AUTHENTIC NORWEGIAN WAFFLES
Easy Norwegian Waffles are sweet, crisp, and perfectly delicious. These heart shaped waffles are an amazing breakfast or dessert.

Steps:
- In a large mixing bowl use a hand mixer to beat together eggs, sugar, and vanilla extract until creamy.
- Mix in flour, baking powder, and salt until just combined
- Add in sour cream and melted butter and mix until the batter is smooth. Let rest 20 minutes before making waffles.
- Heat a heart shaped waffle iron and spray with nonstick cooking spray or brush with melted butter.
- Pour 1/4 cup of the batter onto the waffle iron, close, and cook until light brown. Serve with whipped cream, creme fraiche or sour cream. Traditional toppings include lingonberry jam, brown cheese, sour cream, and berries.

NORWEGIAN WAFFLES RECIPE (HEART WAFFLES)
These Norwegian waffles, or heart waffles, are deliciously buttery and soft and when fresh they have a delectable crisp exterior.

- Melt the butter and let it cool while you prepare the rest.
- In a medium bowl, whisk eggs and sugar together for a couple of minutes using a handheld mixer or stand mixer (high speed). You don't need that super white and fluffy consistency, just enough for a few air bubbles to appear.
- Add in the milk and pure vanilla extract and whisk until just combined. Reduce to low speed and then add in the baking powder (and vanilla bean powder if you use that) and a third of the flour. Slowly mix until you no longer see bits of flour, then add another third of the flour. Continue until all flour is used, but do not mix more than necessary.
- At the end, stir or slowly whisk in the melted butter. Let this mixture rest for 30 minutes to make the waffles fluffier and easier to make.
- Heat the waffle iron to the maximum heat setting and add butter or cooking spray. Once hot, add roughly 1/2 cup (125 milliliters) of batter and cook undisturbed for 1 1/2-2 minutes. Slowly open the lid and if the waffle sticks to both sides, close the lid and cook another 30 seconds. You may need to add butter to the iron between every 2nd or 3rd waffle.
- Serve with butter, strawberry jam and sour cream. Enjoy!

- Preheat a waffle iron.
- Beat together eggs and sugar with an electric mixer until fluffy. Pour in shortening, milk, salt, and vanilla; mix until well blended. Sift together the flour and baking powder. Mix the flour into the liquid.
- Spoon 2/3 cup of batter onto the preheated waffle iron at a time. Close the iron and cook until steam no is no longer coming out and waffle is browned.

SCANDINAVIAN SWEETHEART WAFFLES
Heart-shaped waffles are a traditional treat throughout Scandinavia, made crisp in Sweden and soft-textured in Norway. Topped with jam or berries and whipped cream, or wafer-thin slices of gjeitost (Norwegian brown goat cheese), they're a favorite with coffee or as a snack. This recipe is my adaptation of Norwegian-style waffles served by my friends Megan and Sverre in Trondheim, Norway.

- Place egg yolks into a large mixing bowl with the sugar, and beat until light and frothy. Mix in the vanilla sugar and water until evenly combined, and stir in half the melted butter, half the buttermilk, half the flour. When mixture is smooth, mix in remaining butter, buttermilk, flour, cardamom, and salt, and beat again to a smooth batter.
- In a separate bowl, beat the egg whites with an electric mixer until they form stiff peaks; gently fold the egg whites into the batter, incorporating as much volume as possible.
- Preheat a waffle iron according to manufacturer's directions.
- Spoon about 1/3 cup of batter into the preheated waffle iron, close the lid, and cook until the waffle is golden brown, about 5 minutes. Remove waffle to a plate. If using a heart-shaped iron, break the waffle into individual hearts to serve. Repeat with remaining batter.

- Make a well in the dry ingredients, and slowly pour in the wet ingredients while whisking it so it just comes together. Pour in the melted butter. Whisk everything together until it is smooth, being careful not to over mix. Allow to sit for 10 minutes.
- In the meantime, heat up your waffle iron. When you are ready, make sure your waffle iron is fully hot. Lightly brush the bottom and top with melted butter. Gently scoop on the waffle batter, so it just covers the surface of the waffle iron. For my waffle iron, it about 1/4 cup of batter per waffle.
