An easy mix-and-bake recipe my grandmother used to make every Christmas! This yummy recipe, containing cream cheese and almond extract, makes moist, flavorful snowballs that are a different twist on your traditional snowball cookie!

1 cup confectioners' sugar
½ cup finely-chopped walnuts
½ cup vegetable shortening (such as Crisco®)
½ cup butter, softened
½ cup cream cheese, softened
½ cup white sugar
½ teaspoon almond extract
½ teaspoon vanilla extract
1 ½ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Sift the confectioners' sugar into a shallow bowl, stir in the walnuts, and set aside.
  • Beat the shortening, butter, cream cheese, and sugar together in a bowl until the mixture is creamy and thoroughly blended. Mix in the almond extract, vanilla extract, and flour; stir to combine. Scoop up dough by rounded tablespoons, and roll into balls about 1 inch in diameter. Place the balls about 1 1/2 inches apart on ungreased baking sheets.
  • Bake in the preheated oven until the cookies turn slightly golden at the edges, about 6 minutes. Let the cookies cool on the baking sheets for about 1 minute, then roll in the confectioners' sugar-walnut mixture while still a little warm.

Miniature semisweet chocolate chips, and green and red M&M's minis
FROSTING:
1 cup confectioners' sugar
1/8 teaspoon coconut extract

Miniature milk chocolate kisses, unwrapped

Steps:

  • In a large bowl, cream butter, cream cheese and sugar until light and fluffy. Beat in egg and extracts. In another bowl, whisk flour and baking powder; gradually beat into creamed mixture. Refrigerate, covered, overnight., Preheat oven to 325°. Shape dough into forty-eight 1-in. balls, forty-eight 3/4-in. balls and forty-eight 1/2-in. balls. On ungreased baking sheets, place one ball of each size, side by side, for each snowman., Bake 18-20 minutes or until light brown. Remove from oven; cool on pans 2 minutes. Press on chocolate chips for eyes and M&M's for buttons. 1 cup powdered sugar
3/4 cup (1-1/2 sticks) butter or margarine
1/2 tsp. vanilla
2 cups flour
1/2 tsp. baking soda
suggested decorations, such as decorating gels, colored sprinkles, nonpareils and miniature peanut butter cups (optional)

Steps:

  • Preheat oven to 325°F. Beat cream cheese, sugar, butter and vanilla with electric mixer on medium speed until well blended. Add flour and baking soda; mix well.
  • Shape dough into equal number of 1/2-inch and 1-inch diameter balls. (You should have about 44 of each size ball.) Using 1 small and 1 large ball for each snowman, place balls, slightly overlapping, on ungreased baking sheet. Flatten to 1/4-inch thickness with bottom of glass dipped in additional flour. Repeat with remaining dough.
  • Bake 19 to 21 minutes or until lightly browned. Cool on wire rack. Sprinkle each snowman with sifted powdered sugar, if desired.

36 chocolate sandwich cookies
5 tablespoons butter, melted
3 cups cream cheese
⅓ cup sugar
1 tablespoon vanilla extract
1 cup milk, warm
1 tablespoon gelatin

Steps:

  • Separate the cream from the cookies into 2 different bowls.
  • Place the cookies into a plastic bag and crush them into fine crumbs with a rolling pin. Set aside ½ cup (50g) of the crumbs for later.
  • Pour the cookie crumbs into a bowl and combine with the melted butter, mixing until the texture is like slightly wet sand.
  • Press the cookie crumbs in an even layer into the bottom of a 9-inch (23 cm) springform pan. Set aside.
  • In a medium pot over low heat, mix together the cream cheese, sugar, the cream from the cookies, and vanilla extract, stirring until there are no lumps.
  • In a measuring cup, mix the milk with the gelatin until dissolved.
  • Pour the milk into the cream cheese mixture, stirring constantly until the mixture starts to bubble slightly. Remove from heat.
  • Pour the mixture over the cookie crust in the springform pan. Using a spatula or a spoon, smooth the top.
  • Sift the saved cookie crumbs on top of the cheesecake in an even layer, then refrigerate for at least 4 hours.
  • Unclasp the ring of the springform pan, slice, then serve!
