Steps:
- Cook the noodles according to pack instructions.
- Meanwhile, heat the oil in a wok or large frying pan, then stir-fry the ginger, garlic, carrot, pepper and mangetout, sugar snap or frozen peas over a high heat for 2-3 mins.
- Drain the noodles thoroughly, add to the pan with the onions and beansprouts, if using, then stir-fry for 2 mins.
- Mix together the soy sauce and vinegar, stir into the pan, then cook for 1-2 mins. Divide between individual plates or bowls and serve immediately.

STIR-FRIED BEEF ON NOODLE PANCAKE

Steps:
- Heat 3 inches of water in medium saucepan to boiling. Add noodles and boil 3 minutes. Pour into sieve, rinse with cold water, and drain well.
- Toss beef, ginger, garlic, red pepper flakes, and 2 T. soy sauce in mixing bowl. Let stand.
- Mix remaining 1 T. soy sauce, the vinegar, and sugar in small bowl.
- Heat 2 T. oil in 9-inch nonstick skillet over medium-high heat. Add noodles and spread evenly in pan. Cook until bottom is golden and crusty, 8-10 minutes. Slide pancake onto skillet lid. Add 1 T. oil to skillet and heat. Carefully flip pancake into skillet and cook until second side is golden and crusty, about 5 minutes. Slide pancake onto serving plate. Cover with foil to keep warm.
- Add 2 T. oil to same skillet and heat over high heat. Drain beef and add to skillet. Stir-fry just until beef no longer looks raw, 3-4 minutes. Remove beef with juices to bowl. Add remaining 1 T. oil to skillet and heat over high heat. Add carrots and celery and stir-fry until crisp-tender, about 2 minutes. Return beef to skillet, pour in vinegar mixture, and toss quickly to combine. Spoon beef mixture noodle pancake and serve.

CRISPY NOODLE PANCAKE

- Cook noodles in large pot of boiling water 1 1/2 minutes, stirring occasionally. Drain. Rinse with cold water. Drain well. Toss with green onions, 1 teaspoon vegetable oil, and pepper in bowl.
- Heat 1 1/2 tablespoons vegetable oil and sesame oil in a heavy 9-inch nonstick skillet over medium heat. Add noodles and flatten slightly. Cook without stirring until light brown, about 6 minutes. Turn and cook second side until light brown, 6 minutes. Drain on paper towels. Cut into wedges.
NOODLE PANCAKE WITH STIR-FRIED BROCCOLI AND TAMARI WALNUTS
This is a recipe from the book "365 Ways to Cook Pasta". It was so amazingly delicious I had to share it! We served this with pork chops marinated in leftover dumpling dipping sauce from the Blue Ginger cookbook. The meal came together very quickly and would be delicious and a neat presentation for company. One word of caution: an extra pair of hands can be very useful when turning the pancake. Also, I used Hodgesdon Mill Whole Wheat Fettucini with Milled Flax Seed since that was what I had on hand, and it was AWESOME! Increase the cooking time when boiling and when making the pancake if using a thicker noodle like that.

- Tamari Walnuts:.
- To make the tamari walnuts, heat the oil in a medium skillet. Add the walnuts and stir-fry until fragrent, about 10 seconds. Sprinkle with tamari or soy sauce and stir-fry until coated and crisp, about 20 seconds. Do not overcook. Spoon onto a plate to cool.
- Pancake and Broccoli:.
- Cook the noodles in a large pot of boiling salted water until al dente, about 5 minutes. Drain, rinse with cold water, and drain again.
- Place the noodles on a clean kitchen towel and blot to remove excess moisture. Return noodles to cooking pot and toss with 1 t sesame oil. Set aside.
- In a small bowl, stir the remaining teaspoon sesame oil, rice vinegar, hoisin sauce, soy sauce, sugar, cornstarch and salt until smooth. Set aside.
- Select two large heavy skillets, or a skillet and a wok. Heat 3 T oil in each pan.
- Add the noodles to the skillet, arranging them in a uniform layer. Cover and cook over med-high heat 5 to 6 minutes, shaking skillet occasionally to prevent sticking.
- To the wok or second skillet, add the ginger, garlic and red pepper. Stir-fry until fragrent, about 20 seconds, taking care not to burn the garlic. Addd the broccoli and stiry fry until coated with the oil and sesasonings. Cover and cook over med heat until crisp-tender, about 4 minutes. Add the sauce mixture and stir to coat. Stir-fry over med heat until thickened, about 3 minutes.
- When the noodle pancake is browned and crisped on one side, place a large platter or lid on top of skillet and carefully invert so that pancake is crisp-side up on plate. Slide the pancake, crisp side up, back into the skillet and brown the other side, covered, over med-high heat about 3 minutes.
- To serve, transfer the moodle pancake to a platter. Spoon the broccoli mixture on top and sprinkle with the tamari walnuts. Use a large spatula to cut into wedges and serve immediately.
- For Vegan option use eggless pasta.

NOODLE PANCAKE: STIR-FRIED SUBGUM TOPPING

- 1. Soak dried mushrooms. 2. Sliver pork. Combine cornstarch and soy sauce then add to pork and toss to coat. 3. Shell and devein shrimp cut each in two. Combine the second quantity of cornstarch, and sherry then add to shrimp and toss. 4. Sliver chicken. Dredge in the third quantity of cornstarch, mixed with salt. 5. Sliver abalone, smoked ham, bamboo shoots and soaked mushrooms. 6. Heat oil. Add pork, chicken and shrimp stir-fry until pork loses its pinkness and shrimp turns pink. 7. Add ham, bamboo shoots and mushrooms stir-fry 1 to 2 minutes more. 8. Add stock, remaining soy sauce, sherry and salt bring to a boil. Add abalone and cook, covered, 2 minutes over medium heat. 9. Meanwhile blend the remaining cornstarch and cold water to a paste then stir in to thicken. Pour mixture over noodle pancake and serve. VARIATIONS: * In step 6, add to the hot oil, before the pork, etc., 1 or 2 slices fresh ginger root, crushed and 1 scallion stalk, cut in 1-inch sections stir-fry a few times. THAI STIR-FRIED NOODLES (PAD SEE EW)
Chicken, broccoli, and rice noodles are cooked in a sweet soy sauce in this quick and easy Thai noodle dish that's ready in just 20 minutes.

- Place rice noodles in a large bowl and cover with boiling water. Soak until tender, 4 to 8 minutes. Rinse thoroughly with water and leave in a colander to drain.
- Combine oyster sauce, water, dark and regular soy sauce, vinegar, and sugar in a small bowl.
- Place a wok over high heat; add oil and mince garlic straight into the wok. Heat until oil is hot and garlic is starting to turn golden, about 1 minute. Add chicken and broccoli; stir-fry for 1 minute. Move chicken and broccoli to one side. Crack egg into the skillet and scramble it, about 1 minute.
- Add noodles and sauce; fold gently to combine, until sauce evenly coats the noodles and caramelizes a bit, and chicken is cooked through, 1 to 2 minutes.

PANFRIED EGG NOODLES WITH CHICKEN, SHRIMP, AND VEGETABLES

- Cook the egg noodles in a large pot of boiling water for 3 to 4 minutes, or until cooked but still firm. Drain, flush with cold water, and drain again. Transfer to a large plate or baking dish. Gently toss with a scant 1/2 teaspoon salt and the sesame oil, and then spread the noodles out to dry and cool. Once the noodles are cool, they are ready for panfrying. Or, you may put them in an airtight container or zip-top plastic bag and refrigerate them overnight; bring them to room temperature before panfrying.
- To make the marinade, in a shallow bowl large enough to accommodate the chicken and shrimp, combine the sugar, cornstarch, white pepper, soy sauce, and sesame oil and mix well. Add the chicken and shrimp and use chopsticks to coat evenly. Set near the stove.
- To make the flavoring sauce, in a small bowl, combine the sugar, salt, fish sauce, soy sauce, sesame oil, and water and stir to dissolve the sugar. Set near the stove.
- Bring a pot of salted water to a rolling boil. Drop in the carrot. When the water returns to a boil, add the bok choy and cook for about 1 minute, or until the bok choy is tender and bright green. Drain the vegetables, flush with cold water, and drain again. Add the wood ear mushrooms and set near the stove. Place a plate near the stove for the holding the elements of the stir-fry as you cook them.
- To panfry the noodles, heat 1 1/2 tablespoons of the canola oil in a 10-inch nonstick skillet over medium heat. Add the noodles and spread them out into a large, flat pancake. Add the water, cover, and cook for 1 to 2 minutes, or until the noodles have softened. Uncover and panfry the noodles, undisturbed, for 4 to 6 minutes, or until they are a nice crunchy brown on the bottom. As the noodles crisp, they will move in a solid mass when you shake the skillet handle. Use a wide spatula to turn the noodles over, or flip them over with a confident sharp jerk of the skillet handle. Dribble 1 1/2 tablespoons of the oil into the pan, adding it at the rim. Fry the second side for 5 to 7 minutes. Slide the finished noodle pancake out onto a large serving plate. Use kitchen scissors to cut it into 6 to 8 wedges. If you like, put the plate of noodles in a warm oven while you stir-fry the topping.
- In a wok or large skillet, heat 2 tablespoons of the oil over medium-high heat. Add the scallions and ginger and stir-fry for about 15 seconds, or until fragrant. Bank the scallions and ginger on one side of the pan, and then add the chicken and shrimp, spreading them out into a single layer. Let cook, undisturbed, for about 1 minute. When they start to brown, use a spatula to flip and stir-fry them, incorporating the scallions and ginger, for another 1 to 2 minutes, or until the chicken and shrimp have turned color but are still undercooked. Transfer to the plate.
- Add the remaining 1 1/2 teaspoons oil to the pan. Add the vegetables and stir-fry for about 1 minute, or until heated through. Give the flavoring sauce a stir and add it to the pan. When it begins to bubble, return the chicken and shrimp to the pan and move them around for about 1 minute to combine everything and finish cooking the chicken and shrimp. Give the cornstarch mixture a stir, add to the pan, and stir for about 30 seconds, or until the sauce is smooth and thick. Pour the topping over the noodles and serve at once.
