APPLESAUCE CAKE
In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

Steps:
- Preheat oven to 350 degrees F.
- In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
- In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.
NITA'S APPLESAUCE AND BOURBON CAKE
A delicious cake suitable for gift giving. The cake is great fresh, but better when aged. It is best to make around Thanksgiving to be ready for Christmas. This can be made in a 9x5 inch loaf pan with the baking time adjusted to 1 hour and 40 minutes. Happy Holidays!

- Preheat oven to 275 degrees F (135 degrees C). Grease a 9 inch tube pan. Line the bottom and sides with parchment paper, then grease the paper. In a saucepan over medium heat, combine applesauce, butter and sugar. Cook over medium heat for 5 minutes, stirring occasionally. Remove from heat, stir in vanilla, and set aside to cool.
- In a large bowl, mix flour, baking soda, salt, cinnamon, nutmeg and cloves. Add chopped pecans, raisins, chopped dates and cherries. Stir until the fruit and nuts are evenly coated. Stir in the cooled applesauce mixture. Pour into prepared pan.
- Bake in the preheated oven for 2 hours, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Slowly pour bourbon on cake, letting it soak in. To speed up the process, you can use a toothpick to puncture many small holes all over the cake before pouring on the Bourbon. You will think that you are using too much Bourbon. Don't worry. You really want to soak the cake in Bourbon! Wrap cake well and store in refrigerator.

- Preheat oven to 350 degrees F. In a large bowl, combine sugar, applesauce, and diced apples. Mix in eggs and nuts. In another bowl, sift together flour, baking soda, salt, cinnamon and nutmeg. APPLE BOURBON CAKE
New York is apple country and this cake recipe is courtesy of the state's apple growers group. I am tucking it away to make for Thanksgiving but thought I would share it in the meantime. My own version will probably include less sugar as we don't like things quite so sweet. Please note the preparation time include an hour of soaking time.

- Place the chopped apples and bourbon in a large resealable bag an shake a bit. Let sit for 1 hour, occasionally tossing a bit to insure that all of the fruit gets well seasoned.
- Preheat oven to 375 degrees. Prepare an 13x9 inch inch baking pan with a light coating of cooking spray. Set aside.
- In a large bowl, beat together the sugar, oil and eggs using a electric mixer or a whisk.
- In a separate bowl, mix together the flour, baking soda, cinnamon, salt, nutmeg, and cloves.
- Fold the dry ingredients into the wet, mixing thoroughly.
- Add in the chopped apples, bourbon and walnuts by hand.
- Pour batter into prepared pan and bake for 1 hour or until a toothpick inserted in the center comes out clean.
- Serve warm or cold with whipped cream, ice cream or frozen yogurt.

APPLESAUCE CRAZY CAKE (NO-BOWL)
Another no-bowl cake recipe. Found this one on a MasterCook recipe e-list back in 1998. Haven't tried it yet but hope to soon. Update: I have tried this now and used half all-purpose half whole wheat flour and no nuts. It worked very well. Not a high rising cake but it was nice and moist when we had this for breakfast the next morning. Took 25 minutes in a 9 inch pan.

Steps:
- In 8 or 9-inch square pan, combine flour, sugar, baking powder, cinnamon, baking soda, salt, cloves and nutmeg; blend well.
- Stir in apple sauce, oil and vanilla; mix well. Stir in raisins and nuts. Use a rubber spatula to scrape any ingredients clinging to sides, corners or bottom of pan into the batter and even the batter in the pan.
- Bake at 350F for 25 to 30 minutes or until toothpick inserted in center comes out clean. Makes 9 servings.

- Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg.
