1 2/3 cups all-purpose flour, plus more for dusting
1/2 cup or 1 stick unsalted butter, chilled, coarsely chopped
Pinch salt
1 egg, chilled
1 tablespoon ice water, plus more if needed
1/3 cup maple syrup
1 egg
1 1/2 cups brown sugar
1/2 cup whipping cream
1 cup pecans
Serving suggestion: Ice cream of whipped cream, for serving

Steps:

  • Pastry: In a food processor, combine the flour, butter and a pinch of salt, and pulse until the mixture resembles big breadcrumbs. Whisk the egg and 1 tablespoon ice water in a bowl until combined. With food processor motor running, add the wet mixture to the flour mixture. Process until mixture begins to form large clumps, stopping the machine before the mixture forms a ball. If it needs a bit more water, add it. You want the dough to just barely hang together, and not be too wet.
  • Turn the pastry out onto a work surface, and knead very gently to bring the dough together. Form the dough into a disk shape, wrap in plastic wrap, and refrigerate for at least 1 hour. Two is even better.
  • Preheat oven to 350 degrees F.
  • Using a light dusting of flour on your board and rolling pin, roll out the dough to the desired thickness. Lay the dough into the pie plate, and prick with a fork all over, trim and decorate the edge of the pie as you wish.
  • Filling: In a large bowl, combine the maple syrup, egg, sugar, and cream, and stir well to mix. Transfer the filling mixture to the pastry-lined pie dish. Top with the pecan nuts, and bake for about 35 minutes, or until set. Let cool before serving.
  • Serve the pie with vanilla ice cream or whipped cream.

6 tablespoons melted butter
1 1/2 cups graham cracker crumbs
1/4 cup brown sugar
2 eggs, beaten
1/2 cup corn syrup
1/2 cup maple syrup
1/4 cup sugar
2 tablespoons all-purpose flour
2 tablespoons vanilla extract
1 1/2 cups pecan pieces
Vanilla ice cream

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the butter, graham crumbs, and brown sugar in a large bowl. Press the mixture into a 9-inch pie dish, forming a shell, and bake until firm, about 10 to 12 minutes. Remove the pie dish from the oven and allow it to cool slightly.
  • In a large bowl combine the eggs, corn syrup, maple syrup, sugar, flour, and vanilla. Mix until well incorporated. Add the pecans and mix until all the ingredients are evenly distributed. Pour the mixture into the graham cracker crust. Bake until the filling sets, about 40 to 45 minutes. Remove the pie from the oven and cool completely before cutting. Slice into portions and serve with a scoop of vanilla ice cream.

CRUST
6 Tbsp cold unsalted butter
1 1/2 c all-purpose flour
1/2 tsp kosher salt
1/2 Tbsp sugar
3 Tbsp cold vegetable shortening
6 Tbsp ice water
FILLING
4 Cortland apples
4 Mutsu apples
1 c sugar
1/2 c all-purpose flour
1 tsp kosher salt
1 tsp ground cinnamon
1 Tbsp butter
1 vanilla bean, scraped
CRUMB TOPPING
1 c all-purpose flour
1 c natural cane sugar
1/4 tsp kosher salt
1 stick butter, softened
1/4 c chopped pecans
1/2 c whipping cream
MAPLE SYRUP DRIZZLE
1/2 c maple syrup
MAPLE WHIPPED CREAM
1/2 c whipping cream
2 Tbsp maple syrup

Steps:

  • 1. For the crust: Dice butter and return it to the refrigerator while you prepare flour mixture.
  • 2. Place flour, salt, and sugar in the bowl of a food processor fitted with a steel blade and pulse a few times to mix. Add the butter and shortening. Pulse 8-12 times until the butter is the size of peas.
  • 3. With the machine running, pour the ice water in through the processor feed and pulse the machine until the dough begins to form a ball.
  • 4. Wrap in plastic wrap and refrigerate 30 minutes.
  • 5. Roll the dough on a well-floured board into a circle, rolling from center to edge, turning and flouring the dough to make sure it doesn't stick to the board.
  • 6. Then, fold dough in half, place in the pie pan, and unfold to fit the pan.
  • 7. Filling: Preheat oven to 375° Fahrenheit.
  • 8. Peel, core, and slice apples very thin.
  • 9. In a small bowl, mix together the sugar, flour, vanilla bean, salt, and cinnamon.
  • 10. Place one layer of apples in the pie crust and sprinkle with 2 tsp of the sugar mixture. Repeat the process until all the sugar has been added.
  • 11. Crumb Topping: Mix together all crumb topping ingredients with a fork until crumbly.
  • 12. Cover filling with crumb topping.
  • 13. Bake in the preheated oven at 375° for 30 minutes.
  • 14. Turn pie in oven and cover edges with aluminum foil and continue to bake an additional 30 minutes.
  • 15. Bring 1/2 cup pure NH Maple syrup to a boil; continue to cook until a candy thermometer inserted into it indicates "soft ball" temperature, about 235°-240°F.
  • 16. Drizzle maple over pie.
  • 17. Whipped topping: In a mixing bowl, beat whipping cream and 2 tbsp maple syrup until firm peaks form.
  • 18. Cool pie. Decorate inside edge of pie and peak of pie with maple whipped cream and additional pecan halves.

2/3 cup water
1-1/2 cups real maple syrup
2 tablespoons butter
Pastry for double-crust pie

Steps:

  • Preheat oven to 400°. In a large saucepan, whisk cornstarch and water until smooth; whisk in syrup. Bring to boil; cook and stir until thickened, about 4 minutes. Remove from heat; stir in butter until melted. Set aside to cool., On a lightly floured surface, roll dough for bottom crust to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Chill 30 minutes. Meanwhile, roll remaining dough to 1/4-in.-thickness; cut out maple leaves with 1-1/2 to 2-1/2- inch cookie cutters. 3 eggs
1 ½ cups pecan halves
1 cup real maple syrup
¼ cup butter
1 cup heavy whipping cream
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
½ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread the nuts evenly over pie shell.
  • Mix together butter or margarine, vanilla, and flour. Beat the eggs well, and blend into the flour mixture. Add salt, maple syrup, and cream. Pour filling over the nuts in the pie shell. Make sure the nuts are covered, so they will not burn.
  • Bake for 50 to 60 minutes, or until knife inserted in center come out clean. Let cool at least 15 minutes before serving.

Unbleached all-purpose flour, for dusting
3/4 cup unbleached all-purpose flour
3/4 cup pecans, chopped
1/3 cup packed light-brown sugar
1/2 teaspoon kosher salt
6 tablespoons cold unsalted butter, cut into cubes
2 3/4 pounds Granny Smith apples (5 to 6), peeled, cored, and cut into 1/2-inch-thick wedges
3/4 cup pecans, chopped
1/4 cup unbleached all-purpose flour
3/4 cup granulated sugar
1/2 teaspoon kosher salt
2 tablespoons fresh lemon juice
1 teaspoon pure vanilla extract

Steps:

  • Roll out dough to a 12-inch round on a lightly floured work surface. Transfer to a 9-inch pie plate. Trim edges, leaving a 1/2-inch overhang. Fold edges of dough under itself until flush with edge of dish. Crimp edges with fingers, the tines of a fork, or a spoon. Refrigerate until firm, about 30 minutes. Meanwhile, make crumb topping.
  • Crumb Topping: Combine flour, pecans, brown sugar, and salt in a medium bowl. Massage butter into flour mixture with your fingers until mixture clumps together and no dry flour remains. Press into bottom of bowl and refrigerate until firm, about 20 minutes.
  • Filling: In a large bowl, toss apples and pecans with flour, sugar, cinnamon, and salt until evenly coated. Stir together lemon juice and vanilla, drizzle over apple mixture, and toss to evenly coat.
  • Preheat oven to 375 degrees with racks in middle and lower third positions. Place a parchment-lined rimmed baking sheet on lower rack. Pour apple mixture into crust. Break up topping into large pieces and sprinkle evenly over filling. Bake on center rack until bubbly and crust is golden brown, 1 1/4 to 1 1/2 hours. (If crust and crumb topping brown too quickly, tent with foil.) Let cool completely on a wire rack before slicing and serving.
