CLASSIC BOLOGNESE SAUCE



Classic Bolognese Sauce image

This is the best bolognese sauce I have ever had. It is a very meaty sauce that you serve over linguine. It is from Cooks Illustrated and I have made this recipe for years. It never fails to be yummy! If you can't find the different types of meat, you can use 3/4 pound meatloaf mix. This recipe is enough to sauce 1 pound of linguine.

3 tablespoons unsalted butter
2 tablespoons onions, minced
2 tablespoons carrots, minced
2 tablespoons celery, minced
1/4 lb ground chuck
1/4 lb ground veal
1/4 lb ground pork
1 cup whole milk
1 cup dry white wine
28 ounces whole tomatoes, chopped fine with juice reserved
salt
1 lb linguine
parmigiano-reggiano cheese

Steps:

  • Heat butter in large, heavy bottomed Dutch oven over medium heat; add onion, carrot and celery and saute until softened but not browned, about 6 minutes.
  • Add ground meats and 1/2 teaspoon salt; crumble meat with edge of wooden spoon to break apart into tiny pieces. Cook; continuing to crumble meat, just until it loses its raw color but has not browned, about 3 minutes.
  • Add whole milk and bring to a simmer; continue to simmer until the milk evaporates and only clear fat remains, 10 to 15 minutes.
  • Add wine and bring to simmer; continue to simmer until wine evaporates, 10 to 15 minutes longer.
  • Add tomatoes and their juice and bring to a simmer; reduce heat to low so that sauce continues to simmer just barely with an occasional bubble or two at the surface, until liquid has evaporated, about 3 hours (if lowest burner setting is too high to allow such a low simmer for three hours, use a flame tamer or a foil ring to elevate pan.).
  • Adjust seasonings with extra salt to taste and serve over linguine. (Can be refrigerated in airtight container for several days or frozen for several months. Warm over low heat before serving.).
  • When cooking the linguine for the bolognese sauce, don't drain the pasta too meticulously. A little water left clinging to the noodles will help distribute the very thick sauce evenly into the noodles, as will adding an extra 2 tablespoons of butter along with the sauce. Top each serving with a little grated Parmaggiano Reggiano.
  • If doubling recipe, increase the simmering times for the milk and the wine to 30 minutes each and the simmering time once the tomatoes are added to 4 hours.

"REAL" ITALIAN BOLOGNESE SAUCE



After traveling throughout Italy, savoring the fine tastes of Bolognese from the many different regions, I decided to formulate my own. Try it, you'll love it.

1/4 lb bacon
1 medium onion (finely chopped)
1 stalk celery (finely chopped)
1 large carrot (finely chopped)
1 (2 teaspoon) jar garlic or 4 cloves garlic (minced)
4 tablespoons butter or 4 tablespoons margarine
3 tablespoons olive oil
1 lb lean ground beef
1/2-3/4 lb ground pork
1 (8 ounce) can beef consomme
1 cup dry white wine
1 (28 ounce) can s&w italian style crushed tomatoes (or other)
1 teaspoon salt
1/2 teaspoon black pepper
1 -1 1/2 teaspoon rubbed sage
1 tablespoon oregano
1/2 teaspoon red pepper flakes
1/4 teaspoon nutmeg
1 cup milk (I use 2%)
1 lb small penne pasta

Steps:

  • In a Dutch Oven or Medium Size Pot, heat butter and olive oil over medium heat until butter begins to froth.
  • Add onion, celery, carrot, garlic, and bacon.
  • Cook until onions are translucent (about 8 to 10 minutes).
  • Remove bacon and remove fat.
  • Chop lean portions of bacon in small pieces and return to pot.
  • Add Ground beef and ground Pork, and cook until meat loses red, raw color.
  • Raise heat and add wine and consomme.
  • Cook sauce until wine and consomme are mostly evaporated.
  • Turn heat down to simmer and add oregano, salt, pepper, sage, red pepper flakes, and nutmeg.
  • Let cook for approximately 20 minutes.
  • Add crushed tomatoes and bring heat to a boil.
  • Once the mixture comes to a boil, return to simmer.
  • Let sauce simmer (very slowly) partially covered for about 2 to 4 hours (the longer the better), stirring occasionally to prevent sticking.
  • About 5 to 10 minutes before serving, add milk.
  • Sauce can now be added to cooked Penne Pasta, Spaghetti or many other Pastas to your liking.
  • Remaining sauce may be frozen for up to two months for future use.

Nonna Consuelo (Kelly Ripa's Mother-In-Law) made an appearance on "Mom's Week" on LIVE with Kelly & Michael to show her authentic Italian Bolognese Sauce. I have made this many times, and I can't go back to any other recipe. This sauce freezes well; feel free to double or triple the recipe to make a big batch.

3 lbs ground beef
3 (28 ounce) cans crushed tomatoes with puree
1 large sweet onion
5 celery ribs
1 lb carrot
5 big garlic cloves
2/3 cup virgin olive oil
2 beef bouillon cubes
1/4 teaspoon ground black pepper
1 cup fresh basil or 3 tablespoons dried basil
1 tablespoon dried oregano
5 teaspoons sugar (or as needed depending on the acidity of the tomatoes)
1 (6 ounce) can tomato paste (optional)

Steps:

  • Brown, crumble and drain the meat. Set it aside.
  • Peel onion, carrots and celery. Cut them in small pieces and finely chop them in food processor to a puree consistency.
  • In a 10 quart non-stick pot pour the olive oil and cook the pureed vegetables for 10 minutes, stirring frequently, at medium heat.
  • Add the meat, the tomatoes, the bouillon cubes, the garlic, the pepper and the sugar to the cooked vegetables.
  • Cook at low heat for 10 minutes, stirring frequently.
  • Finely chop the basil and crush the oregano. Add them to the cooking sauce.
  • Cook the sauce for an additional 1½ hours. Add the can of tomato paste to thicken sauce, if needed.
  • Remove the garlic, put it on a small dish and crush it into a puree consistency using a fork. Put it back in the sauce, stirring thoroughly.
  • Cook sauce for 5 more minutes.
  • **Note: Generally, the sauce is done when the garlic is soft.
