MIKE'S CRISPY TREATS

4 tablespoons salted butter, plus more softened butter, for greasing the baking dish
One 10-ounce bag white mini marshmallows
1/4 teaspoon kosher salt
6 cups fruit-flavored cereal rings, such as Froot Loops
One 10-ounce bag rainbow mini marshmallows
One 24-ounce package white almond bark

Steps:

  • Thoroughly grease a 9-inch-by-13-inch baking dish with softened butter.
  • Add the 4 tablespoons butter to a medium pot over medium heat. When the butter is melted, stir in the white mini marshmallows and heat until they're totally melted. Stir in the salt. Remove from the heat and pour in the cereal, folding gently until it is all combined. Then gently fold in the rainbow mini marshmallows. Press into the prepared baking dish. Let cool completely.
  • Melt the bark according to the package directions. Cut the treats into 12 pieces. Dip half of each piece into the white chocolate and place onto wax paper. Let set and serve.

  • Thoroughly grease a 9- by 13-inch pan with softened butter.
  • In a large pot, melt the butter. Stir in the regular marshmallows until they're totally melted. Stir in the salt. Remove from the heat and set aside.
  • Pour in the cereal, folding gently the whole time until all combined. Then pour in the mini marshmallows and gently fold in. Turn into the buttered pan and press flat. Immediately top with rainbow sprinkles.
  • Let cool completely, and then cut into squares.

1 pkg. (10 oz.) JET-PUFFED Miniature Marshmallows
6 cups sweetened puffed wheat cereal
1/2 cup cocktail peanuts

Steps:

  • Microwave butter in large microwaveable bowl on HIGH 45 sec. or until melted. Add marshmallows; stir to evenly coat. Microwave 1-1/2 min. or until marshmallows are completely melted and mixture is well blended, stirring after 45 sec. Add cereal and nuts; mix well.
  • Press cereal mixture onto bottom of 13x9-inch pan sprayed with cooking spray. Top with remaining coconut; press lightly into cereal mixture to secure. Cool completely before cutting to serve.

3 tablespoons unsalted butter, plus more for greasing pan and hands
1 (10-ounce) package mini marshmallows
2 to 3 tablespoons instant coffee or espresso
6 cups rice cereal (recommended: Rice Krispies)

Steps:

  • Lightly butter an 8-inch square pan.
  • In a large pot, melt the butter over very low heat. Stir in the marshmallows, getting them all coated with the butter. Slowly melt the marshmallows, stirring frequently. When the marshmallows are melted and smooth, remove the pan from the heat. Stir in the instant coffee (2 tablespoons for a rich coffee flavor, 3 tablespoons for a real kick) and mix until it is dissolved into the melted marshmallow. Gently fold in the rice cereal. When it is completely coated, lightly press the mixture into the prepared pan with your buttered hands. When cool, cut the treats into bars and serve.

I got this recipe from a british tv programme over 10 years ago called 'why don't you?'It's really for kids but I know several adults who find this addictive! If you can't get rolo sweets, something with chocolate caramel like a mars bar would do.

3 1/2 ounces marshmallows
3 1/2 ounces rolos chocolate-covered caramel candies
3 1/2 ounces butter

Steps:

  • Melt butter in a saucepan over a medium heat.
  • Add marshmallows and rolos and stir until melted.
  • Put rice crispies into a mixing bowl and pour hot mixture over it.
  • Mix thoroughly and pour into a greased loaf tin- this will make enough for 2 tins.
  • Can be eaten immediately.

While looking for recipes to use my cans of almond paste, I was inspired by Uncle Bill's recipe (#148395). I modified it using the ingredients I had on hand.

5 cups Rice Krispies
1 cup toasted coconut
3/4 cup Hershey milk chocolate filled with caramel baking pieces
6 tablespoons butter or 6 tablespoons margarine
8 ounces almond paste
4 cups mini marshmallows
additional butter or margarine, for greasing pan

Steps:

  • Butter 9x9-inch baking pan (bottom and sides) and set aside.
  • Put Rice Krispies, toasted coconut and Hersey's bits in a large bowl; stir to combine.
  • In a large non-stick pan, melt 6 oz butter over low heat. Add almond paste and marshmallows.
  • Continue to cook over low heat until all ingredients are melted and smooth (about 5 minutes).
  • Immediately pour over Rice Krispies mixture and stir to combine well.
  • Press into prepared pan (I just use my hand placed inside a baggie that I've sprayed with Pam).
  • Cool. Cut into squares.

1 bag (10 1/2 ounces) mini marshmallows
1/4 cup unsweetened Dutch-process cocoa (spooned and leveled)
6 cups crisp rice cereal
2 ounces bittersweet chocolate, melted

Steps:

  • Butter an 8-inch square baking pan. Line bottom and two sides with parchment paper, leaving a 2-inch overhang on both sides. Butter paper; set pan aside.
  • In a large saucepan, combine butter, marshmallows, and cocoa. Cook over medium, stirring frequently, until melted, about 6 minutes; stir in rice cereal. Press rice mixture into prepared pan; drizzle with melted chocolate. Let cool to room temperature; cut into 16 bars. (To store, keep in an airtight container at room temperature, up to 5 days.)
