Fresh asparagus washed
5 large oriental mushrooms dried
1/4 c Chicken broth
1 tb Cornstarch
1/4 c Bottled oyster sauce
1 ts Peanut oil
2 tb Soy sauce
1/2 lb Steak (flank or sirloin)
2 Garlic
1 ts Cornstarch
2 tb Peanut oil
1 ts Sugar

Steps:

  • Slice 1/2 pound steak across the grain into strips. Marinate for 1/2 hour in 2 Tablespoons soy sauce, 1 teaspoon peanut oil and 1 teaspoon cornstarch. In wok, heat 2 Tablespoons peanut oil. Add ginger and garlic. saute until brown. Remove and discard ginger and garlic. Stir-fry meat for about 2 minutes. Add asparagus, mushrooms and onions. Stir-fry until asparagus turns bright jade green. Stir sauce ingredients together until well blended. Pour over vegetable-meat mixture. Reduce heat. Cook 1 to 2 minutes until sauce is thickened. 1 pound beef tenderloin or top sirloin steak, cut into 3/4-inch cubes
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
2 garlic cloves, minced
1 green onion, sliced
1/4 cup butter, cubed
1 pound fresh asparagus, trimmed and cut into 2-inch pieces
1/2 pound sliced fresh mushrooms
1 tablespoon reduced-sodium soy sauce
1-1/2 teaspoons lemon juice
Hot cooked rice

Steps:

  • Toss beef with salt and pepper. In a large skillet, heat oil over medium-high heat; saute beef 2 minutes. Add garlic and green onion; cook and stir until beef is browned, 2-3 minutes. Remove from pan., In same skillet, heat butter over medium-high heat; saute asparagus and mushrooms until asparagus is crisp-tender. Add beef, soy sauce and lemon juice; heat through, tossing to combine. Serve with rice.

1 lb beef, thinly sliced and cut into 1 by 1 1/2 inch pieces
3 green onions, trimmed,cut in 1 inch diagonal pieces
1 lb firm tofu, cut in cubes or rectangles (NOT silky)
1 lb fresh green asparagus, ends trimmed,cut diagonally into 1 inch pieces,with the tips kept separate
1 piece fresh ginger, about a 1 inch cube,grated
1 tablespoon cornflour (cornstarch to Americans, NOT cornmeal)
2 tablespoons water
1 tablespoon oil
3/4 cup low sodium beef broth or 3/4 cup low sodium beef broth
1 teaspoon brown sugar
3 -4 tablespoons oyster sauce
1 tablespoon soy sauce (or to taste if broth is salty)

Steps:

  • Bring 2 to 3 cups water to a boil in a saucepan over medium-high heat.
  • When it is boiling rapidly, add all the asparagus EXCEPT the tips.
  • When the water begins boiling again, add the tips, and boil for about 1 minute.
  • The aim is for the asparagus to still be crunchy, so judge cooking time by whether it is thin or thick.
  • Drain and reserve.
  • Mix cornflour with water and keep handy.
  • Heat oil in a frying pan or wok.
  • Cook the beef, green onion and grated ginger until the beef shows just a little red.
  • Add the beef broth, sugar, oyster sauce, soy sauce and tofu, being careful not to break up the tofu very much.
  • Simmer over medium heat 2 to 3 minutes, until the pieces of tofu are warm inside.
  • Stir in the asparagus.
  • When the asparagus is done to your liking add cornflour-water mixture and remove from heat.

2 tablespoons oyster sauce
2 tablespoons soy sauce
1 teaspoon sugar
1/2 teaspoon sesame oil
1 tablespoon cornflour
2 tablespoons peanut oil
2 garlic cloves, chopped
2 teaspoons ginger, chopped
1 red chile, deseeded and chopped
200 g filet of beef, sliced
1 small onion, sliced
1 red capsicum, sliced
rice, to serve

Steps:

  • Combine oyster and soy sauces along with sesame oil, sugar and cornflour in a small bowl.
  • Set aside.
  • Heat 1 tablespoon of the peanut oil in a wok.
  • Swirl to coat.
  • Add half the beef and stir fry until browned.
  • Remove and set aside.
  • Repeat with the remaining peanut oil and beef and remove and set aside.
  • Add garlic, ginger and chilli to the wok.
  • Cook for 30 seconds.
  • Add onion and capsicum and stir fry for 1 minute.
  • Return the beef to the pan along with the combined sauces.
  • Stir to warm through.
  • Serve immediately with rice.

2 packages (3 ounces each) beef ramen noodles
2/3 cup hoisin sauce
2-1/4 cups water, divided
2 tablespoons olive oil, divided
1 pound fresh asparagus, trimmed and cut into 2-1/2-inch pieces
1 small garlic clove, minced

Steps:

  • Toss beef with 1/2 teaspoon seasoning from a ramen seasoning packet (discard remaining opened packet). In a small bowl, mix hoisin sauce and 1/4 cup water. , In a saucepan, bring remaining water to a boil. Add noodles and contents of the unopened seasoning packet; cook, uncovered, 3 minutes. Remove from heat; let stand, covered, until noodles are tender., Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high heat; stir-fry beef until browned, 3-4 minutes. Remove from pan., In same pan, heat remaining oil over medium-high heat; stir-fry asparagus with garlic until crisp-tender, 1-3 minutes. Stir in hoisin sauce mixture; bring to a boil. Cook until slightly thickened. Stir in beef; heat through. Serve over noodles.

  • Place 1 lb. sirloin steak on a cutting board and pat dry with paper towels. Slice meat crosswise as thinly as possible.
  • Transfer steak to a medium bowl and add 1 Tbsp. cornstarch, 1 Tbsp. soy sauce, and 1 Tbsp. vegetable oil. Toss with tongs until meat is evenly coated.
  • Prep the rest of your ingredients: Trim ends of 8 oz. snap peas and remove any strings; transfer to another medium bowl. Snap woody ends off of 1 bunch asparagus and discard. Cut asparagus crosswise into 1" pieces; transfer to bowl with snap peas. Trim both ends of 6 scallions and set aside 2 scallions for serving. Cut 4 remaining scallions crosswise into 1" pieces and add to bowl with asparagus and snap peas. Scrub 2" piece ginger under running water, then slice crosswise as thinly as possible; add to bowl with the other veg.

  • In a small bowl, combine the sliced beef with 1 teaspoon oil, 1 teaspoon light soy sauce, and 1 teaspoon cornstarch. Wash your asparagus, and cut about an inch off the bottom ends, depending on how tender they are. You can also use a vegetable peeler to peel the bottom of each stalk. Slice into 2-inch pieces on an angle.
  • Next combine the salt, sugar, the rest of the light soy sauce (4 teaspoons), dark soy sauce, sesame oil, and stock or water into a bowl. Mix well and set aside. Have your wine measured out, garlic ready, and the cornstarch slurry mixed up before you begin cooking, because this is all going to happen very fast!
  • Heat your wok until smoking. Add a couple tablespoons of oil and swirl it around to coat your wok. Quickly spread the beef slices around the wok in an even layer. Let it sear for 15-30 seconds without stirring. Then give it a quick stir to sear the other side. The meat should be browned and no sticking should happen if you got the wok hot enough! Take the meat out of the pan and set aside.
  • Keep the wok on high heat and add another tablespoon of oil into the wok. Stir in your garlic and asparagus. Stir for about 10 seconds and add the shaoxing wine around the rim of the wok. Cover, leaving the heat on high. Let it cook for 20 to 30 seconds. Remove the cover and add the sauce mixture and white pepper. Add the beef back to the pan and stir. Let the liquid bubble up. Stir up your cornstarch slurry to make sure the starch is dissolved and pour in about half of it. Stir for a few seconds. If the sauce is still thin, add more slurry. If it’s too thick, add a little water or stock. Plate and serve immediately!
