Nana's Homemade Chocolate Pudding image

A rich, silky homemade chocolate pudding made the same way in our family since the 50's. Cooled pudding will form a dark skin on top, which is our favorite part! Top with whipped cream, if desired.

⅓ cup white sugar
⅓ cup unsweetened cocoa powder
3 tablespoons cornstarch
¼ teaspoon salt
2 ½ cups milk
1 ½ teaspoons vanilla extract

Steps:

  • Sift and whisk sugar, cocoa powder, cornstarch, and salt together in a saucepan.
  • Heat saucepan over medium heat. Pour milk in slowly, whisking constantly until incorporated. Cook, stirring often with a metal spoon, until pudding is noticeably thicker and clings to the spoon, about 10 minutes.
  • Remove from heat and stir in vanilla extract. Divide between 4 small bowls and serve immediately, or chill in the refrigerator for at least 2 hours.

1 x 400ml tin of coconut milk
¼ cup maple syrup
1 tablespoon arrowroot powder
⅓ cup cocoa powder/raw cacao
2 tablespoons boiling water
2 large egg yolks
1 - 2 teaspoons vanilla extract
85 g dark chocolate buttons (or break up dark chocolate into pieces)

Steps:

  • Gently heat the coconut milk in a small pot.
  • While the milk is doing its thing, over a medium heat, whisk the maple syrup, arrowroot powder, cocoa powder, and boiling water.
  • Whisk in the egg yolks - one at a time.
  • Add the heated coconut milk and whisk. Continue for 5 minutes (I set my timer) or until the mixture thickens.
  • Turn off the heat and add the chocolate buttons and vanilla extract. Whisk until the chocolate has fully melted into the custard.
  • Pour into your serving vessel of choice (mine cost me about $1.50 from Ikea!) and refrigerate until ready to serve.

4 1/2 ounces best-quality bittersweet chocolate, finely chopped
8 tablespoons (1 stick) unsalted butter
3 large eggs
3/4 cup sugar
1/4 cup Italian 00 or all-purpose flour

Steps:

  • Before you've even taken your coat off, put the chocolate and butter in the top of a double boiler above simmering water. Whisk every now and again until melted. In a bowl, whisk together the eggs, sugar, and flour until just blended. Gradually whisk in the melted chocolate mixture. Set aside.
  • Grease 4 (1-cup) ramekins with butter and add flour to cover the butter, tapping the ramekins to get rid of excess. Preheat the oven to 400 degrees F about half an hour before you want to eat the puddings. And I'd leave cooking them until you've finished the main course. It doesn't matter if there's no food on the table for 10 minutes; and these do have to be done at the last minute.
  • So, pour the mixture into the ramekins and put them on a baking sheet in the oven for 10 to 12 minutes, until the tops are firm and cracking slightly and the edges set. Serve immediately and consider providing a pitcher of cold, cold cream for people to pour into their pudding's hotly deliquescing interior as they eat.

  • Preheat oven 325 degrees.
  • Beat first five ingredients in electric mixture until light and fluffy.
  • Add eggs; beat well.
  • In a separate bowl, mix together flour, baking soda and salt. Stir into butter mixture.
  • Add into butter mixture the chocolate chips and all chopped nuts.
  • Drop batter by 1/4 cupfuls onto an ungreased cookie sheet, spacing apart. Bake until cookies are golden brown, about 14 -16 minutes.
  • Cool on racks.

If you love chocolate cake you have to try this one. You'll be converted forever. This chocolate cake is made with chocolate pudding mix, but it's not a pudding! The recipe was passed on to me by one of my clients. I thought I made a great chocolate cake until I tried this one, now it's the only one we will use and it's just sooo very easy to make, so light to taste, so chocolatey and stays fresh for ages. I also use this recipe to make cupcakes for the kids lunches. It's a sure winner for all. Hope you enjoy.

470 g chocolate cake mix
100 g instant chocolate pudding mix
3/4 cup oil
3/4 cup water
3 eggs

Steps:

  • Set oven to 190oC-200oC.
  • Grease and flour 9in cake pan or two smaller loaf pans.
  • Mix all ingredients in a bowl until thoroughly mixed then pour into your pan.
  • Bake until cake starts to pull away from the sides. Should be about 1/2 hr depending on which pan you use.
  • Invert cake onto wire rack cooler.
  • When cold, ice with your favourite frosting.

1 ½ cups chocolate hazelnut spread, warmed
24 graham crackers, halved
2 packets instant chocolate pudding
4 cups milk
8 oz cream cheese
½ cup sugar
1 teaspoon vanilla
½ cup chocolate, melted
2 cups chocolate frosting
raspberry, for garnish
graham cracker crumb, for garnish
chocolate shaving, for garnish

Steps:

  • Line a baking sheet with parchment paper and grease with nonstick cooking spray.
  • Spread the chocolate hazelnut spread into an even rectangle, leaving ¼ inch (6 mm) between each cracker.
  • Place 20 graham cracker halves on top of chocolate hazelnut mixture and freeze until solid, about 30 minutes.
  • Cut between the graham cracker pieces with a knife. Lay a cutting board on top of the graham crackers and invert the baking sheet.
  • Carefully peel the parchment paper from the chocolate hazelnut layer. Return to freezer until ready to build cake.
  • In a large bowl, combine the instant pudding and milk, and whisk until fully incorporated. Allow to set for at least five minutes.
  • In a medium bowl, combine the cream cheese, sugar, and vanilla, and mix until fully incorporated.
  • Fold in the melted chocolate until fully incorporated.
  • Add the cream cheese mixture to the pudding mixture and stir until fully combined.
  • Add three quarters of the pudding mixture to the bottom of a 10-inch (25-cm) greased springform pan.
  • Make a ring along the edge of the pan with the chocolate hazelnut graham crackers pressing them until they are even with the top of the pan.
  • Leave a ¼ to ½-inch (2 to 6-cm) gap and make another ring using plain graham cracker pieces. Repeat, alternating between chocolate hazelnut and plain graham crackers, until you reach the center.
  • Fill the pan with the remaining pudding mixture and spread evenly across the top.
  • Freeze the cake for at least 4 hours.
  • Release the chilled cake from the pan and frost with chocolate frosting.
  • Garnish with raspberries, crushed graham crackers, and chocolate shavings.

2 1/4 cups whole milk
6 tablespoons sugar
2 tablespoons cocoa
2 tablespoons cornstarch
1/4 teaspoon salt
1 large egg
2 large egg yolks
5 ounces bittersweet chocolate, melted and still warm
2 tablespoons unsalted butter, at room temperature and cut into 4 pieces
1 teaspoon vanilla extract

Steps:

  • Bring 2 cups of the milk and 3 tablespoons of the sugar to a boil in a saucepan. While the milk is heating, toss the cocoa, cornstarch and salt into the work bowl of a food processor and pulse to blend; turn the ingredients out onto a sheet of wax paper. Place the egg, egg yolks and remaining 3 tablespoons sugar in the work bowl and process for 1 minute. Scrape down the sides of the bowl and add the remaining 1/4 cup milk. Process for a few seconds, return the dry ingredients to the bowl and pulse just until blended.
  • With the machine running, slowly pour in the hot milk, processing to blend. The mixture will be foamy, but the bubbles will disappear when the pudding is cooked. Pour the mixture into the saucepan and cook over medium-high heat, stirring continuously, for about 2 minutes, or until the pudding thickens. (The pudding should not boil.) Scrape the pudding into the processor, add the remaining ingredients and pulse until they are evenly blended.
  • Pour the pudding into 6 1/2-cup bowls or 1 large bowl. Chill for at least 4 hours. Serve plain or topped with heavy cream, whipped or not.
