These Low-Carb Peanut Butter Cookies are a delicious, healthy way to satisfy your cookie craving! They come together in 1 bowl with only 5 ingredients for a super easy treat.

1 cup smooth peanut butter ((no added sugar))
1 large egg
2/3 cup erythritol
1/2 teaspoon baking soda
1/2 teaspoon vanilla essence

Steps:

  • Preheat oven to 350F (180°C) and line a cookie tray with baking paper. Set aside.
  • Add the erythritol to a Nutribullet or blender and blend until powdered. Set aside. If using a confectioner's low-carb sweetener, you can skip this step.
  • Add all of the ingredients into a medium mixing bowl and mix until a smooth, glossy dough forms.
  • Roll about 2 tbsp of dough between your palms to form a ball, then place on the prepared cookie tray. Repeat until all dough has been used. You should end up with 12-14 cookies.
  • Use a fork to flatten the cookies, creating a criss-cross pattern across the top.
  • Bake the cookies for 12-15 minutes.
  • Remove from the oven and allow to cool for 25 minutes on the baking tray, then transfer to a cooling rack for another 15 minutes.

1 Egg
½ Cup Gentle Sweet, or ¼ Cup Pyure
¼ Cup Trim Healthy Mama Baking Blend, see below for substitution
2 Teaspoons Vanilla

Steps:

  • Preheat oven to 350.
  • In a medium mixing bowl, cream peanut butter and egg.
  • Add Gentle Sweet, Baking Blend and Vanilla and mix well.
  • Using a small cookie scoop, scoop dough into your hand and roll into a ball.
  • Place balls on prepared cookie sheet (sprayed with coconut oil or use a silicone mat).
  • Using a fork, press cookie dough down, making a criss-cross pattern on top.
  • Bake for 8 minutes, and allow to cool completely.

1/2 Cup (120g) Sugar Substitute
Vanilla Extract - Optional

Steps:

  • Preaheat oven to 180C or 350F
  • Prepare all of the ingredients and a Mixing Bowl together for an easy assemble.
  • Add all of the ingredients in and prepare for mixing.You can also add Vanilla Extract, which is optional.
  • Using either a Hand Mixer or Silicone Spatula, combine all of the ingredients and mix to a smooth consistency.
  • Using either a mini Ice Cream scoop or 2 teaspoons, scoop all of the cookies onto a baking tray covered either with Parchment Paper or silicone baking sheet.
  • Using a fork, you can slowly press on each cookie giving them the famous criss-cross design. You can also use your hand . Make sure your hands are a bit moist as the mixture might stick on.
  • Once all of the cookies are pressed down, you can decorate them in the middle with one piece of a peanut.
  • Bake in the oven for approximately 15 Minutes.
  • Once taken out of the oven, do not touch them. They are very soft and need to fully cool to harden.
