NONA'S MARINARA SAUCE
Steps:
- Preheat the oven to 400 degrees F.
- Peel 5 cloves garlic and place them in a square of foil. Sprinkle the cloves with salt and pepper and drizzle with 2 tablespoons olive oil. Wrap up the foil and place it directly on the oven rack. (Be sure that the foil packet is secure so no oil will leak out.) Roast the garlic until it's brown and tender, about 25 minutes. Allow to cool enough to touch and squeeze the garlic from the skins. Set aside.
- Saute onions and carrots with the oil in a medium saucepan. Add tomato paste and stir well. This will cook off the tomato paste and give a nice orangy color. Cook for about 10 minutes. When vegetables are softened add the roasted garlic, salt, pepper, basil, oregano and stir together until incorporated. Pour in the tomatoes. Fill the empty can with water and add it to the pan. Bring to a boil then lower the heat to a simmer. Simmer for 1 hour, uncovered. Stir occasionally. Once sauce is ready carefully pour it into the food processor and puree until smooth.
LINDA'S BEEF MARINADE
I created this over 20 years ago when I got tired of typical honey and teriyaki marinades. Red wine, brown mustard and herbs make this marinade unique. Play around with the ingredients to get the taste you want.

- In a large jar with a tight-fitting lid, mix the dry red wine, teriyaki sauce, honey, spicy brown mustard, dried minced onion flakes, garlic powder, fines herbs and ground black pepper. Seal the jar, and shake until the ingredients are well-mixed.
- Place steak or beef tips in a resealable plastic bag. Pour dry red wine mixture into the bag. Place in the refrigerator and allow to marinate at least 8 hours, turning the bag occasionally, before grilling as desired.

SANDY'S SPECIAL BEEF MARINADE
This made our steaks absolutely mouth-watering! A combo of recipes were my inspiration, plus a few ingredients from an old family recipe. Pour over up to 3 pounds of beef and marinate overnight in refrigerator before grilling.

- In a large bowl, whisk flour and sugar. In another bowl, whisk eggs, milk and whiskey until blended. Add to dry ingredients, stirring just until moistened. Fold in apples and zest., In an electric skillet or deep fryer, heat oil to 375°. Drop batter by tablespoonfuls, a few at a time, into hot oil. Fry until golden brown, about 2 minutes on each side. Drain on paper towels. Dust with confectioners' sugar.

JEANNE'S STEAK FAJITAS WITH SPECIAL MARINADE
This recipe was inspired by Alton Browns Fajita Marinade. If skirt steak is not available, any lean beef steak not more than 1/2 inch thick will do. This smells amazing on the grill.

Steps:
- Place all ingredients, except meat, in blender.
- Blend for 1 minute.
- Place meat in large plastic bag and pour marinade over all.
- Close top securely and make sure all meat is covered with marinade.
- Place in refrigerator for at least one hour.
- Grill on high to desired doneness, or 5-10 minutes each side.
- remove from grill and cover with aluminum foil to rest for at least 30 minutes.
- Slice thinly and mix with any juices from resting plate.
- Serve with grilled or sauted onions and bell peppers, salsa, sour cream and flour tortillas.

NONI'S SPECIAL MARINADE
I got this recipe from the Fresno Bee at least 20 years ago, and it has never failed me. It is especially great when making beef kabobs which has become an Easter tradition at my house. The ingredients are nice because they seem to be what most of us always have on hand.
