1 medium red onion, sliced into rings
1 1/2 pounds skirt steak, patted dry
6 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
2 bunches baby turnips, trimmed and quartered, or 3 medium turnips, peeled and cut into chunks
1 12-ounce can black-eyed peas, drained and rinsed
2 plum tomatoes, seeded and diced
2 teaspoons red wine vinegar
4 fresh basil leaves, torn
1 tablespoon chopped fresh chives

Steps:

  • Preheat a grill pan over high heat. Grill the onion rings until charred, about 2 minutes per side. If the steak is too large to fit in the pan, cut it in half. Combine 3 tablespoons olive oil, 1 teaspoon salt and 1/2 teaspoon pepper in a bowl, then brush over the meat. Grill the steak until slightly charred, 3 to 4 minutes per side for medium-rare. Transfer to a cutting board and let rest at least 5 minutes.
  • Meanwhile, heat the remaining 3 tablespoons olive oil in a large skillet over medium heat. Add the turnips and cook until fork-tender, about 8 minutes. Add the black-eyed peas and tomatoes and cook until warmed through, about 3 minutes. Stir in the onion rings and vinegar and remove from the heat.
  • Cut the steak into 3-inch-long sections along the grain, then thinly slice the meat against the grain. Stir the basil and chives into the black-eyed peas and serve with the steak.

1 1/2 cups whole-milk ricotta
1 tsp. finely grated lemon zest
5 Tbsp. extra-virgin olive oil, divided, plus more for grill and drizzling
2 3/4 tsp. kosher salt, divided
2 (1"-1 1/2"-thick) boneless strip steaks (about 1 1/2 lb. total), patted dry
1 1/2 tsp. freshly ground black pepper, divided, plus more
2 small eggplants (about 11 oz. total), trimmed, sliced lengthwise into 1" spears

1/2 cup mint leaves

Steps:

  • Whisk ricotta, lemon zest, 3 Tbsp. oil, and 3/4 tsp. kosher salt in a large bowl until smooth and fluffy; set aside.
  • Prepare a grill for medium-high heat; oil grate. Season steaks on all sides with 1 1/2 tsp. kosher salt and 1 tsp. pepper. Grill steaks until lightly charred and an instant-read thermometer inserted into the thickest part registers 120°F, 5-7 minutes per side for medium-rare. Transfer to a cutting board and let rest 10 minutes before slicing against the grain.
  • While steak rests, toss eggplant with 2 Tbsp. oil; season with 1/2 tsp. kosher salt and 1/2 tsp. pepper. Grill eggplant, turning often, until skin is lightly charred and flesh is softened, about 5 minutes.
  • Grill peas in a grill basket or on a wire rack set over grill alongside eggplant, turning often, until lightly charred and softened, about 3 minutes.
  • Spread reserved ricotta on a platter. Arrange eggplant and peas over. Drizzle with oil; season with sea salt and pepper. Top with mint and chile (if using). Serve with lemon wedges alongside.
  • Transfer steak to another platter. Drizzle with oil, then season with sea salt and pepper. Serve alongside vegetables.

2 tablespoons olive oil
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
1 tablespoon cracked coriander seed
1 tablespoon cracked cumin seed
1 tablespoon mustard seeds
1 tablespoon chile powder
1 teaspoon crushed cinnamon stick
Kosher salt to taste
2 pounds skirt steak, cut into four 8-ounce portions
Smoky eggplant chutney (see recipe)

Steps:

  • Build a fire in your grill; when the coals are covered with gray ash and the temperature is medium-hot (you can hold your hand 5 inches above the coals for 3 to 4 seconds) you are ready to cook. (For a gas grill, turn all burners to high, lower cover and heat for 15 minutes, then turn burners to medium-high.)
  • Meanwhile, heat the oil in a medium sauté pan over medium heat until hot but not smoking. Add the ginger and garlic and sauté, stirring occasionally, for 1 minute. Add the coriander, cumin, mustard, chile powder and cinnamon and cook, stirring, until the spices just begin to darken and you can smell their aromas strongly, about 2 minutes. Remove from heat.
  • When the spice mixture has cooled slightly, sprinkle the steak generously with salt, then rub all over with the mixture, pressing gently so it adheres.
  • Put the steak on the grill directly over the heat and cook for 4 to 5 minutes a side for medium-rare. Remove from heat, slice thinly against the grain and serve, accompanied by smoky eggplant chutney if desired.

4 pieces New York strip steak (about 2 pounds)
1/3 cup olive oil
1 clove garlic, smashed
1/2 small onion, finely diced

18 Gaeta or other mild black olives, pitted and roughly chopped
1 tablespoon currants or raisins

  • Preheat a charcoal grill. Place eggplant in a colander and sprinkle liberally with salt. Arrange steaks on a platter. Brush steaks with olive oil and season generously all over with salt. Set steaks aside to rest. Make Caponata: Heat oil in a large sauté pan over medium-high heat. Add garlic and sauté until just golden, 1 minute. Add onions and bay leaf, and sauté until onions are translucent, about 4 minutes. Add eggplant to pan in a single layer and sauté until browned and tender, about 15 minutes. If eggplant doesn't fit easily in one layer, cook in batches. Stir olives, currants, pine nuts and balsamic vinegar into pan. 1/4 cup olive oil
2 tablespoons balsamic vinegar
1 large eggplant, about 1 pound, cut into 4 equal slices lengthwise
1 onion, peeled and chopped fine
4 large red bell peppers, seeded, deveined and cut into thin strips
4 large ripe tomatoes, peeled, seeded, cored and roughly chopped
1 clove garlic, peeled and chopped fine
2 teaspoons fresh rosemary leaves, chopped fine
1 teaspoon fresh oregano leaves, chopped fine
4 sprigs fresh thyme

Steps:

  • Preheat grill or broiler. Combine 1/4 teaspoon of the salt, 1/2 teaspoon of the pepper and 2 tablespoons of the olive oil in a glass or ceramic bowl. Whisk in the balsamic vinegar. These are a really good quick meal to make in the summertime when local farms have fresh eggplant and tomatoes coming in. The topping given is a suggestion, but there are certainly many more ways to enjoy this dish. Start out with the eggplant steaks and then top with what sounds good to you.

1 tablespoon balsamic vinegar
1 tablespoon tamari soy sauce
2 garlic cloves, minced
1/4 teaspoon black pepper, freshly ground
2 tablespoons olive oil
1 large eggplant
1 (15 ounce) can chickpeas, drained
4 ounces feta cheese, crumbled
1/2 cup black olives, pitted
2 medium tomatoes, diced
2 tablespoons fresh oregano or 2 tablespoons parsley
salt and pepper
4 (6 1/2 inch) pita bread
4 teaspoons balsamic vinegar

Steps:

  • To make the Balsamic Marinade: combine the first 5 ingredients, slowly adding the oil and stirring briskly to combine well. Set aside.
  • Prepare a hot charcoal fire or preheat a gas grill to medium-high. Place a vegetable grilling rack on the grill. Or preheat the broiler.
  • To make the Eggplant steaks: cut the eggplant lengthwise into four 1/2" slices to resemble steaks. Brush the steaks with the marinade.
  • Grill or broil the eggplant for 2 minutes on each side, or until tender but not soft. Remove from the heat, and place 1 steak on each serving plate.
  • Put the chickpeas, tomatoes, feta, olives and oregano in a bowl. Season to taste with salt and pepper, and stir to combine well. Add some marinade, and stir again.
  • Toast or grill the pita bread, cut into pie-shaped wedges and set aside.
  • Spoon 1 or 2 scoops of the tomato-olive mixture onto each eggplant steak with some mixture pooling onto the plate. Sprinkle with vinegar, place several pita wedes on the plate, and serve.

It's also great topped with a fried egg!

½ red bell pepper, seeded and sliced lengthwise into 4 strips
