NO YEAST SOURDOUGH BREAD
This no yeast sourdough bread recipe is extra tangy and uses just 5 ingredients and is perfect when slathered with salted butter.

- In a large bowl combine the starter, water, and 3 cups of flour. Beat vigorously for 1 minute.
- Cover, and let rest at room temperature for 4 hours.
- Refrigerate overnight, for about 12 hours.
- After refrigeration, add the remaining 2 cups of flour, sugar, and kosher salt.
- Knead to form a smooth dough. Knead either by hand or with a dough hook attached to a mixer.
- Allow the dough to rise in a covered bowl until it's light and airy, with visible gas bubbles. Depending on how active your starter is this may take up to 5 hours, or even longer. For best results, gently deflate the dough once an hour by turning it out onto a lightly floured or lightly greased work surface; stretching and folding the edges into the center; turning it over, then returning it to the bowl. Adding these folds will help strengthen the dough's structure, and allow you to feel how it's progressing over time.
- Note: sourdough bread (especially sourdough without added yeast) can be finicky and may not go exactly to the written plan. Please allow yourself to go with the flow, and not treat this as an exact to-the-minute process.
- When the dough is ready, transfer the dough to a lightly floured or lightly greased work surface and gently divide the dough in half.
- Gently shape the dough into two oval loaves, and place them on a lightly greased or parchment-lined baking sheet. Cover with lightly greased plastic wrap and let rise until very puffy, about 2 to 4 hours. This step could take longer but give them sufficient time to become noticeably puffy. Don't worry if the loaves spread more than they rise, they'll pick up once they hit the oven's heat.
- Towards the end of the rising time, preheat the oven to 425°F.
- Spray the loaves with lukewarm water.
- Slash the loaves. If you've made round loaves, try one slash across the center, and a curved slash on each side of it; or slash in the pattern of your choice. For oval loaves, two diagonal slashes are fine. Make the slashes fairly deep, a serrated bread knife works well here.
- Bake the bread for 25 to 30 minutes, until it's a very deep golden brown.
- Remove it from the oven, and cool on a rack.
- Store bread, loosely wrapped in plastic, for several days at room temperature or freeze for longer storage.

BETTER-THAN-BAKERY NO-KNEAD SOURDOUGH
This crusty, chewy, tangy bread can't be beat. You'll be shocked at how simple it is to create such a professional loaf at home. Glossy, crunchy crust. Resilient, airy crumb. Baking inside a Dutch oven (set in your kitchen oven) does an excellent job simulating the effects of a professional bread oven.

Steps:
- Mix water and salt together in a very large bowl. Add sourdough starter and whisk vigorously to mix and aerate; stir in 3 cups bread flour until smooth. Stir in remaining 3 cups bread flour until dough is completely mixed.
- Cover bowl and set aside until dough is bubbly and increased in volume, 12 to 15 hours.
- Turn dough on to a well floured work surface using floured hands. Turn dough several times to cover with flour. Return dough to an oiled bowl and let rest until dough is doubled in size but not risen enough to collapse, 2 to 3 hours.
- Preheat an oven-safe, lidded Dutch oven (at least 8 quarts) in a 450 degrees F (230 degrees C) oven for 30 minutes.
- Carefully remove Dutch oven using oven mitts and sprinkle cornmeal into the bottom to prevent dough from sticking.
- Gently roll dough out of oiled bowl and into the Dutch oven; replace lid.
- Bake in the oven for 30 minutes. Remove lid and continue baking until crust is lightly browned, about 15 minutes more. Carefully tip loaf out onto a cooking rack to cool completely.

- AUTOLYZE: Add water to the bread machine pan, then both flours. Using the bread machine, choose the DOUGH cycle. Turn it on just long enough to moisten the dough. It will look dry and scraggly. Stop the machine and use a spatula to scrape any loose flour down from the sides and out of the corners.
- Place salt on top of one side of the dough in the machine and the starter on the other side. DO NOT MIX. Let the dough rest for 30 minutes to 1 hour.
- KNEADING: Select the DOUGH cycle and press START. When the machine goes quiet, you'll know the kneading is finished. Transfer the dough to a lightly-oiled 2-liter clear plastic or glass container. You will not leave the dough in the machine until the end of the DOUGH cycle.
- FOLDS: Now that you have transferred the dough to another container, grab the dough at one end and stretch it upward without tearing the dough. Fold it over toward the middle. Turn the bowl. Grab the next side with your fingers and stretch, then fold it towards the center. Move to the next side and repeat. Do this until you have gone around the bowl or container twice. Cover. OPTIONAL: Repeat the stretchy folds about 30 minutes into step 5--the bulk rise to build structure.
