- In a large saucepan, mix gelatin, cinnamon, nutmeg and 1-1/2 cups water. Add apples; bring to a boil. Reduce heat; simmer, covered, until apples are tender, about 5 minutes., In a bowl, mix pudding mix and remaining water; stir into apple mixture. Cook until thickened, about 1 minute, stirring occasionally. Remove from heat; stir in nuts. Transfer to crust., Refrigerate at least 2 hours before serving. If desired, serve with whipped topping.

- In a small bowl, combine the egg, cheeses, sugar and extract; set aside. Spread one can of pie filling into a 13x9-in. baking dish coated with cooking spray. Top with three lasagna noodles and cheese mixture. Layer with remaining noodles and pie filling. , In a small bowl, combine the flour, brown sugar, oats, cinnamon and nutmeg. Cut in butter until crumbly. Sprinkle over filling. , Bake, uncovered, at 350° for 45-50 minutes or until bubbly and heated through. Let stand for 15 minutes. Meanwhile, in a small bowl, combine the sauce ingredients. Serve with lasagna.

I call this a lasagna because it is layered, but it's more like a stacked no bake cheesecake. The tangy cream cheese filling balances perfectly with the tart crispness of the apples. The sweet and buttery caramel tones pair delightfully with the crunch of the graham crackers. This dish keeps perfectly in the freezer, which means you don't have to worry about it going bad before you've had a chance to eat it all. It's a decadent dessert and a little goes a long way. - Beat the cream cheese with half of the caramel sauce until smooth and free of lumps. Set aside.
- Mix the graham cracker crumbs with the melted butter and spread half of it in the bottom of a 4″x4″ baking dish. Press down to form a crust.
- Top the crust with a layer of the apples, being careful not to overlap. Spread half of the cream cheese mixture over the apples and drizzle the remaining caramel on top.
- Add another layer of graham cracker crumbs, apples, and cream cheese mixture. Top with cool whip and cinnamon. Set in freezer for at least 45 minutes.
- Serve cold with extra caramel sauce, if so desired.

NO PIE APPLE PIE

- For the apple pie spice: Mix together the cinnamon, nutmeg, allspice and cardamom if using in a small bowl.
- For the apples: Preheat the oven to 400 degrees F.
- Place the apple halves core-side down on a flat surface. Before slicing, place chopsticks or wooden spoons on either side of them to make sure you don't cut all the way through. Slice almost all the way to the bottom of each apple half at 1/4-inch intervals, then place them on a sheet pan.
- Mix 1 tablespoon of the butter, 1 tablespoon of the brown sugar, 2 teaspoons of the apple pie spice and the orange juice in a pitcher. Drizzle over the apples, making sure they are well coated and the drizzle goes into the slits. Bake until they are just starting to get tender, about 15 minutes.
- Meanwhile, mix together the oats, almonds, salt, remaining melted butter, remaining brown sugar, orange zest and remaining apple pie spice. Sprinkle the oat mixture over the apples, making sure to get some between the slices without breaking the apples. Bake until the topping is slightly crisp and golden, another 10 minutes. Drizzle with honey and serve with ice cream.
NO BAKE APPLE PIE
This pie is absolutely one of my favorite pies. I made this recipe myself and really just thought it would be a cool, fun alternative apple pie. It is a great all year round pie.

- Place Granny Smith apples in a saucepan over medium-high heat; stir in brown sugar. Cook, stirring occasionally, until brown sugar thickens, 5 to 10 minutes. Stir 1 pinch cinnamon into apple mixture; pour into graham cracker crust.
- Combine gelatin, 1 tablespoon cinnamon, and salt together in a saucepan; stir in sweetened condensed milk and eggs. Let gelatin mixture stand until dissolved, about 1 minute. Place saucepan over medium-low heat; cook and stir until mixture thickens, 7 to 10 minutes. Remove saucepan from heat and stir in applesauce until thoroughly mixed; pour over apple layer. - Preheat the oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add lasagna noodles, and cook until tender, about 8 minutes. Drain, and rinse noodles, and set aside.
- In a medium bowl, mix together the Cheddar cheese, ricotta cheese, egg, white sugar, and almond extract. Spread one can of apple pie filling in the bottom of a 9x13 inch baking dish. Layer half of the noodles to cover the filling. Spread the cheese mixture over the noodles. Top with the remaining noodles, and spread the remaining can of apple pie filling over the top of those.
- In a small bowl, stir together the flour, 6 tablespoons brown sugar, oats, cinnamon and nutmeg. Mix in margarine until the mixture is crumbly. Sprinkle over the top of the pie filling.
- Bake for 45 minutes in the preheated oven. Cool for 15 minutes. While the lasagna cools, stir together the sour cream and 1/3 cup brown sugar. To serve, cut into squares and top with sour cream as a garnish.

- In small bowl, mix sour cream with brown sugar and chill.
- Preheat oven to 350°F.
- Layer 6 toast slices in greased 13x9 baking pan.
- Cover with ham.
- Sprinkle 1 1/2 cup cheese over ham.
- Layer remaining 6 slices toast over cheese.
- Spread pie filling over toast.
- Sprinkle with granola.
- Bake 25 minutes at 350°F.
- Top with remaining cheese.
- Bake additional 5 minutes until cheese melts.
- To serve cut into squares and top with a dollop of sour cream/brown sugar mixture.
- We also like it with butter and maple syrup and totally omit the sour cream but it is great both ways.
