THE BEST BANANA CAKE
Old fashioned homemade banana cake is hard to beat! Make your own cake with ripe bananas and a hand mixer, it's so easy.

Steps:
- Preheat oven to 350°F. Prepare 9 x 13-inch cake pan by spraying with cooking spray, or greasing and flouring.
- In a large mixing bowl, beat sugar and butter with an electric mixer at medium high speed until light and fluffy, about 4 minutes.
- Add eggs, one at a time, beating well after each addition, about 30 seconds each.
- Add remaining ingredients. Beat 30 seconds at low speed to combine; continue to beat at medium high speed for 3 minutes. Batter should be light colored, smooth, and somewhat fluffy.
- Spoon batter into prepared pan. Bake for 35 to 40 minutes or until a toothpick inserted near the center of cake comes out clean. Baking time will vary depending on type of cake pan used.
- Cool completely before frosting.
- In a large bowl, with electric mixer, beat cream cheese and butter until fluffy, about 1 minute. Add powdered sugar, milk, and vanilla; beat until light and fluffy, 2 minutes.
- If frosting seems too thick, beat in additional milk, ½ teaspoon at a time. If frosting is too thin, add powdered sugar, ¼ cup at a time.
- Frost completely cooled cake. Frosted cake should be refrigerated.
- Note: For 9 x13 inch cake, a half batch of frosting is usually enough, unless you like a lot of frosting.

- Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13 inch pan.
- In a large bowl, sift together the flour, sugar, baking powder, baking soda and salt. Make a well in the center and add shortening, eggs, vanilla and bananas. Beat 2 minutes at medium speed with electric mixer. Pour batter into prepared pan.
- Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

- Grown ups: Preheat the oven to 180C/ 160C fan/ gas mark 4. Grease and line a 450g loaf/1lb tin with baking parchment.
- Children: Weigh the flour, baking powder, cinnamon and sultanas into a bowl and mix with a wooden spoon. Then weigh the butter, vanilla essence, egg, milk and mashed bananas and put into another bowl or jug and mix with a small balloon whisk or fork. Pour the 'wet' banana mixture into the 'dry' flour mixture and combine thoroughly with a wooden spoon. Weighing needs to be very accurate when baking so help older children to measure carefully. Younger children can also get involved by spooning or pouring into the scales with adult supervision. Younger children can also beat the egg with a fork and mash the banana with a potato masher.
- Grown ups: Pour the cake mixture into the prepared tin and bake for 30 - 40 mins or until a skewer inserted in the middle comes out clean. Remove from the oven, allow to cool in the tin for 10 mins then turn out.
- Children: Drizzle with agave syrup if using.

This is a pretty easy recipe and it really does not have bananas in it! It does use instant banana pudding mix, though :) This comes out very pretty with a slight banana flavor. Poppy seeds add the "speckle".

- Mix cake mix, water, oil and pudding mix and beat until smooth.
- Add eggs, one at a time, beating well after each addition.
- Stir in poppy seed.
- Pour into greased and floured bundt or tube pan.

- Cool about 20 minutes in pan on rack and then turn out of pan and cool completely on rack.
