NOT YOUR MOTHER'S PUMPKIN BREAD
This adult version of an old classic is not as sweet as its predecessors. It has subtle and tantalizing spicing. Delish!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease three 8x4 inch loaf pans.
- In a large bowl, beat together white sugar, brown sugar and oil. Stir in the pumpkin. Mix in the eggs one at a time, beating well with each addition.
- In a separate bowl, sift together flour, baking soda, cinnamon, cloves, coriander and salt. Stir dry ingredients into pumpkin mixture until smooth. Stir in cream sherry. Beat till thoroughly blended, 1 to 2 minutes. Fold in nuts. Spoon batter into 3 greased 8x4 inch loaf pans, filling no more than three quarters full.
- Bake in preheated oven until a tester inserted into center of a loaf comes out clean, about 65 minutes. Let stand 5 minutes in pans before turn out onto wire racks to cool completely. Can be kept at room temp. for 4 days or frozen.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 11x13-inch baking pan.
- Place raisins in a pot, cover with water, and simmer until soft, 20 to 30 minutes.
- Drain raisins and place in a blender. Add pureed pumpkin, eggs, and oil; blend everything until pureed.
- Combine oat flour, spelt flour, almond meal, coconut flour, amaranth flour, brown rice flour, baking soda, salt, cinnamon, allspice, nutmeg, and cloves in a bowl. Pour in pumpkin mixture and stir until well combined. Fold in pecans. Pour batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.

This bread is easy to make and is so yummy. I got this recipe from my mother. I think that she got it from the newspaper. This recipe makes 2 regular loafs or 4 mini loafs.

Steps:
- Mix sugar, oil and eggs together.
- Add pumpkin.
- Then add dry ingredients and finally water.
- Stir just until mixed.
- Add nuts if desired.
- Pour into 2 greased and floured (or 4 mini loaf) pans.
- Bake at 350 for 1 hour.

- 1.Preheat oven to 350 degrees. 2.In a stand mixer place eggs, vanilla, milk, applesauce and stevia and blend on speed 4 until combined. 3.Add bananas. 4.In a separate bowl stir together flour, flaxseed, salt, baking powder, baking soda, cinnamon, xanthum gum and pumpkin spice. 5.A little a time pour the dry ingredients into the wet ingredients and blend on all incorporated. 6.Blend in the pumpkin puree. 7.Spray a loaf pan with nonstick cooking spray and pour batter into pan. 8.Bake 60-70 minutes until a toothpick in center of loaf comes out clean. 9.Let cool 30-60 minutes before removing from loaf pan.

- Preheat oven to 350°F.
- Cream sugar, oil and applesauce together.
- Add eggs. Mix well.
- Add spices, vanilla and pumpkin.
- Mix flour, baking soda and salt.
- Alternately add flour mixture and water or apple juice. Mix well.
- Pour into 3 greased small bread loaf pans or 1 greased large bread pan.

- In a large mixing bowl, whisk the oil and honey together until smooth. Add the Greek yogurt and the egg. Whisk again. Make sure the ingredients are smooth and well blended. Whisk in the pumpkin purée and vanilla.
- Sprinkle the baking soda, cinnamon, nutmeg, cloves, and salt over the top, then stir to combine. Sprinkle in the flour, then gently mix, just until the flour disappears. Stir in the millet (or your mix-ins of choice). Spread the batter into the prepared loaf pan.
- Bake the healthy pumpkin bread for 30 minutes, then remove pan and lightly tent with foil to keep the top from becoming too dark.
