2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 Tbsp. sugar
1 tsp. ground cinnamon
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
3 cups thawed COOL WHIP Whipped Topping
1-1/3 cups sugar
1/2 tsp. ground cinnamon
1/4 cup unsalted butter
4 Gala apples, peeled, cored and chopped
1/2 cup water
2 tsp. cornstarch
1/2 cup packed light brown sugar
2 tsp. ground cinnamon
1/2 tsp. vanilla

Steps:

  • Graham Cracker Crust:
  • Heat oven to 375°F.
  • In a medium mixing bowl, combine graham cracker crumbs, butter, sugar and cinnamon.
  • Pour crumb mixture into 9-inch springform pan; press onto bottom and up side of pan.
  • Bake 12 min. or until browned. Allow crust to cool.
  • Cheesecake Filling:
  • In a large mixing bowl, whip cream cheese and COOL WHIP in large bowl on medium speed of electric mixer.
  • Add sugar, 1/3 cup at a time, mixing well after each addition. Then, add cinnamon and continue to mix on medium speed until combined.
  • Pour filling into prepared crust in springform pan.
  • Refrigerate for at least 3-1/2 hours to set. (Cheesecake can also be refrigerated overnight to set.)
  • Apple Pie Topping:
  • In a large skillet, melt butter over medium heat.
  • Add chopped apples; cook for 6 to 8 min. or until tender, stirring often.
  • In a small bowl, combine water and cornstarch, then pour over apples.
  • Stir in brown sugar and cinnamon. Bring to a slight boil, stirring frequently.
  • Remove from heat. Stir in vanilla.
  • Allow to cool for 5 min. Pour over prepared cheesecake.

2 pie crusts
24 oz cream cheese
1 cup sugar
1 cup sour cream
½ teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 eggs
3 medium apples, peeled, cored and cubed
1 cup water
⅓ cup sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
2 tablespoons cornstarch

Steps:

  • Preheat oven to 300˚F (150˚C).
  • Line a springform pan with a pie crust, pressing it around the sides of the pan until smooth.
  • In a medium bowl, beat the cream cheese, sugar, vanilla, cinnamon, and nutmeg until smooth.
  • Add the sour cream and mix together. Add in one egg at a time, whisking until smooth.
  • Pour mixture into the springform pan and bake for 1 hour and 15 minutes.
  • After baking, turn off the oven and let the cheesecake cool inside for 1 hour without opening the oven door.
  • Turn up the oven temperature to 425˚F (220˚C).
  • In a saucepan, add the apples, sugar, cinnamon, nutmeg, cornstarch, and water over medium-low heat. Stir occasionally until apples are soft (about 10 minutes), then remove from heat. Let cool.
  • Once cool, spread apple pie filling over cheesecake.
  • Cut the other pie crust in to ¼-inch (6 mm) strips and make a lattice pattern across the top.
  • Brush with egg wash.
  • Bake for 25 minutes, until golden brown.
  • Chill until set then serve.

⅔ (16 ounce) package graham crackers, crushed into fine crumbs
1 ¼ sticks butter, melted
2 large apples - peeled, cored, and sliced
1 teaspoon brown sugar
½ teaspoon ground cinnamon

2 ½ (8 ounce) packages cream cheese
1 (8 ounce) container mascarpone cheese
⅔ cup white sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9-inch springform pan with parchment paper or grease with butter.

4 tablespoons caramel sauce, divided in half, plus more for serving if desired
3 tablespoons butter, melted
5 graham crackers, pulverized into crumbs
1 large apple, sliced thin lengthwise (or 2 small, use crisp sweet apples like Fuji)
4 ounces Cool Whip Topping
1 tablespoon cinnamon

Steps:

  • Beat the cream cheese with half of the caramel sauce until smooth and free of lumps. Set aside.
  • Mix the graham cracker crumbs with the melted butter and spread half of it in the bottom of a 4″x4″ baking dish. Press down to form a crust.
  • Top the crust with a layer of the apples, being careful not to overlap. Spread half of the cream cheese mixture over the apples and drizzle the remaining caramel on top.
  • Add another layer of graham cracker crumbs, apples, and cream cheese mixture. Top with cool whip and cinnamon. Set in freezer for at least 45 minutes.
