3 tablespoons butter, melted
1 loaf (1 pound) French bread, cut into 20 slices
3-1/2 cups sliced peeled fresh or frozen peaches
1/2 cup fresh or frozen blueberries
6 eggs
2-1/2 cups 2% milk
3/4 cup packed brown sugar
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/8 teaspoon salt
CARAMEL:
1/2 cup packed brown sugar
1/2 cup butter, cubed
3 tablespoons corn syrup
3 tablespoons heavy whipping cream

Steps:

  • Pour butter into a greased 13x9-in. baking dish. Top with half of the bread slices. Layer with 2-1/2 cups peaches, 1/4 cup blueberries and remaining bread., In a large bowl, whisk the eggs, milk, brown sugar, vanilla, nutmeg and salt; pour over bread. Arrange the remaining peaches and blueberries over top; cover and refrigerate for 2 hours or overnight., Remove from the refrigerator 30 minutes before baking. Place brown sugar and butter in a small microwave-safe bowl. Microwave on high for 1 to 1-1/2 minutes or until sugar is dissolved, stirring once. Add corn syrup and cream; cook 1 minute longer or until bubbly, stirring once., Drizzle 1/2 cup caramel over top. Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving; drizzle with remaining caramel.

6 eggs
3 cups whole milk
3/4 cup maple syrup, plus extra for serving
2 teaspoons ground cinnamon, plus 1 tablespoon
1/4 teaspoon fine sea salt
1 lemon, zested
3 (1-inch thick) slices (8 ounces) day-old challah or sourdough bread, cut into 1-inch cubes
2 cups (12 ounces) fresh or frozen, thawed, and drained blueberries
3 tablespoons granulated sugar

Steps:

  • Place an oven rack in the middle of the oven. Preheat the oven to 350 degrees F. Butter a 9 by 13-inch baking dish. Set aside.
  • In a large bowl, beat the eggs until frothy. Add the milk, maple syrup, cinnamon, salt, and lemon zest. Add the bread cubes and mix until coated. Stir in the blueberries. Pour the mixture into the prepared baking dish.

1 (1 pound) loaf Italian bread, cut into 1-inch cubes
1 (8 ounce) package cream cheese, diced
1 cup blueberries
12 eggs
2 cups milk
⅓ cup maple syrup
1 cup white sugar
2 tablespoons cornstarch
1 cup water
1 cup blueberries
1 tablespoon butter

Steps:

  • Place half of the bread cubes in a lightly greased 9x13 inch baking pan. Sprinkle cream cheese on top of bread cubes. Top with 1 cup blueberries and remaining bread. In a large bowl, beat together eggs, milk and maple syrup. Pour egg mixture over bread. Cover pan and refrigerate overnight.
  • The next morning, remove pan from refrigerator 30 minutes before baking. Preheat oven to 350 degrees F (175 degrees C).
  • Cover pan with aluminum foil and bake in preheated oven for 30 minutes. Uncover pan and bake for an additional 30 minutes, until golden brown and center is set.
  • To make Sauce: In a saucepan, combine sugar and cornstarch, add water. Boil over medium heat for 3 minutes, stirring constantly. Stir in blueberries and reduce heat. Simmer 8 to 10 minutes, or until the berries have burst. Stir in butter until melted. Serve the sauce over squares of french toast.

4 oz cream cheese, softened
¼ cup sugar
1 teaspoon cinnamon
4 eggs
½ cup heavy cream
14 oz french bread, 1 loaf
1 cup blueberry
maple syrup, to dip

Steps:

  • In a bowl, combine softened cream cheese, sugar, and cinnamon.
  • Add eggs and heavy cream and whisk until well combined. Set aside.
  • Preheat oven to 400˚F (200˚C).
  • Cut a rectangle along the top of the loaf of french bread and pull out the part you cut along with the soft inside of the loaf. Set the "bread boat" aside.
  • Tear apart the rectangle and soft inside of the bread that you removed into little bite-size pieces.
  • Gently, fold the bread pieces and blueberries into the egg mixture until all of the liquid is absorbed.
  • Place the "bread boat" on a baking sheet lined with parchment paper and pour in the bread and egg mixture.
  • Bake for 30-40 minutes or until the top is golden brown. If the top is browning too quickly, cover the top of the boat in foil for the remaining time.
  • Let cool before cutting into slices and serve with maple syrup.

12 slices day-old white bread, crusts removed
2 packages (8 ounces each) cream cheese
1 cup fresh or frozen blueberries

1/3 cup maple syrup or honey
SAUCE:
1 cup sugar
1 cup water
2 tablespoons cornstarch
1 cup fresh or frozen blueberries

  • Cut bread into 1-in. cubes; place half in a greased 13x9-in. baking dish. Cut cream cheese into 1-in. cubes; place over bread. 1 cup packed brown sugar
½ cup butter
2 tablespoons water
1 (29 ounce) can sliced peaches, drained
12 (3/4 inch thick) slices day-old French bread
5 eggs
1 tablespoon vanilla extract
1 pinch ground cinnamon, or to taste

Steps:

  • In a saucepan, stir together the brown sugar, butter and water. Bring to a boil, then reduce heat to low, and simmer for 10 minutes, stirring frequently.
  • Pour the brown sugar mixture into a 9x13 inch baking dish, and tilt the dish to cover the entire bottom. Place peaches in a layer over the sugar coating, then top with slices of French bread. In a medium bowl, whisk together the eggs and vanilla. Slowly pour over the bread slices to coat evenly. Sprinkle cinnamon over the top. Cover and refrigerate for 8 hours or overnight.

4 slices whole wheat bread
1/4 cup milk
4 ounces softened cream cheese
blueberries
2 large eggs
2 tablespoons margarine or 2 tablespoons butter
1 large ripe peach
1 -2 ounce Amaretto
1 pinch cinnamon
1 pinch nutmeg
confectioners' sugar
almonds, sliced and toasted (optional)

Steps:

  • Make 2 sandwiches with the bread using the softened cream cheese as filling.
  • For the batter, beat the eggs, milk, cinnamon and nutmeg together.
  • Slice the peaches and saute over medium heat in butter until slightly soft.
  • Add the blueberries and amaretto; let simmer for a minute or so.
  • Dip the sandwiches into the egg batter and cook until golden brown and crispy.
  • Transfer to a warmed plate and slice on the diagonal.

  • Butter a 13 x 9-inch baking dish. Cut twenty 1-inch slices from baguette and arrange in one layer in baking dish. In a large bowl whisk together eggs, milk, nutmeg, vanilla, and 3/4 cup brown sugar and pour evenly over bread. Chill mixture, covered, until all liquid is absorbed by bread, at least 8 hours, and up to 1 day.
  • Preheat oven to 350°F.
  • In a shallow baking pan spread pecans evenly and toast in middle of oven until fragrant, about 8 minutes. Toss pecans in pan with 1 teaspoon butter and salt.
  • Increase temperature to 400°F.
  • Sprinkle pecans and blueberries evenly over bread mixture. Cut 1/2 stick butter into pieces and in a small saucepan heat with remaining 1/4 cup brown sugar, stirring, until butter is melted. Drizzle butter mixture over bread and bake mixture 20 minutes, or until any liquid from blueberries is bubbling.
  • Make syrup while French toast is baking:
  • In a small saucepan cook blueberries and maple syrup over moderate heat until berries have burst, about 3 minutes. Pour syrup through a sieve into a heatproof pitcher, pressing on solids, and stir in lemon juice. Syrup may be made 1 day ahead and chilled, covered. Reheat syrup before serving.
  • Serve French toast with syrup.

8 eggs
8 slices bread, torn apart
blueberries
8 ounces cream cheese
cinnamon sugar
maple syrup

Steps:

  • Lightly grease 13 x 9 inch bake pan.
  • Set oven at 350 degrees.
  • Spread half the bread in bottom of bakepan.
  • Sprinkle with as many blueberries as you like, I use 1 1/2 cups.
  • Slice cream cheese over blueberry layer in 1/4 slices, may not take all 8 oz.
  • Top with remaining half of torn up bread.
  • Drizzle this layer with maple syrup to your taste.
  • At this point, the casserole can be covered and refrigerated overnight.
  • Beat eggs and pour over all, making sure to cover all.
  • Tamp all down to make sure eggs are absorbed.
  • Sprinkle liberally, to taste, with cinnamon sugar.
  • This step can be done in the morning just before baking.
  • Bake first 30 minutes covered and second half hour uncovered. 1 hour total.
  • N.B. To make smaller amount use ratio of 1 egg to 1 slice bread, then adjust the remaining ingredients.

  • Preheat oven to 350 degrees F. To make the topping, in a medium bowl, combine butter, brown sugar, oats and syrup and mix well to combine. Stir in chopped pecans. Topping will be thick. Drop topping in clumps over the top of the french toast. You can also take some topping and pat it down with your hand and lay it over the top in sections until all the topping is gone. Sprinkle with chocolate chunks, if desired. Cover with foil and bake for 40 minutes.
