MY MOTHER'S SHEPHERD'S PIE



My Mother's Shepherd's Pie image

3 pounds russet potatoes
Kosher salt
3/4 cup milk
1/2 cup sour cream
6 tablespoons unsalted butter, melted
2 large egg yolks
Freshly cracked black pepper
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
1 cup pearl onions, fresh or frozen
2 tablespoons canola oil
1/2 yellow onion, diced
2 sprigs fresh rosemary, minced
2 pounds ground lamb
Kosher salt and freshly ground black pepper
2 tablespoons tomato paste
1 1/2 tablespoons all-purpose flour
1 tablespoon sherry vinegar
1 cup chicken stock
1 cup frozen peas and carrots
1/2 cup fresh parsley, chopped
3 tablespoons unsalted butter, melted
1/4 cup grated Parmesan
Chopped fresh parsley, for garnish

Steps:

  • For the potato topping: Peel and cube the potatoes into 1-inch dice. Put in a large pot and add enough cold water to cover the potatoes by 1 inch. Season the water with salt and bring to a boil. Boil the potatoes until tender, about 10 minutes. Drain the potatoes and pass through a ricer. Add the milk, sour cream, melted butter and egg yolks to the potatoes and stir with a wooden spoon until smooth. Season with salt and pepper and reserve.
  • For the filling: Preheat the oven to 375 degrees F.
  • In a medium saute pan over medium heat, melt the butter with the olive oil. Add the pearl onions and cook, shaking the pan occasionally so the onions brown on all sides, until caramelized, about 5 minutes. Set aside.
  • In a large ovensafe shallow braising pan, heat the canola oil over medium-high heat. Add the onions and rosemary and cook, stirring often, until the onions are slightly browned and soft, 3 to 5 minutes. Add the lamb and season with salt and pepper. Continue to cook until the lamb cooked through, 4 to 6 minutes. Add the tomato paste, flour and sherry vinegar and cook for 2 more minutes. Add the chicken stock, peas and carrots and pearl onions and bring to a boil. Season with salt and pepper and stir in the parsley.
  • For the additional topping: Top the lamb mixture with an even layer of the potato topping. Drizzle with the melted butter and sprinkle with the Parmesan. Transfer to the oven and bake until the topping is lightly browned, about 40 minutes. Garnish with additional parsley.

Bells Poultry Seasoning makes this different. We also use 1/2 ground pork and 1/2 gound lamb...no beef.

1/2 cup(s) flour
1/2 cup(s) water
1 package(s) frozen corn
- mashed potatoes
1 tablespoon(s) bells poultry seasoning

Steps:

  • This recipe makes 2 pies! Heat a small amount of oil in a fry pan, add onions. When onions are soft add the pork and lamb.
  • Brown meat. Add salt, pepper, bells poultry seasoning, and wine. Let reduce a bit and taste adjust seasonings if needed.
  • Mix flour and water, then add to the fry pan with the meat. Cook until thickened.
  • Add meat to two pie dishes, top with frozen corn and top with mashed potatoes.
  • Place in 350 oven for 35 mins...freeze the extra one!

I'm not sure where it came from, but I know there are many variations. This is Mom's! Try serving with cranberry sauce or other fruit of your choice.

9 potatoes - peeled and cubed
1 ½ pounds ground beef
1 (6 ounce) can tomato sauce
2 tablespoons chopped fresh parsley
1 dash Worcestershire sauce
½ teaspoon salt
½ teaspoon ground black pepper
2 (15 ounce) cans green beans, drained
2 tablespoons all-purpose flour
2 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the potatoes and water to cover in a large pot over high heat. Boil for 15 minutes. Meanwhile, brown the ground beef in a large skillet over medium high heat; drain excess fat.
  • To the ground beef, add the tomato sauce, parsley, Worcestershire sauce to taste, salt, ground black pepper and green beans. In a separate small bowl, mix the flour with the 3 tablespoons water and stir into the beef mixture.
  • Stir all together well. Drain the potatoes, mash and spread over the beef mixture Place 2 to 3 vent holes through the mashed potatoes.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes. Brush the milk over the potatoes for the last 5 minutes of baking.

1 pound ground round
1 cup water
2 cubes beef bouillon
1 cube chicken bouillon
1 teaspoon dried rosemary
½ teaspoon salt
1 teaspoon ground black pepper
1 teaspoon steak seasoning
1 tablespoon dried minced onion flakes
1 ½ cups frozen mixed vegetables

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain, cool and mash.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.
  • In a large heavy skillet, saute meat until browned on all sides, stirring occasionally. Drain excess fat and return meat to pan over medium heat. "It's the best comfort food." The recipe is easy to adjust based on what you have: You can substitute ground beef or turkey for the lamb or swap the potato for cauliflower or turnip purée.

  • Top the lamb mixture with an even layer of the potatoes. For the topping: Drizzle the potatoes with the melted butter and sprinkle with the Parmesan. Transfer to the oven and bake until the potatoes are lightly browned, about 40 minutes. Garnish with additional parsley.

When you come home from work and need a hearty dinner it only takes minutes to put together. The hamburg is already cooked and the Simply Potatoes are ready in 2 mins!

2 lbs hamburger (I use 85% lean)
1 (10 1/2 ounce) can cream of mushroom soup
1 cup shredded cheddar cheese
1 (15 1/4 ounce) can corn
1 (24 ounce) package Simply Potatoes (I use garlick mashed)

Steps:

  • Pre-Heat oven to 350 degrees.
  • Scramble hamburg in a frying pan, drain grease return to pan.
  • Add 1 can of cream of mushroom soup heat to combine with hamburg.
  • Transfer to a casserole dish (I use an 8" x 8").
  • Next sprinkle 1 cup of shredded sheddar cheese over top.
  • Drain water out of corn and add layer of corn over the cheese.
  • Heat Simply Potatoes for 2 mins in microwave, then stir up good till fluffy.
  • Spread over top of corn layer.
  • Bake in 350 degree oven about 15-20 mins, just till the top peaks of potatoes start to lightly brown.
