Don't want to go through the drive-thru? No problem. Just whip up this copycat Taco Bell beef recipe in the comfort of your own home.

1 tablespoon olive oil
2 pounds ground beef
1/4 cup oats
1 teaspoon MSG such as Ac'cent
3 tablespoons chili powder
2 tablespoons salt
2 teaspoons sugar
2 teaspoons ground cumin
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

Steps:

  • Place the oats in a food processor and pulse until ground into a flour.
  • In a large skillet at medium heat, pour the olive oil, then add the beef and 2 tablespoons of oat flour. Cook, breaking up with the back of a wooden spoon, until no longer pink.
  • Add MSG, chili powder, salt, sugar, cumin, onion powder, and garlic powder. Simmer over medium heat, stirring occasionally, for about 5 minutes.

If you read the ingredients in Taco Bell's taco meat, there's cocoa powder (as here) and smoky flavorings (so the smoked paprika here). But there's also an "oat isolate" which undoubtedly thickens the mixture to give it that characteristic, smooth consistency. We can match that with steel-cut oats, which absorb much of the excess liquid, especially during the natural release, to give the meat its much-beloved texture. Many copycat recipes are also soupy and require thickening afterwards (or worse yet, draining, which removes much of the aromatic flavor you worked to get into the dish in the first place). We solve the soupiness with low pressure which requires much less liquid.

2 tbsp vegetable (canola, or other neutral-flavored oil)
2 lbs lean ground beef (preferably 90 percent lean or more)
2 beef bouillon cubes (gluten-free (if necessary), crumbled)
2 tbsp dehydrated onion flakes
1 1/2 tbsp standard chili powder
2 tsp unsweetened cocoa powder (do not use a powdered cocoa mix)
2 tsp garlic powder
2 tsp mild smoked paprika
2 tsp granulated white sugar
1 tsp onion powder
1/2 tsp ground dried cayenne
1/4 cup raw steel-cut oats ((certified gluten-free if necessary - do not use standard rolled or quick-cooking oats))
3/4 cup Water

Steps:

  • Press Sauté and set for Medium, Normal or Custom 300°F.
  • As the pot heats, warm the oil in the insert set in a 5- or 6-quart Instant Pot. Crumble in the ground beef and cook, stirring often, until lightly browned, about 5 minutes.
  • Stir in the crumbled bouillon cubes, onion flakes, chili powder, cocoa powder, garlic powder, smoked paprika, sugar, onion powder, and cayenne until fragrant, about 30 seconds. Add the steel-cut oats and stir well. Pour in the water and scrape up any browned bits on the pot's bottom. Turn off the heat and lock the lid on the pot.
  • Set the Instant Pot for Pressure Cook/Manual and set to LOW pressure for 6 minutes.
  • When the pot has finished cooking, turn it off and let the pressure return to normal naturally, about 15 minutes. Unlatch the lid and open the cooker. Stir well and set aside for a couple of minutes so the meat continues to absorb the sauce.

1 1/3 lbs lean ground chuck
1 1/2 tablespoons masa corn flour
4 1/2 teaspoons chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon seasoning salt
1/2 teaspoon paprika
1/4 teaspoon cumin
1/2 teaspoon garlic salt
1/4 teaspoon sugar
1 teaspoon instant minced onion
1/2 teaspoon beef bouillon
12 taco shells
1 cup shredded cheddar cheese
1/2 head shredded lettuce
2 roma tomatoes, diced

Steps:

  • Meat Directions.
  • Mix together all ingredient except the meat.
  • Stir the spice mixture well making sure that all spices have been blended well.
  • Crumble ground beef and brown stirring well.
  • Remove from heat, rinse with hot water and drain water and grease from beef.
  • Return beef to the pan and add spice mix.
  • Add 3/4 - 1 cup water to ground beef and seasoning and simmer on medium low temperature for 20 minutes.
  • Simmer until most of moisture has cooked away.
  • Remove from heat when moisture in meat as dissipated but meat is not dry.
  • Assembling the taco.
  • You can refresh the taco shells by placing them in a baking dish into a hot oven, 350 degrees for 7-10 minutes.
  • To assemble tacos add a couple of tablespoons of ground meat, lettuce, cheese, tomatoes, and sour cream if desired.

I use the Top Secret Recipe cookbooks and have found the Taco Bell Beef Soft Tacos taste pretty close, enough that we don't go there anymore! I use this meat for crunchy homemade tacos as well. This recipe calls for fat-free flour tortillas, and cheese. I have made them both ways-fat full and fat free.

1/2 lb lean ground beef (preferably 7% fat)
2 tablespoons all-purpose flour
3/4 teaspoon salt
1/4 teaspoon dried onion flakes
1/4 teaspoon paprika
1 1/2 teaspoons chili powder
1 dash garlic powder
1 dash onion powder
1/4 cup water
5 (6 inch) flour tortillas
1/2 cup shredded iceberg lettuce, plus
2 tablespoons shredded iceberg lettuce
5 tablespoons shredded cheddar cheese

Steps:

  • In a medium bowl combine the uncooked ground beef with flour and all the spices. Use your hands to throroughly incorporate everything into the ground beef.
  • Preheat skillet over medium heat and add the beef mixture to the pan along with the water. Brown the beef for about 5-6 minutes. Use a wooden spoon to break up the meat as it cooks.
  • You could heat up the tortillas a bit in the microwave by wrapping them in a moist cloth or paper towels. Heat for about 25 seconds.
  • Spoon 3 tablespoons of meat into center of tortilla. Place about 2 tablespoons of the shredded lettuce ontop.
  • Sprinkle about 1 tablespoon cheese over lettuce.
