AUTHENTIC ITALIAN PASTA SAUCE RECIPE
This is my Nonna's Italian Pasta Sauce recipe and it is filled with fresh herbs and San Marzano tomatoes. The addition of carrots gives the sauce the perfect amount of sweetness without needing sugar. This tomato sauce recipe goes great with your favorite type of pasta and is the ideal Sunday meal.

Steps:
- Heat olive oil & butter in a large pot or Dutch oven over medium-high heat.
- Once hot, add the diced onion, carrots & celery and saute until the onion is translucent, about 5 minutes.
- Add in 1 teaspoon of salt and the garlic and cook for 1-2 more minutes.
- Pour in the red wine and allow it to simmer for 5 minutes. Next, add in the can of crushed tomatoes, more salt, black pepper to taste, basil and thyme.
- Cover the pot, bring it to a slight boil, turn down the heat to low & simmer for 45 minutes to 1 hour.
- Turn off the heat, allow the sauce to cool for a few minutes, then blend with an immersion or a traditional blender until smooth.

NONNA CONSUELO'S AUTHENTIC ITALIAN BOLOGNESE SAUCE (FROM LIVE WI
Nonna Consuelo (Kelly Ripa's Mother-In-Law) made an appearance on "Mom's Week" on LIVE with Kelly & Michael to show her authentic Italian Bolognese Sauce. I have made this many times, and I can't go back to any other recipe. This sauce freezes well; feel free to double or triple the recipe to make a big batch.

Steps:
- Brown, crumble and drain the meat. Set it aside.
- Peel onion, carrots and celery. Cut them in small pieces and finely chop them in food processor to a puree consistency.
- In a 10 quart non-stick pot pour the olive oil and cook the pureed vegetables for 10 minutes, stirring frequently, at medium heat.
- Add the meat, the tomatoes, the bouillon cubes, the garlic, the pepper and the sugar to the cooked vegetables.
- Cook at low heat for 10 minutes, stirring frequently.
- Finely chop the basil and crush the oregano. Add them to the cooking sauce.
- Cook the sauce for an additional 1½ hours. Add the can of tomato paste to thicken sauce, if needed.
- Remove the garlic, put it on a small dish and crush it into a puree consistency using a fork. Put it back in the sauce, stirring thoroughly.
- Cook sauce for 5 more minutes.
- **Note: Generally, the sauce is done when the garlic is soft.
NONNA'S PASTA SAUCE
This is my nonna's old standby, when I was growing up, I would live for the weekends that we went to visit her, cause she'd make this everytime...It isnt loaded with ingrediants, and thats what makes it so good. Simple, fresh Italian flavours. It will nver taste the same as hers but its close enough for me!

Steps:
- Pre-heat oven to 350°F.
- Put meat on a baking tray and bake, until juices run clear, about 20 minutes Process the carrot and onion together in a food processor, till smooth.
- Fry garlic in oil in a large saucepan, add the carrot and onion and bay leaf, fry for 5 minutes.
- Add tomatoes and wine, bring to a boil.
- Lower heat to simmer and add the cooked meat, leaving whole.
- Add spices.
- Let simmer 2hrs on low.
- Serve over pasta.
- Top with freshly grated Parm cheese. When the sauce is ready to serve take the meat out and put on a serving dish and pass with the sauce.......the meat will be melt in your mouth good!!
