10 meaty veal shanks, 2 to 3 inches thick

1/2 to 2/3 cup all-purpose flour
6 tablespoons butter, divided

1 large onion, chopped
2 large carrots, peeled and cut into a fine dice
4 ribs celery, chopped
6 to 8 cloves garlic, crushed
3 sprigs fresh rosemary, stripped and finely chopped, about 2 tablespoons
1/2 teaspoon allspice
2 cups white wine
1 (28-ounce) can chunky style crushed tomatoes
2 cups chicken stock
2 (14-ounce) cans, cannelloni beans, drained
1 lemon, rind cut into pieces
2 lemons, zested
4 cloves garlic, crushed
6 anchovy fillets in oil, drained
1 cup flat leaf parsley leaves, 3 handfuls
Garlic Lemon Potatoes, recipe follows
2 bulbs garlic
Extra-virgin olive oil, for drizzling
3 1/2 pounds white skinned medium potatoes, peeled and cut into chunks
1/4 to 1/2 cup half-and-half or more, if needed
4 tablespoons unsalted butter
1/2 cup chicken stock
1 lemon, juiced
Salt and pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Place a large, heavy bottomed skillet on the stove and heat pan over moderate to high flame. Salt and pepper the shanks and coat lightly and evenly in flour. Working in 2 batches, brown shanks in 1 1/2 tablespoons each butter and olive oil. Transfer shanks to a large roasting pan. Add remaining butter and oil to the pan and saute the root vegetables and crushed garlic 5 minutes, seasoning them with rosemary, allspice, salt and pepper. Add wine to the pan and reduce 2 to 3 minutes, lifting pan drippings up off the bottom of your pot. Add tomatoes, chicken stock and white beans to the pan and remove from heat. Stir to combine sauce. Pour sauce and vegetables evenly over shanks. Cover roasting pan tightly and roast for 1 1/2 to 2 hours, until meat is very tender and pulling easily from bone. Baste meat in juices and sauce every 1/2 hour. In the last 1/2 hour, add lemon rinds to sauce.
  • Combine lemon zest, garlic, anchovies and parsley in a large pile. Mill the mixture with your knife into a finely chopped condiment.
  • To serve, place shank in a rimmed plate and spoon juices, beans and vegetable bits over and around meat. Top with a generous sprinkle of gremolata. Serve with Sauteed dark greens and crusty bread and/or garlic lemon potatoes.
  • Preheat oven to 375 degrees. Cut ends of garlic bulbs off to expose cloves. Coat the bulbs lightly with a drizzle of extra virgin olive oil, about 1 tablespoon. Wrap bulbs in a double layer of tin foil and place packets in a hot oven. If preparing with above menu, place cloves in oven half way through cooking process of Osso Buco. Roast garlic 45 minutes. Remove bulbs from oven, unwrap and let cool 10 minutes.
  • Boil potatoes in salted water for 12 minutes, until fork tender. Drain and return cooked potatoes to the hot pot to dry them out. Add half-and-half, butter and chicken stock to the pan. Squeeze roasted garlic into the potato pot and mash with a masher into a slightly lumpy consistency. Add the juice of 1 lemon and salt and pepper, to taste. Serve immediately.

¼ cup Butter
2 cloves garlic, crushed

Steps:

  • Dust the veal shanks lightly with flour. Melt the butter in a large skillet over medium to medium-high heat. Add the veal, and cook until browned on the outside. Remove to a bowl, and keep warm. Add two cloves of crushed garlic and onion to the skillet; cook and stir until onion is tender. Return the veal to the pan and mix in the carrot and wine. Simmer for 10 minutes.
  • Pour in the tomatoes and beef stock, and season with salt and pepper. Cover, and simmer over low heat for 1 1/2 hours, basting the veal every 15 minutes or so. The meat should be tender, but not falling off the bone.
  • In a small bowl, mix together the parsley, 1 clove of garlic and lemon zest. Sprinkle the gremolata over the veal just before serving.

Flour for dredging meat
6 veal shanks or lamb shanks, about 1 1/2 inches thick
1/2 cup olive oil
8 cloves garlic, peeled and crushed
4 anchovy fillets
10 leaves fresh sage or 1 1/2 teaspoons dried
2 cups dry white wine
Chicken stock as needed
1 tablespoon butter
Salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees.
  • Dredge shanks in flour and shake off excess. Pour olive oil into a heavy-bottomed skillet over medium-high heat. When oil is hot, add shanks and brown on both sides. Remove meat from pan, and place in large ovenproof casserole.
  • Pour off all but 2 tablespoons of the oil in the pan. Add garlic, anchovies and sage, and saute for 2 minutes. Add white wine and bring to a boil, scraping bottom of the pan. Pour liquid over meat in casserole. Season with salt and pepper. Cover and bake for 2 1/2 hours, or until meat is soft.
  • Remove meat to a serving platter. Pour juices in the casserole into a saucepan. There should be about 1 1/2 cups; if not, add chicken stock. Reduce liquid by half: about 10 to 15 minutes over high heat. Swirl in the butter, seasoning to taste, and pour liquid over the meat. Serve with assorted root vegetables.

4 large heritage pork shanks, such as Kurobuta
Salt and cracked pepper
6 tablespoons blended canola and olive oil
1 pound carrots, roughly chopped
1 large yellow onion, roughly chopped
1/2 stalk celery, roughly chopped
4 to 6 cloves garlic, smashed
6 filets anchovies in oil
A few sprigs fresh rosemary
A few sprigs fresh sage
A few sprigs fresh thyme
One 16-ounce can San Marzano tomatoes
1 1/2 gallons chicken broth
3 cups white wine
2 to 3 cups chicken broth
2 cups white wine
1/4 cup olive oil
2 tablespoons unsalted butter, plus 2 to 3 tablespoons cold unsalted butter
1/4 yellow onion, finely minced
2 cups of arborio rice
1/2 cup grated Parmigiano

Steps:

  • For the osso buco: Preheat the oven to 375 degrees F.
  • Season the pork shanks liberally with salt and pepper. In an oven-safe large heavy-bottomed pot or Dutch oven, heat the blended oil over medium-high heat to nearly smoking. Sear the shanks on all sides until deeply caramelized and browned, about 10 minutes. Remove to a plate and reserve.
  • Reduce the heat to medium and carefully remove any excess oil from the pot; only about 1 tablespoon is needed. Cook the carrots, onions, celery, garlic and anchovies over medium heat until the vegetables are translucent and fragrant, about 10 minutes. Stir in the rosemary, sage and thyme. Add the canned tomatoes and allow to cook until the tomatoes are a rust color (this draws the sweetness out of the tomatoes), 12 to 15 minutes.
  • Bring the chicken broth to a boil in a saucepan, then reduce the heat and keep warm. Bring the wine to a boil in a small saucepan, then reduce the heat and keep warm.
  • Return the shanks to the pot and nestle them at the bottom. Pour the chicken broth and wine over the shanks and vegetables. Cover with a lid and braise in the oven until fork-tender, about 4 hours.
  • For the risotto: Bring the chicken broth to a boil in a saucepan, then reduce the heat and keep warm. Bring the wine to a boil in a saucepan, then reduce the heat and keep warm.
  • Heat the oil and 2 tablespoons butter in a pot over medium heat until the butter melts. Add the onions and cook just until translucent; do not allow the onions to become golden. Using a wooden spoon, add the arborio rice and toast in the butter, oil and onions for a few minutes.
  • Add the wine and allow the rice to soak it up and release its creamy starch into the pot. When the rice is nearly dry, add enough of the warm chicken broth to cover (about 3/4 cup) and cook, stirring, until the rice soaks it up. Repeat the process of adding broth and stirring as needed until the rice is tender and dry, 20 to 30 minutes.
  • To finish the risotto, stir in a few pats of cold butter and the Parmigiano. Spoon the risotto into bowls, top with the osso buco and the braising liquid.

Veal shanks braised in tomatoes & wine until tender and falling off the bone. This is a hearty Italian recipe that seems to please everyone. It is good served with any starch. Rice, potatoes, polenta, pasta or crusty rolls. I have done this with plain steamed rice, but last night served it with Risotto Milanese which is Risotto w parmesan cheese and saffron. Very tasty. Osso Buco means "hollow bones" in Italian and is served all over Italy, but purportedly comes from Milan.

4 veal shanks, 2 & 1/2 inch thick
2 ounces butter
2 tablespoons olive oil
2 carrots
2 large onions
3 celery ribs

1/4 cup flour
1/8 teaspoon salt (or to taste)

2 (400 g) cans whole tomatoes
1/2 cup dry red wine
1 cup beef broth
1 teaspoon dried basil (or 1 tbsp fresh)
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1 bay leaf
1 inch slice lemon rind
1 teaspoon lemon rind, grated
3 tablespoons parsley, fresh, chopped

Steps:

  • Heat one ounce of the butter in a large Texas skillet or Dutch oven.
  • Add peeled & finely chopped carrot, onion, celery and one of the crushed garlic cloves. Cook gently until onions are golden brown. Remove from heat & transfer to a large ovenproof casserole.
  • Coat shanks in flour seasoned with salt & pepper. Heat remaining butter & oil in large frying pan. Add shanks and brown on all sides.
  • Carefully pack shanks on top of vegetables in casserole; stand shanks upright to retain marrow in the bones.
  • If pan is oily drain excess oil off. Add tomatoes and chop into pan with wooden spoon until the tomatoes are all popped. You could also start with chopped tomatoes or you can puree them. I just find the flavor better with the whole tomatoes and enjoy the tomato chunks with the rest of the veggies and the meat. Deglaze the pan by scraping the goodies up off the bottom of the pan into the tomato juices with a wooden spoon. Add wine, beef broth, basil, thyme, oregano, bay leaf & strip of lemon rind. Taste. Add salt & pepper to taste if necessary.
  • Pour sauce over veal shanks & veg in casserole. Bake in moderate (350°F) oven for 2 hours, or until meat is falling away from bones. (Stir occasionally during cooking.)
  • Serve over rice, pasta, potatoes or polenta.
  • Quickly blend the chopped parsley, grated lemon rind & other crushed garlic clove and serve separately as a fresh, crisp garnish.

There is no promise of speed here: osso buco takes time. But this classic Italian dish of glorious, marrow-filled veal shanks (the name means "bone with hole"), braised until they are fork-tender, is dead easy to make and requires a total of no more than fifteen or twenty minutes of attention during its two hours or so of cooking. And it holds well enough overnight so that 90 percent of the process can be accomplished while you're watching television the night before you serve the dish. Though I'll concede that starting with good-quality stock will yield the richest sauce, I'll volunteer that two hours of cooking veal shanks-which are, after all, veal bones-creates a very nice stock with no work, so I never hesitate to make osso buco with white wine or even water. Try to buy slices of shank taken from the center, about one and a half inches thick. The slices from the narrow end have very little meat on them; those from the thick end contain little or no marrow. Center cuts give you the best of both worlds, though you shouldn't let it stop you if they are unavailable.

4 center-cut slices veal shank (2 pounds or more)
Salt and freshly ground black pepper
3 to 4 garlic cloves, lightly smashed and peeled
4 anchovy fillets
1 cup dry white wine, chicken or beef stock, or water
2 teaspoons butter (optional)

Steps:

  • Heat a large, deep skillet over medium-high heat for a couple of minutes. Add the oil, swirl it around, and pour out any excess. Add the veal and cook until nicely browned on the first side (for even browning, you can rotate the shanks, but try not to disturb them too much), about 5 minutes. Turn and brown the other side.
  • When the second side is just about completely browned, sprinkle the shanks with a little salt and pepper and add the garlic and anchovies to the pan. Cook, stirring a little, until the anchovies dissolve and the garlic browns, about 2 minutes. Add the liquid and let it bubble away for about a minute.
  • Turn the heat to low and cover the skillet. Five minutes later, check to see that the mixture is simmering-just a few bubbles appearing at once-and adjust the heat accordingly. Cook until the meat is very tender and pulling away from the bone, at least 1 1/2 hours and probably somewhat more; turn the veal every half hour or so. (When the meat is tender, you may turn off the heat and refrigerate the dish for up to 24 hours; reheat gently before proceeding.)
  • Transfer the meat to a warm platter and turn the heat to high. Boil the sauce until it becomes thick and glossy, about 5 minutes. Stir in the butter if you like and serve the meat with the sauce spooned over it.
  • Traditionally, osso buco is served with a condiment known as gremolata. To make it, mix together 1 tablespoon minced lemon zest, 2 tablespoons minced fresh parsley, and 1/4 to 1 teaspoon minced garlic (remember that this will not be cooked, so go easy on the garlic).
