cover, turn down to low and let simmer for 15 minutes.
- Turn burner off and let rest for 5-10 minutes without taking the lid off. When done, stir/fluff and serve.

CARAMELIZED ONION RICE
I wanted a rice recipe that was easy and relatively quick to make brown rice more tasty. This is what I came up with. :-) I've used long-grain brown rice and brown basmati rice for this, but you could also use white rice. Great for any meal you would use rice in.

- Melt butter in skillet and sauté onions until softened and lightly browned. Add garlic, sauté 1 minute.
- Add brown sugar and sauté until caramelized-looking, 3-4 minutes.
- Mix rice, broth and onion mixture and cook in rice cooker.
- Note: I like my rice slightly crunchy and not soggy so if you like yours softer add 1/4- 1/2 cup of extra broth.

This is a savory Indian style rice dish flavored with whole spices and fried onions. Soaking the basmati rice before cooking makes all the difference. Serve with your favorite Indian curry or dal (lentils). Make sure you warn people not to bite into the whole spices!

- Place rice into a bowl with enough water to cover. Set aside to soak for 20 minutes.
- Heat the oil in a large pot or saucepan over medium heat. Add the cinnamon stick, cardamom pods, cloves, and cumin seed. Cook and stir for about a minute, then add the onion to the pot. Saute the onion until a rich golden brown, about 10 minutes. Drain the water from the rice, and stir into the pot. Cook and stir the rice for a few minutes, until lightly toasted. Add salt and water to the pot, and bring to a boil. Cover, and reduce heat to low. Simmer for about 15 minutes, or until all of the water has been absorbed. Let stand for 5 minutes, then fluff with a fork before serving.
